Almond Shortbread Cookies



Ingredients:

All purpose flour - 1 cup
Sugar - 1/2 cup
Unsalted butter - 110 g or 1/2 cup
Almonds - 1/ 2 cup
Almond esc - 1/2 tsp

Method:


  • Soak almonds in hot water for about 20-30 mins.
  • Remove the skin off.
  • Heat a pan and dry roast this badam for few mins and set aside.
  • Blend the roasted badam and sugar to a fine powder.
  • Take this in a bowl and add flour to this.
  • Add softened butter and esc and fold well with spatula.
  • Just bring together and make a dough.
  • Cling wrap this and refrigerate for an hour.
  • Cut into deisred shapes and press in crushed almonds.
  • Line this in a baking tray.
  • Bake this in a preheated oven at 180°C for 10-12 mins.
  • It will be soft out of oven and will turn crisp in a while.
