Biscuit Cake #4 - Custard Flavour


Ingredients:

MilkBikis Biscuit - 100 g
Custard powder - 50 g
Milk - 100 ml
Powdered Sugar - 1/2 cup
Baking powder - 1/2 tsp
Vanilla esc - 1/2 tsp
Chocochips - 1 tbsp

Method:

  • In a blender add the biscuits and blend to a fine powder.
  • Take this in a bowl and add baking powder.
  • Add in custard powder( vanilla flavour)
  • Add in sugar (reserve 2 tbsp).
  • Mix well.
  • Add milk slowly and mix well.
  • Check for sugar and if needed add accordingly.
  • Add in esc and whisk well.
  • Add in chocochips and mix it.
  • Grease a pan and dust with flour.
  • Invert and dap it.
  • Now pour the batter in and dap it.
  • I used two pans to make small sized cakes
  • Bake this in a preheated oven (OTG) at 180°C for 25-28 mins.

Onion Chutney #1

Ingredients:

Onion - 2
Dry Red Chilly - 3
Kashmiri Chilly powder - 1 tsp
Coconut - 2 tbsp
Jaggery - 1 tsp
Tamrind - small piece
Mustard seeds - 1 tsp
Cumin seeds - 1/2 tsp
Urad dal - 1 tsp
Dry Red Chilly - 1
Curry Leaves - a prig
Salt, Water, Oil  - As reqd

Method:

  • In a blender add diced onions and chilly.
  • Add in chilly powder, coconut and jaggery.
  • Add in salt, tamrind.
  • Add water and blend this to a fine paste.
  • Don't add more than 1/2 cup of water.
  • Heat oil in pan and add urad dal.
  • Cook in low flame.
  • Add in mustard seeds and cumin seeds.
  • Break and add chilly and curry leaves.
  • Saute for few seconds and add to chutney.
  • Goes good with idly/dosa.

Malai Mug Cake


With Wheat Flour and Brown Sugar

With All purpose flour and Regular Sugar

Ingredients:

Wheat flour - 3 tbsp
Powdered Brown Sugar - 3 tbsp
Fresh Cream - 3 tbsp
Oil - 1 tbsp
Baking powder - 1/8 tsp
Baking soda - a pinch
Vanilla Esc - a drop
Cherry - 1 (Fine chop)

Method:

  • In a microwave safe bowl , add in ingredients one by one.
  • Add little cherry and mix it.
  • Top batter with reserved cherry.
  • Microwave high for a min.
  • Yummy malai mug cake ready.

Note:

  • We have made two mug cakes.
  • One with wheat flour and brown sugar.
  • And the other with all purpose flour and powdered regular sugar.

1 Min Vanilla Mug Cake

Ingredients:

All purpose flour - 4 tbsp
Powdered sugar - 1 1/2 tbsp
Baking powder - 1/4 tsp
Baking soda - a pinch
Condensed milk - 1 tbsp
Milk - 1 tbsp +
Oil - 1 tbsp
Vanilla esc - 1/2 tsp
Chocochips - Little

Method:


  • In a bowl add all the ingredients and mix well.
  • If batter is thick add little milk and mix well.
  • Now pour this in microwave safe bowl.
  • Top it with chocochips.
  • Pop this in microwave high for a min.
  • Yummy vanilla chocochip mug cake is ready.

2 Min Banana(Choco) Mug cake


Ingredients:

Wheat flour - 2 tbsp
All purpose flour - 1 tbsp
Cocoa powder - 1 tbsp
Baking powder - 1/4 tsp
Banana - 2
Milk - 1 tbsp (optional)

Method:

  • In a bowl add mashed bananas (4 tbsp) and add sugr.
  • Cream them well.
  • Add in flour, cocoa and baking powder and mix well.
  • If batter is too thick add little milk.
  • Pour this in greased microwave safe.
  • Microwave on high for 2 mins.

Note:
We divided the batter and made two flavours.

Orange Pound Cake





Ingredients:

Wheat flour -  100 g
All purpose flour -  25 g
Brown Sugar - 66 g
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Orange juice - 1/2 cup
Curd - 75 ml (1/2 cup)
Melted butter - 1/4 cup (app 25 g)
Milk - 1-2 tbsp
Orange Zest - 1 tsp
Vanilla Esc - 1/4 tsp

Method:
  • In a bowl add flour, baking powder and baking soda.
  • In other bowl add curd and sugar and cream well.
  • Add in zest and melted butter and whisk well.
  • Now add the dry ingredients and mix well.
  • Add in orange juice, esc and fold well.
  • Pour this is in a greased pan.
  • Bake this in a preheated oven (OTG) at 180°C for 40-42 mins.
  • I made a bundt cake (212 g) and mini loaf cake (112 g).
Note:
Add milk if batter is too thick.

Dalgona Coffee






Ingredients:

Instant coffee powder - 2 tbsp
Sugar -  2 tbsp
Water - 2 tbsp
Milk - 3/4 cup

Method:

  • In a bowl add coffee powder, sugar and wate.
  • Whisk this vigorously till it is light and fluffy.
  • Now take the serving glass.
  • Pour in boiled and chilled milk.
  • Top it with the cream we prepared.
  • Your Dalgona coffee is ready.

Note:

  • You can use chilled milk or use ice cubes while serving.
  • You can make lots of variations with his.
  • Like Hot Dalgona Coffee.



Bourbon Biscuit



Ingredients:

Wheat flour - 100 g
Unsalted butter - 50 g
Cocoa powder - 25 g
Powdered Brown sugar - 40 g
Vanilla Esc - 1/4 tsp
Sugar - 2 tbsp
Milk - 1 - 2 tbsp

Cream:
Unsalted butter - 25 g
Cocoa powder - 15 g
Powdered brown sugar - 50 g
Milk powder - 5 g
Dark Chocolate - 5 g

Method:

  • In a bowl add in butter and sugar and cream well.
  • Now add flour, cocoa powder and esc and mix well.
  • Add milk and gather the dough.
  • Don't knead the dough.
  • Now set this aside for 20 mins.
  • Now dust the mat with little cocoa powder.
  • Now place the dough, sprinkle cocoa and roll the dough out.
  • Set this in freezer for 5-8 mins.
  • After the desired time,use cookie cutter and cut out the cookies.
  • Freeze this for 8 mins.
  • Now line a baking tray and arrange the cookies.
  • Prick holes in biscuit and sprinkle cookies.
  • Bake this in a preheated oven (OTG) at 180°C for 12-15 mins.
  • Let it cool.
  • Prepare the cream to sandwich the biscuits.
  • In a bowl cream butter and sugar.
  • Add cocoa powder and milk.
  • Add in melted and cooled chocolate.
  • Whisk well.
  • Sandwich biscuits with this cream.
  • Yields 9-10 bourbon biscuits.


Note:
As I have used brown sugar, it was bit chewy.

Banana Lollipops






Ingredients:

Banana - 2
Lollipop Stick - 5-6
Sprinklers - 2 tbsp
Dark Chocolate -  125 g
Oil - 1 tsp

Method:


  • Peel banana skin and cut to roundels.
  • Insert lollipop sticks or strong toothpicks.
  • Freeze this for 15 mins.
  • Cut dark chocolate chunks and add it to a bowl.
  • Using double boiler method, melt it and set aside.
  • Add little coconut oil to the melted chocolate and mix it.
  • Transfer this to a bowl.
  • Now take the frozen lollipops and dip in chocolate.
  • You can either dip or use a spoon and pour sauce all over the banana.
  • Place them in a butter paper and add sprinklers.
  • Refrigerate till you serve.
  • Yields 8 lollipops.

Hersheys Milkshake

Ingredients:

Milk - 1 cup
Badam - 2 pieces
Hersheys Chocolate syrup - 2 tbsp

Method:


  • In a blender add in saoked badam pieces.
  • Add in chill milk and hersheys chocolate syrup.
  • Blend them nicely.
  • Serve chill.

Rice (Leftover Rice) Halwa

Halwa with brown sugar




Halwa with regular sugar

Ingredients:

Leftover Rice - 1 cup
Sugar - 3/4 cup
Milk - 3 tbsp
Elaichi powder - a pinch
Kesari color - a pinch
Cashews - 5-6
Ghee - 4 tbsp

Method:

  • Heat ghee in pan and roast cashews and set aside.
  • Add milk to rice and blend this to a fine paste.
  • Heat ghee in pan and add blended rice.
  • Cook in low flame.
  • Mix well and then add sugar little by little.
  • Keep stirring till it leaves the edges(halwa consistency).
  • Add  roasted cashews and mix well.
  • Add in elaichi powder and mix well.
  • Add ghee as and when required.
  • Serve the yummy rice halwa.

2 Min Strawberry Mug Cake



Ingredients:

All purpose flour - 4 tbsp
Sugar - 3 tbsp
Baking powder - 1/2 tsp
Strawberries - 2 (roughly chopped)
Milk - 3 tbsp
Oil - 1 tbsp
Vanilla esc - 1 tsp
Chocolate shavings - 1 tsp(topping)

Method:

  • Mix all ingredients in a microwave safe mug.
  • Microwave high for 2 mins and top with chocolate shaving and serve.

Ghee Cake


Ingredients:

All purpose flour - 1 cup
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Ghee - 1/2 cup(melted)
Sugar - 1/2 cup
Curd - 1/4 cup
Milk - 1/4 cup
Vanilla esc - 1 tsp
Cashews - 10-12 (fine chop)

Method:


  • In a bowl take flour and add baking powder and set aside.
  • In other bowl add curd and baking soda and mix well.
  • Then add milk, sugar, esc, ghee and whisk well.
  • Add in dry ingredient and mix well.
  • Grease the pan with oil and dust with flour.
  • Sprinkle the chopped nuts and pour the batter in.
  • Bake this in a preheated oven (OTG) at 180°C for 18-20 mins.

Pizza Dosa


Ingredients:

Dosa Batter - 1/2 cup
Onion - 1
Capsicum  - 1
Tomato - 1
Italian seasoning - 1 tsp
Pepper powder - 1 tsp
Salt - 1/8 tsp
Grated Cheese - 1/2 cup
Butter - 2-3 tbsp
Pizza Sauce - 2-3 tbsp
Oil - As reqd

Method:


  • Fine chop onion, tomato(deseed) and capsicum and add in a bowl.
  • Now add salt, seasoning, pepper and mix well.
  • Heat dosa tawa and pour a laddle of batter to it and spread.
  • Cook in low flame, drizzle little oil.
  • Once top is cooked, Add in a tbsp of pizza sauce.
  • Then add 1/2 tbsp of butter, onion mix.
  • Use a masher and mash all these and spread fully and cover dosa.
  • Now add grated cheese and cover and cook.
  • Serve the yummy pizza dosa.

1 Min BiscuitCake #1


Ingredients:

Cream Biscuit - 5
Milkmaid - 1/4 cup
Milk - 2 tbsp
Oil - 1/2 tsp
Sprinklers - 1/2 tsp

Method:

  • In a blender add in biscuits and blend it.
  • Add in milkmaid and milk and give a blend.
  • If batter is too thick you can add little milk.
  • Pour this in a greased microwave safe bowl.
  • Microwave high for a min.
  • Let this cool and have as such.
  • Or can apply choco spread/ frosting as you wish.
  • Top it with sprinklers.


Note:
I used britania milk cream biscuits.

Sprinkler Shortbread Cookies


Ingredients:

All purpose flour - 1 cup
Unsalted butter - 100 g
Powdered sugar - 1/2 cup
Vanilla esc - 1/2 tsp
Sprinklers - 1/4 cup
Salt - a pinch

Method:

  • In a bowl add in butter and sugar and mix well.
  • Now add in esc and salt and mix well.
  • Add in flour and mix well.
  • Make a dough and roll like a log.
  • Roll the log in sprinklers and cling wrap.
  • Refrigerate for an hour.
  • Cut it into thin slices.
  • Line this in a line baking tray and refrigerate for 4-6 mins.
  • Bake the cookies in a preheated oven (OTG) at 180°C for 9-10 mins.
  • Let it cool and store in air tight container.
Note:

I divided dough into equal halves and made Vanilla Shortbread Cookies.

Vanilla Shortbread Cookies


Ingredients:

All purpose flour - 1 cup
Unsalted butter - 100 g
Powdered sugar - 1/2 cup
Vanilla esc - 1/2 tsp
Salt - a pinch

Method:

  • In a bowl add in butter and sugar and mix well.
  • Now add in esc and salt and mix well.
  • Add in flour and mix well.
  • Make a dough and cling wrap it.
  • Refrigerate for an hour.
  • Then roll it between sheets and use cookie cutter and cut shapes.
  • Use a small cutter and cut in middle and remove it carefully.
  • Line this in a line baking tray and refrigerate for 4-6 mins.
  • Bake the cookies in a preheated oven (OTG) at 180°C for 9-10 mins.
  • Let it cool and store in air tight container.
Note:

I divided dough into equal halves and made Sprinklers Shortbread Cookies.

Pesto Fusilli Pasta


Ingredients:

Pesto Sauce - 1 cup
Fusilli Pasta - 1 cup
Olive oil - 1/2 tsp
Salt, Water - As reqd

Method:

  • In a pan add in water and put pastas in it.
  • Add oil and required salt and let it boil for 7 mins.
  • Once done strain water and set aside.
  • Now mix the pesto sauce and cook in low flame.
  • Serve the hot creamy pesto pasta.

Pesto Sauce

Ingredients:

Coriander Leaves - 1/2 cup
Green Chilly - 1
Groundnuts - 1
Garlic pods - 3 -4
Cheese - small piece
Olive oil - 1 tsp

Method:

  • Heat oil in pan and add garlic and chilly and saute for a while.
  • Add in groundnuts and saute for a while.
  • Transfer this to a bowl.
  • Add coriander leaves and cheese cube and blend it.
  • It should be off chutney consistency.
