Chocolate Salami / Lazy Cake





 Ingredients:
Marie Biscuits - 100 g
Unsalted butter - 15 g
Milk - 60 ml
Sugar - 1 tbsp
Unsweetened Cocoa powder - 1 tbsp
Dark Chocolate - 15 g
Icing sugar - 1 tbsp

Method:

  • Crush the biscuits roughly and add it to a bowl.
  • Now in a pan add in boiled and cooled milk.
  • Add in sugar, cocoa powder, chocolate and butter.
  • Cook this in low flame for a min or till it slightly thickens.
  • Now pour this to crushed biscuits and mix well with spatula.
  • Transfer this to cling wrap and  wrap it either a log and seal edges tightly.
  • Refrigerate till it sets like 2-3 hours. (firms up).
  • Now in a plate add in icing sugar.
  • Roll the frim log in it and slice and enjoy.

Note:

  • If you don't have dark chocolate, you can add in extra cocoa powder, butter and sugar.
  • You can also add nuts to crushed biscuits.
  • Can use any non-cream biscuits.

Sweet Corn Sundal

Ingredients:

Sweet Corn - 250 g
Onion - 1 (fine chop)
Sundal Masala - 3/4 tbsp
Pav Bhaji masala - a pinch
Kashmiri Chilly powder - a pinch
Coriander Leaves - Little (fine chop)
Salt, Butter - As reqd

Method:

  • Boil corn and strain water and set aside.
  • Heat a pan and add a tbsp of butter.
  • Add in onions and saute in low flame.
  • Add in corns and toss.
  • Add in salt, spice powders and sundal podi.
  • Toss this well.
  • Add in coriander leaves and little butter.
  • Toss well and serve hot.

BesanSooji / KadalamaavRava Halwa


Ingredients:

Besan flour - 1 1/4 cup
Rava - 2 tbsp
Milk - 2 tbsp
Sugar - 1/2 Cup + As reqd
Hot Water - 1 1/4 cup
Ghee - 1/2 cup
Cashewnuts - 5-6
Raisins - 5 -6
Elaichi powder - a pinch

Method:
  • I just halved the ingredients and made the halwa.
  • Add ghee to the pan and once it melts, reduce the flame to low.
  • Add in besan flour and mix it.
  • Add in rava and mix well.
  • Keep mixing in low flame for 3 mins.
  • When you see bubbles add in a tbsp of milk and mix well.
  • Then add in one more tbsp of milk and mix well.
  • Keep mixing for 2 mins.
  • When you see a change in color, add in sugar and mix it.
  • Cook for 2 more mins.
  • Now add in piping hot water in parts(little by little).
  • Keep stirring and once it leaves the edges add in elaichi powder.
  • In other pan add in ghee and toast nuts and raisins and add this to halwa.
  • Mix well and serve hot.

Puffed Rice / Pori Halwa




Ingredients:

Puffed rice - 1 1/2 cup
Water - 1/2 cup
Jaggery - 1/2 cup
Elaichi powder - a pinch
Cashews nuts - As reqd
Ghee - 2 tbsp

Method:

  • In a pan add in jaggery and water and cook in medium flame.
  • Cook till jaggery dissolves.
  • Turn off range and set aside to cool.
  • Now in a bowl add in cleaned puffed rice.
  • Add little water to soak them.
  • Set this aside for 10 mins.
  • Strain it and add to blender.
  • To the blender add in cooled jaggery syrup too.
  • Blend them to fine puree.
  • Heat little ghee in pan.
  • Add in nuts and saute them and transfer to plate.
  • To the same pan add in little ghee and blended puree.
  • Cook in low flame till it thickens.
  • Add in remaining ghee, elaichi powder and roasted nuts.
  • Mix well and serve hot.

Semiya/ Vermicilli Mixture



Ingredients:

Semiya - 1 cup
Rice flour - 1/4 cup
Corn flour - 1/4 cup
Water - 3 cups
Red Chilly powder - 1/4 tsp
Curry Leaves - a sprig
Salt, Oil - As reqd

Method:

  • To a pan add in water and salt.
  • To this add 2 tbsp of oil and let it boil.
  • Now add in semiya and let it cool.
  • If you press the semiy between fingers it should be soft.
  • Now strain this and pour normal water to this.
  • Strain and set aside.
  • In a bowl add in rice flour and corn flour.
  • If you don't have corn flour, you can add maida too.
  • Mix well.
  • Add little semiya to this and mix well.
  • Add the mixed semiya to a seive and seive it.
  • This removes excess flour.
  • Heat oil in pan and fry the coated semiya.
  • Cook in medium flame.
  • Repeat the same with remaining semiya too.
  • Now fry the peanuts and curry leaves too.
  • Drain the excess oil and then transfer to bowl.
  • Add in little salt and spice powder and toss well.
  • You can also fry and add crushed garlic too.
  • Add spice acc to your taste.

Coconut / Desiccated Coconut Modak



Ingredients:

Desiccated Coconut - 100 g
Condensed Milk - 90 ml
Milk - 40 ml
Elaichi powder - a pinch
Saffron strands - Little (optional)
Ghee - 1/2 tsp

Method:

  • Add in saffron strands to boiled room temperature milk.
  • Set this aside.
  • In a pan add in ghee and spread it fully in the pan.
  • Now add in desiccated coconut and saute in medium flame.
  • Saute for 3-4 mins.
  • Now turn off the range and add in condensed milk.
  • Mix well and then place it in stove top.
  • Now cook this medium flame for a min.
  • Add in saffron milk and mix well.
  • Keep mixing till it leaves the edges and turns thick.
  • Add in elaichi powder and give a quick mix.
  • Cook for a min and transfer to greased plate.
  • Let it cool for 3-4 mins.
  • Now you can grease the modak mould and make modaks.
  • Or can make ladoos too.
  • Yields 10-12 modaks.

Coconut Halwa


Ingredients:

Coconut - 90 g (Grated)
Sugar - 50 g
Milk powder - 30 g
Milk - 200 ml
Rice flour - 2 tbsp
Elaichi powder  - a pinch
Nuts, Ghee - As reqd
Food Color - Little or Saffron strands - Little

Method:

  • Boil Milk and add saffron strands and set aside.
  • Heat ghee in pan and add in nuts.
  • Roast them and transfer to plate.
  • Now to the same pan add in grated coconut and saute in medium flame for 2 mins.
  • To this add in rice flour and saute for 2 more mins.
  • Now add in milk slowly and mix well.
  • Cook in low flame for 2-3 mins.
  • It will thicken fast.
  • Now add in sugar and milk powder and mix well.
  • Add little ghee and cook till the mixture leaves the edges of pan.
  • Add in elaichi powder and roasted nuts and ,mix well.
  • Serve hot.

Note:

  • You can skip milk powder and add extra sugar.
  • For natural color, you can used brown sugar too.
  • If using food color add in while adding milk.

Pori Upma

Ingredients:

Puffed Rice - 1 cup
Onion - 1 (fine chop)
Groundnuts - 1 tbsp
Turmeric powder - 1/8 tsp
Red Chilly powder - 1/8 tsp
Lime juice- Little 
Coriander Leaves - Little (fine chop)
Urad dal - 1/4 tsp
Channa dal - 1/4 tsp
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Salt, Wate, Oil - As reqd

Method:

  • In a bowl add in puffed rice.
  • And add in water, mix it and let it sit for couple of mins.
  • Then squeeze and add puffed rice to a bowl.
  • Heat oil in pan and add in dal and roast in low flame.
  • Add in mustard seeds, cumin seeds and curry leaves.
  • Add in chilly(deseed) and onion and saute in low flame,
  • Add in groundnuts and then puffed rice.
  • Add in salt, spice powders and mix well.
  • Let it cook for couple of mins.
  • Then turn off range and squeeze in a drop of lime juice.
  • Toss it and garnish with coriander leaves.
  • Serve hot.

Garlic Thokku



Ingredients:

Garlic - 20
Thick Curd - 1/4 cup
Water - 1/2 cup
Turmeric powder - 1/4 tsp
Red Chilly powder - 1/2 tsp
Kashmiri Chilly powder - 1/2 tsp
Coriander powder - 1 tsp
Mustard seeds - 1 tsp
Cumin seeds - 1/4 tsp
Urad dal - 3/4 tsp
Channa dal - 3/4 tsp
Curry Leaves - a sprig
Gingely Oil - 1 1/2 tbsp
Salt - As reqd

Method:

  • Peel garlic and crush them and set aside.
  • Heat oil in pan and add urad dal and channa dal.
  • Cook in medium flame.
  • Once there is mild change in color, add in mustard seeds.
  • Add in cumin seeds and curry leaves.
  • Add in garlic and saute till it changes to mild brown color.
  • Now reduce the flame to low.
  • Add in spice powders and water and mix well.
  • Add in salt and cook for 3 mins.
  • Whisk curd and add.
  • Mix it, it will curdle.
  • Cook in low flame for 4 mins.
  • It will become thick like thokku.
  • Goes good with idly/dosa.

Anado Mal - Srilankan Snack





Ingredients:

All purpose flour - 75 g
Salt - a pinch
Sugar - 1 1/2 tbsp
Oil - 1 tbsp
Egg - 1/2 or 27 g
Milk -  1 1/2 tbsp
Oil -to fry

Method:

  • In a bowl add flour, salt and sugar.
  • Mix it.
  • Add in oil and egg and mix it.
  • Add milk little by little and make a dough.
  • Dust the surface with flour and roll out dough.
  • Cut squares as in pic and shape each square as in video.
  • Heat oil in pan and fry these in medium flame.
  • Serve as such or you can dust powdered sugar and serve.

Note:

  • In actual recipe, they don't add sugar to dough.
  • They fry the shaped dough and add to sugar syrup instead.
  • Ratio for sugar syrup, water 1/2 cup and sugar 1/4 cup.
  • Soak it for 4-5 mins and serve.

Bread Egg Kothu

Ingredients:

Onion - 1 (fine chop)
Green Capsicum (deseed, fine chop)
Tomato - 1 (deseed, fine chop)
Ginger garlic paste - 1 tsp
Coriander leaves - Little
Egg - 3
Bread slices - 6
Pav Bhaji Masala  - 1 tbsp
Garam Masala - 1/2 tsp
Pepper powder - 1/2 tsp
Salt, Water, Oil - As reqd

Method:

  • In a bowl, whisk the eggs and set aside.
  • Heat oil in pan and add onions and saute for a while.
  • Add in ginger garlic paste and saute.
  • Add in tomatoes and cook till it turns mushy.
  • Now add the spice powders and salt and mix well.
  • Add in capsicum and mix well.
  • Cook in low flame.
  • Pour the beaten eggs and keep stirring till it looks like crumble.
  • Now add the crushed bread pieces and mix well.
  • Keep mixing till everything is blended well.
  • Garnish with coriander leaves and serve.

Omlette Uthapam #2

Ingredients:

Egg - 3
Dosa Batter - 1/2 cup
Leftover Gravy - 1 cup
Pepper powder - 1 tsp
Salt - 1/4 tsp
Curry Leaves - a sprig (fine chop)
Oil - 1 tbsp

Method:


  • I used leftover dhariwala gravy.
  • In a bowl crack eggs and add pepper powder and salt.
  • Whisk well and set aside.
  • To this add gray, curry leaves and whisk well.
  • Now add dosa batter and mix well.
  • Heat a tawa and drizzle oil.
  • Pour a laddle of batter and spread.
  • Drizzle oil on top and then flip and cook.
  • Serve hot.
  • Adjust spice according to the gravy you use.
  • Also with the same batter you can make paniyaaram too.

Omlette Uthapam # 1

Ingredients:

Egg - 3
Dosa Battter - 1/2 cup
Onion - 1 (fine chop)
Curry Leaves - fine chop
Salt - a pinch
Pepper powder - 1 1/2 tsp
Turmeric powder - 1/4 tsp
Garam Masala - 3/4 tsp
Oil - As reqd

Method:

  • In a bowl break eggs and whisk well.
  • Add in salt, pepper powder, turmeric powder and whisk it.
  • Now add garam spice and whisk well.
  • Now add the dosa batter and mix up.
  • Finally add the fine chopped onions and curry leaves and whisk well.
  • Heat a non-stick pan and drizzle oil.
  • Now pour a laddle of batter and spread.
  • Drizzle oil all over and cook in low flame.
  • Flip and cook.
  • Serve hot.


Note:

  • You can add grated carrots too.
  • Also you can make mini uthapam also.

Banana Paratha


Banana Paratha

Rolled out

Fold and roll out 

Rolled and applied ghee

Dough

Ingredients:

Banana - 2 (ripen)
Wheat flour - 1 cup
Brown sugar - 1 1/2 tbsp
Salt - a pinch
Ghee - As reqd
Milk - 1 tsp

Method:

  • In a bowl add the bananas and mash them using fork.
  • Now add in flour, sugar and salt and mix well.
  • Make a dough, if it is dry add milk.
  • Now take a small ball and dust in flour.
  • Roll this out and apply ghee over it.
  • Fold it and roll again.
  • Repeat the same with remaining dough.
  • Heat tawa and drizzle ghee.
  • Make parathas one by one.
  • Drizzle ghee/honey while you serve.
  • Yields 6 parathas.

Choco Strawberry

Ingredients:

Dark chocolate - 75 g
Oil - 2 tsp + 1 tsp
White Chocolate - 25 g
Strawberry - 9-10

Method:
  • Wash the strawberries and clean with a towel.
  • Arrange them in a kitchen tissue paper.
  • Don't cut the leaves from it.
  • Now melt the dark choclate and add 2 tsp of oil and mix it.
  • Set aside for a while.
  • Now dip easy strawberry in this(hold the leaf).
  • Place them in a tray lined with butter paper.
  • Refrigerate this for a while.
  • Now you can melt white chocolate and add tsp of oil and mix it.
  • Pour this in a cover and cut one edge(it should be very small hole).
  • Make patterns on the strawberries.
  • Refrigerate till you serve.
Note:
I used the chocolate dip I made for chocobeetCakesicle.

Chilly Parotta

Ingredients:

Parotta - 5 (Cut into small pieces)
Onion - 1 (thin slices)
Tomato - 1 (Deseed and thin slices)
Green Capsicum - 1 (thin slices)
Carrot - 1 (thin slice)
Green Peas - 2 tbsp (boiled)
Ginger garlic paste - 1 tsp
Red chilly paste - 1 tbsp
Kashmiri Chilly powder - 1 tsp
Salna - 1/4 cup
Coriander Leaves - Little
Salt - 1/4 tsp
Oil - 1 tbsp

Method:


  • Heat oil in pan and add onion and saute.
  • Add in ginger garlic paste and saute for a while.
  • Add in tomato and then capsicum and saute for a while.
  • Add in green peas, carrot and salt and mix well.
  • Now add in red chilly paste and mix well.
  • Add in parotta pieces and mix them up.
  • Now add salna (veg or non-veg) to this and mix well.
  • Cook this in low flame.
  • Add in kashmiri chilly powder and mix well.
  • Garnish with coriander leaves and serve hot.

Pizza Papad



Ingredients:

Papad - 3
Onion - 1
Tomato - 1
Capsicum - 1
Pizza sauce - 1 tbsp
Maida - 2 tbsp
Water - 1/4 cup
Salt, Oil - As reqd

Method:


  • In a bowl add maida, little salt and littler water and make a paste(not too thick nor too thin)
  • Deseed and make thin slices of tomato and capsicum.
  • Add this to a bowl.
  • Add sliced onion to this.
  • Add pizza sauce and salt and mix well and set aside.
  • Now take a plate and add water.
  • Dip a papad in water for 2 seconds.
  • Place it in a cloth to remove excess water.
  • Spoon filling to this and roll.
  • First fold the corners and then use maida paste.
  • Seal the edges.
  • Heat oil in pan and fry these.
  • Serve the pizza papad with sauce.

Note:
You can bake the same.

Rice (Leftover Rice) Halwa

Halwa with brown sugar




Halwa with regular sugar

Ingredients:

Leftover Rice - 1 cup
Sugar - 3/4 cup
Milk - 3 tbsp
Elaichi powder - a pinch
Kesari color - a pinch
Cashews - 5-6
Ghee - 4 tbsp

Method:

  • Heat ghee in pan and roast cashews and set aside.
  • Add milk to rice and blend this to a fine paste.
  • Heat ghee in pan and add blended rice.
  • Cook in low flame.
  • Mix well and then add sugar little by little.
  • Keep stirring till it leaves the edges(halwa consistency).
  • Add  roasted cashews and mix well.
  • Add in elaichi powder and mix well.
  • Add ghee as and when required.
  • Serve the yummy rice halwa.

Besan Halwa (Kadalamaav halwa)

Ingredients:

Besan flour - 1 cup
Milk - 1 1/2 cup
Sugar - 1/3 cup
Ghee - 1/4 cup
Cashews - 6-8
Elaichi powder - a pinch

Method:

  • Heat ghee in pan and roast cashews and set aside.
  • To the same pan add flour and cook in low flame.
  • Once the color changes(it will take 5-6 mins), add in milk little by little.
  • Keep mixing to avoid lumps.
  • It will be semithick consistency.
  • Add sugar and keep mixing.
  • Add ghee and keep mixing till you get halwa consistency.
  • Once it leaves the edges add elaichi powder and roasted cashew.
  • Serve the yummy halwa.

Pancakes

Ingredients:

Wheat flour - 1/4 cup
All purpose flour - 3/4 cup
Milk - 1 cup
Salt - 1/8 tsp
Sugar - 2 tbsp
Baking powder - 1/2 tbsp
Vanilla Esc - 1/2 tsp
Oil - 1 tbsp
Butter - 1 tbsp
Honey - As reqd

Method:


  • In a bowl add flour, salt, sugar and baking powder and mix well.
  • Add in oil, milk and vanilla esc and mix well.
  • Mix and set aside for 5 mins.
  • Now mix well.
  • Heat pan and add butter, pour a laddle of batter and cook in low flame.
  • Flip and cook the other side too.
  • Arrange them in a plate, place little butter and then drizzle honey.

Note:
You can also use caramel sauce/ butterscotch sauce too instead of honey.
