Ingredients:
Onion - 1 (thin slices)
Tomato - 1 1/2 (fine chop)
Small onion - 5 (roughly chop)
Green Chilly - 1
Dry Red chilly - 2
Carrot - 1
Beans - 2
Drumstick - 6-7 pieces
Brinjal - 1
Thoor dal - 1 cup
Turmeric powder - 1/2 tsp
Tamrind pulp - 2 tbsp
Hing - a pinch
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Jaggery - Little
Curry Leaves - a sprig
Coriander Leaves - Little
Salt, Oil, Water - As reqd
Udupi Masala:
Dry Red chilly - 7
Coriander seeds - 5 tbsp
Channa dal - 2 tbsp
Urad dal - 2 tbsp
Cumin seeds - 1 1/2 tsp
Fenugreek seeds - 1/2 tsp
Coconut - 4 tbsp
Method:
- Heat little oil in pan and add items under "udupi masala".
- Roast them in low flame till it turns n brown color.
- Let it cool and grind to a paste.
- Add water, hing, turmeric powder and boil dal and set aside.
- Soak tamrind in water and strain and set aside.
- Heat oil in pan and add onions, tomato and green chilly and saute well.
- Add in veggies and add water and cover and cook till it is cooked.
- Now add in dal and grinded paste and tamrind water.
- Add in salt and cook in low flame.
- Heat oil in pan and add mustard seeds, cumin seeds, dry red chilly.
- Add in curry leaves and add this to sambar.
- Garnish with coriander leaves and serve with rice.
