Strawberry Cobbler

Baked Cobbler

B4 Baking

Batter

Ingredients:

Strawberries - 6-8
Sugar - 3/4 cup
Wheat flour - 1 cup
Baking powder - 2 tsp
Salt - 1/2 tsp
Sugar - 1/2 cup
Milk - 1 cup
Butter - 100 g (melted)
Vanilla esc - 1/2 tsp

Method:


  • Remove the leaf part and cut strawberries to thins slices.
  • In a pan add 3/4 cup of sugar and strawberries and srir in low flame.
  • Sugar should coat berries (glazed berries) and set this aside.
  • In other bowl add all other ingredients and mix well.
  • Grease a pan and add the batter.
  • Top with the glazed strawberries.
  • Bake this in a preheated oven (OTG) at 180°C for 25-30 mins.
  • Serve this as such or can be served with vanilla ice-cream.
Note:
You can reduce the amount of baking powder. I used a tsp of baking powder.

Irish Soda Bread



Sliced

Baked bread

B4 baking

Ingredients:

Wheat flour - 1 cup
Baking soda - 1/2 tsp
Salt - 1/2 tsp
Mixed Herbs - 1 tsp
Buttermilk - 1/2 cup
Olive oil - 1 tbsp
Honey - 1 tbsp
Oats - 1 tbsp

Method:
  • In a bowl add buttermilk and baking soda and mix well.
  • Set this aside for 5 mins(it will bubble up).
  • Add in olive oil, honey and mix well.
  • In a bowl add flour, salt and mixed herbs(italian seasoning) and mix. 
  • Add wet ingredients the flour and mix well.
  • It will be sticky dough.
  • Transfer this to the baking pan and sprinkle oats on top.
  • Bake this in a preheated oven (OTG) at 180 for 20-22 mins.


Note:
You can just make a ball shape and bake the same.

Poached(Udacha) Egg Kozhambu


Add each egg little away from the other

Ingredients:

Egg - 4
Small onion - 10-15 (fine chop)
Curry Leaves - a sprig
Mustard seeds - 1 tsp
Garam Masala - 1/4 tsp
Gingely oil - 3 tbsp
Coriander leaves - Little
Salt, Water - As reqd

To Roast and Grind:

Dry Red Chilly - 8
Pepper corns - 1 tbsp
Fennel seeds - 1/4 tsp
Coriander seeds - 2 tbsp
Grated Coconut - 1/4 cup
Cinnamon stick - small piece
Onion - 1(medium size)
Tomato - 1 1/2
Garlic pods - 3-4

Method:

  • Heat little oil in pan and add items under "to roast and grind".
  • Saute them till it turns brown.
  • Transfer this to a plate and blend it to a paste.
  • Heat oil in pan and add mustard seeds and curry leaves.
  • Add small onion and saute for a while.
  • Add the grinded paste, garam masala and salt.
  • Add reqd water and mix well and let it boil.
  • Cook in low flame.
  • Now in a bowl break open a egg and add it to gravy.
  • Add remaining eggs one by one to the gravy.
  • Cover and cook for 2-3 mins.
  • Garnish with coriander leaves and serve hot.

Ghee Cake


Ingredients:

All purpose flour - 1 cup
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Ghee - 1/2 cup(melted)
Sugar - 1/2 cup
Curd - 1/4 cup
Milk - 1/4 cup
Vanilla esc - 1 tsp
Cashews - 10-12 (fine chop)

Method:


  • In a bowl take flour and add baking powder and set aside.
  • In other bowl add curd and baking soda and mix well.
  • Then add milk, sugar, esc, ghee and whisk well.
  • Add in dry ingredient and mix well.
  • Grease the pan with oil and dust with flour.
  • Sprinkle the chopped nuts and pour the batter in.
  • Bake this in a preheated oven (OTG) at 180°C for 18-20 mins.

Pizza Dosa


Ingredients:

Dosa Batter - 1/2 cup
Onion - 1
Capsicum  - 1
Tomato - 1
Italian seasoning - 1 tsp
Pepper powder - 1 tsp
Salt - 1/8 tsp
Grated Cheese - 1/2 cup
Butter - 2-3 tbsp
Pizza Sauce - 2-3 tbsp
Oil - As reqd

Method:


  • Fine chop onion, tomato(deseed) and capsicum and add in a bowl.
  • Now add salt, seasoning, pepper and mix well.
  • Heat dosa tawa and pour a laddle of batter to it and spread.
  • Cook in low flame, drizzle little oil.
  • Once top is cooked, Add in a tbsp of pizza sauce.
  • Then add 1/2 tbsp of butter, onion mix.
  • Use a masher and mash all these and spread fully and cover dosa.
  • Now add grated cheese and cover and cook.
  • Serve the yummy pizza dosa.




Varutha Molaga Thokku


Ingredients:

Dry Red Chilly - 10
Onion - 1 (meidum size)
Small Onion - 12
Garlic pods - 4-5
Tamrind - small piece
Mustard seeds - 1 tsp
Curry Leaves - A sprig
Salt, Oil, Water - As Reqd

Method:

  • Heat oil in pan and add small onion, big onion and garlic.
  • Saute this for a while and transfer to a blender.
  • Now add little oil and add in red chilly and saute till it turns black.
  • Once done, transfer to blender.
  • Add in salt, tamrind and little water and blend this to a paste.
  • Heat oil in pan and add mustard seeds and curry leaves.
  • And then add grinded paste and cook in low flame for 3-4 mins.
  • Goes good with idly, dosa and even bread.

Udupi Sambar



Ingredients:

Onion - 1 (thin slices)
Tomato - 1 1/2 (fine chop)
Small onion - 5 (roughly chop)
Green Chilly - 1
Dry Red chilly - 2
Carrot - 1
Beans - 2
Drumstick - 6-7 pieces
Brinjal - 1
Thoor dal - 1 cup
Turmeric powder - 1/2 tsp
Tamrind pulp - 2 tbsp
Hing - a pinch
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Jaggery - Little
Curry Leaves - a sprig
Coriander Leaves - Little
Salt, Oil, Water - As reqd

Udupi Masala:

Dry Red chilly - 7
Coriander seeds - 5 tbsp
Channa dal - 2 tbsp
Urad dal - 2 tbsp
Cumin seeds - 1 1/2 tsp
Fenugreek seeds - 1/2 tsp
Coconut - 4 tbsp

Method:

  • Heat little oil in pan and add items under "udupi masala".
  • Roast them in low flame till it turns n brown color.
  • Let it cool and grind to a paste.
  • Add water, hing, turmeric powder and boil dal and set aside.
  • Soak tamrind in water and strain and set aside.
  • Heat oil in pan and add onions, tomato and green chilly and saute well.
  • Add in veggies and add water and cover and cook till it is cooked.
  • Now add in dal and grinded paste and tamrind water.
  • Add in salt and cook in low flame.
  • Heat oil in pan and add mustard seeds, cumin seeds, dry red chilly.
  • Add in curry leaves and add this to sambar.
  • Garnish with coriander leaves and serve with rice.

1 Min BiscuitCake #1


Ingredients:

Cream Biscuit - 5
Milkmaid - 1/4 cup
Milk - 2 tbsp
Oil - 1/2 tsp
Sprinklers - 1/2 tsp

Method:

  • In a blender add in biscuits and blend it.
  • Add in milkmaid and milk and give a blend.
  • If batter is too thick you can add little milk.
  • Pour this in a greased microwave safe bowl.
  • Microwave high for a min.
  • Let this cool and have as such.
  • Or can apply choco spread/ frosting as you wish.
  • Top it with sprinklers.


Note:
I used britania milk cream biscuits.

KarunaiKilangu Kuzhambu


Ingredients:

Small onion - 8-10
Garlic pods - 6-8
Tamrind - Lemon size(Soak in hot water)
Karunai Kilangu - 10-12 pieces(cut into cubes)
Sambar thool - 2 1/2 tsp
Pepper powder - 1 tsp
Turmeric powder - 1/2 tsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Fenugreek seeds - 1/8 tsp
Dry red chilly - 1
Curry Leaves, Coriander Leaves - Little
Oil, Salt, Water - As reqd

Method:

  • Soak tamrind in hot water and after a while strain and set aside.
  • Boil this tamrind water.
  • Add sambar thool, turmeric and salt to this.
  • Add 1 1/2 cup of water and let it boil.
  • After few mins add karunaikilangu(elephant yam) and let it boil.
  • Heat oil in other pan and add mustard,cumin seeds and fenugreek.
  • Add in dry red chilly and curry leaves.
  • Once it splutters add in fine chopped onions and garlic and saute.
  • Add this to boiling tamrind water and let it boil.
  • Once it reduces in consistency add in pepper powder.
  • Boil this for few more mins.
  • Garnish with coriander leaves and serve with rice.

Wheat ChocoMilkshake Cupcakes




Ingredients:

Wheat flour - 1 cup
Corn flour - 1 tbsp
Cocoa powder - 1 tbsp
Baking powder - 1 tsp
Cinnamon powder - a pinch
Sugar - 1/4 cup
Chocolate Milkshake - 1 cup
Oil - 1/4 cup
Vanilla esc - 1 tsp
Chocochips - 2 tbsp
Sprinklers -  2 tbsp

Method:

  • In a bowl add in wheat flour, corn flour, cocoa powder.
  • Add baking powder and cinamon and mix well and seive it.
  • In other bowl add in oil and sugar and whisk well till sugar melts.
  • Add in milkshake and esc and mix well.
  • Now add dry ingredients and mix well.
  • Fill them 3/4th in the lined cupcake moulds.
  • Top them with chocochips.
  • Bake them in a preheated oven (OTG) at 180°C for 10-12 mins.
  • Once baked set this to cool.
  • I frosted with Mocha frosting.
  • I sprinkled few sprinklers on top.

Choco Mocha Frosting #1


Ingredients:

Unsalted butter - 100 g
Icing Sugar - 2 cup
Cocoa powder - 2 tbsp
Coffee Decoction - 3 tsp

Method:
  • In a bowl beat butter and add a cup of icing sugar.
  • Beat this well.
  • Add in cocoa powder and another cup of icing sugar.
  • Beat this well.
  • Add in fresh decoction and beat.
  • You can use this frosting for cakes or cupcakes.


Note:

  • If using powdered sugar then in a cup of sugar replace a tbsp with a tbsp of corn starch.
  • I frosted 12 cupcakes with this.

Vaendakaai / Bindhi Fry #2



Ingredients:

Vaendakaai - 15
Chilly powder - 2 tsp
Turmeric powder-1/2 tsp
Kadala Maav - 2 tbsp
Arisi Maav (Rice flour) - 1 tsp
Salt, Oil - As reqd

Method:




  • First thin slice the bhindi and set aside.
  • In a bowl add these, chilly poweder, rice flour and kadala maav and mix well.
  • Add salt to this and mix well.
  • Heat oil in pan and fry these.
  • Crispy and yummy vaendakaai/okra/bhindi fry is ready.

Vaendakaai / Bindhi Fry # 1


Ingredients:

Vaendakaai - 15
Kashmiri Chilly powder - 2 tsp
Cumin powder - 1/2 tsp
Chat masala - 1/2 tsp
Dry ginger powder - 1/2 tsp
Turmeric powder-1/2 tsp
Kadala Maav - 2 tbsp
Curry Leaves - A sprig (chopped)
Salt, Oil - As reqd

Method:

  • First thin slice the bhindi and set aside.
  • In a bowl add these and the spice powders and salt.
  • Add in curry leaves and kadala maav and mix well.
  • Heat oil in pan and fry these.
  • Crispy and yummy vaendakaai/okra/bhindi fry is ready.

Vellai Paniyaaram



Ingredients:

Raw rice - 1 cup
Urad dal - 1 1/2 tbsp
Milk - 1/4 cup
Salt, Water - As reqd

Method:
  • Soak rice and urad dal for 2 hours.
  • Drain water and grind them to a fine paste.
  • You can sprinkle water if needed.
  • Add in salt and milk and make a thin batter than dosa.
  • Heat oil in a kadai.
  • Reduce the flame and pour a laddle of batter to this.
  • It will spread like a flower.
  • Flip and cook and transfer to a plate.
  • Serve this with VaraMilagaai Thokku.

VaraMilagaai Thokku


Ingredients:

Varamilagaai / Dry red chilly - 8
Tomato - 2
Garlic pods - 4-5
Small Onion - 12-15
Nalennai - 3 tbsp
Curry Leaves - a sprig
Hing - Little
Mustard seeds - 1 tsp
Salt, Water - As reqd

Method:


  • In a blender add chilly, garlic, onion and tomato.
  • Add required salt to this and grind this to a puree.
  • Add little water if needed.
  • Heat nalennai in a pan and add mustard seeds and curry leaves.
  • Once it splutters reduce the flame and add hing and grinded puree.
  • Cook this in low flame for about 12-15 mins.
  • Varamilagai thokku is ready.

Almond Shortbread Cookies



Ingredients:

All purpose flour - 1 cup
Sugar - 1/2 cup
Unsalted butter - 110 g or 1/2 cup
Almonds - 1/ 2 cup
Almond esc - 1/2 tsp

Method:


  • Soak almonds in hot water for about 20-30 mins.
  • Remove the skin off.
  • Heat a pan and dry roast this badam for few mins and set aside.
  • Blend the roasted badam and sugar to a fine powder.
  • Take this in a bowl and add flour to this.
  • Add softened butter and esc and fold well with spatula.
  • Just bring together and make a dough.
  • Cling wrap this and refrigerate for an hour.
  • Cut into deisred shapes and press in crushed almonds.
  • Line this in a baking tray.
  • Bake this in a preheated oven at 180°C for 10-12 mins.
  • It will be soft out of oven and will turn crisp in a while.
