Leftover Rice Pudding/ Rice Kheer

 

Ingredients:

Left over Rice - 1 cup
Milk - 2 cups
Sugar  - 4 tbsp
Salt - a pinch
Cinnamon powder - 1/4 tsp
Elaichi powder - a pinch
Cashews - 4 
Raisins - 4
Saffron Strands - Little
Condensed Milk  - 1 tbsp (optional)
Ghee - 1 tsp

Method:
  • Now in a pan add in rice, milk, sugar.
  • Add in a pinch of salt to enhance the flavour.
  • Cook in low flame app for 5 mins.
  • Keep stirring in between.
  • Add in elachi powder and cinnamon powder.
  • Cook in low flame for 10-12 mins.
  • Keep stirring.
  • Add in condensed milk and mix well.
  • Now in other pan and ghee.
  • Add in cashews and raisins.
  • Add this to pudding and mix it.
  • Top it with few saffron strands.
  • Serve hot or you can refrigerate and serve chill too.

Note:
You can use basmati rice too,
