Egg 65


Ingredients:

Egg - 4 (boiled)
Egg white - 1/2 cup
Red Chilly powder - 1 tsp
Kashmiri Chilly powder - 2 tsp
Garam Masala powder - 2 tsp
Ginger garlic paste - 1 tbsp
Green Chilly - 2 (slit)
Red Chilly sauce - 1 tbsp
All purpose flour - 3 tbsp
Bread Crumbs - 3 tbsp
Curd - 2 tbsp
Curry Leaves - Little
Salt, Oil - As reqd

Method:

  • Boil egg and remove the yellow part.
  • Cut the whites into small pieces.
  • Add ginger garlic paste, red chilly powder and a tsp of garam masala.
  • Add flour and bread crumbs and egg white and little salt.
  • Mix this well.
  • When you make a ball out of it, it should be firm.
  • If not add flour and bring it to correct consistency.
  • Heat oil in pan and deep fry these and set aside.
  • Now heat a tbsp of oil and add curry leaves.
  • Cook in medium flame.
  • Once it splutters add green chilly, kashmiri chilly powder.
  • Add a tsp of garam masala powder, little salt and mix well.
  • Add red chilly sauce and mix up.
  • Add curd and mix well.
  • Add the fried eggs and toss well.
  • Your spicu egg 65 is ready.


Cheesy Crust Pizza - Dominos Style




Ingredients:
Pizza Dough
Onion - 1
Capsicum - 1
Red Chilly flakes - 1 tsp
Oregano - 1 tsp
Cheese - 1 cup(grated)
Olive Oil - 2 tbsp
Pizza sauce

Method:
  • Take the pizza dough and divide it.
  • One big ball and one small size ball dough.
  • Knead the bigger one and prick with fork.
  • Leave the borders and sprinkle cheese.
  • Knead the small size dough and prick it with fork.
  • Place it over the bigger one and press it.
  • Fold the corners throughout.it 
  • Now spread pizza sauce and top it with veggies.
  • Sprinkle chilly flakes and oregano.
  • Cover it with grated cheese.
  • Drizzle oil over it and brush corners with oil.
  • Preheat the oven(OTG) at 250°C and bake for 20 mins.
Note:
Make pizza dough as in link, but don't roll out.


KaaraPaneer Dosa


Ingredients:

Paneer - 1/2 cup
Mixed Veg Thokku - 3 tbsp
Dosa Batter

Method:

  • Blend paneer in a mixer and transfer to a bowl.
  • Add the veg thokku and mix well and set aside.
  • Make dosa as you do regularly.
  • Place a scoop of paneer mix and spread.
  • Cook in low range.
  • Don't flip it.
  • Serve with sambar or coconut chutney.

Kesar Badam Milk



Ingredients:

Badam - 6-8
Milk - 1 cup
Sugar - 1-2 tbsp
Saffron Strands - 5-6

Method:

  • In a bowl take badam and add hot water to this.
  • Set this aside for 10 mins.
  • After 10 mins peel the skin.
  • Take this in mixer and add sugar and saffron strands.
  • Add milk and blend this.
  • In medium range boil the balance milk.
  • Once it reduces add the grinded stuff.
  • Mix well and once it starts to boil turn off.
  • Garnish with grated badam and serve hot or chill as you wish.

Note:
You can add a pinch of elaichi powder while boiling milk.

Mixed Veg Thokku


Ingredients:

Carrot - 1/2 piece
Beetroot - 1/2 piece
Peerkangaai - 1/2 piece
Raw Mango - 1/2 piece
Beans - 2
Tamrind - small piece
Dry red chilly -3-5
Oil, Salt - As reqd
Temper - Mustard seeds, cumin seeds, urad dal, curry leaves

Method:

  • Cut all veggies into small pieces. 
  • Heat oil in pan and add all veggies.
  • Saute for a while and transfer to plate.
  • In same oil saute chillies and transfer to it.
  • Add tamrind and salt and grind it to a paste.
  • Heat oil in pan and add items under temper.
  • Add this to thokku.


Note:

  • The raw mango is the key ingredient.
  • If it is pulipu then add tamrind acc.
  • You can any veggies you have.

Churros - Spanish Snack

Ingredients:

All purpose flour - 1/2 cup
Unsalted butter - 40 g
Egg - 1
Vanilla Esc - 1/2 tsp
Water - 1/2 cup
Sugar - 1 tbsp
Salt - a pinch

For Dusting:
Sugar - 1- 2 tbsp
Cinnamom powder - 1 tsp

Method:
  • In a pan add butter, water, sugar and salt.
  • Once it starts to boil, turn off the range.
  • Add flour to this and mix well.
  • Then add vanilla esc and then egg.
  • Mix well and form a dough.
  • Tranfer this to a icing bag with flower/star nozzle.
  • Heat oil in pan and keep in medium flame.
  • Pipe them and fry it.
  • In a plate mix items under "for dusting".
  • Roll the fried churros in and serve hot.
Note:
  • You can also bake the same.
  • Pipe them in a butter paper placed in a bakig tray.
  • Bake in a preheated oven(OTG) at 220°C for 15-18 mins.

Fried AlooGobi Briyani


Ingredients:

Basmati Rice - 2 1/2 cups
Onion - 2 (thin slices)
Ginger garlic paste - 1 tbsp
Tomato - 2 (puree)
Garam Masala powder - 1/2 tsp
Salt, Oil, Ghee - As reqd
Bay Leaf - 1
Cinnamon Stick - small piece
Cloves - 2
Green Elaichi - 1
Water  -1/2 cup
Cocnut  Milk - 2 Cup

Marinate:
Baby potato - 6-7 (cut into halves)
Cauliflower - 5 - 6 pieces
Curd - 3 tbsp
Rice flour - 1 1/2 tbsp
Red chilly powder - 1/2 tsp
Garam masala powder - 1/4 tsp
Salt - As Reqd

Grind:
Corainder Seeds - 1 tsp
Dry Red Chilly - 2
Green Chilly - 2
Coriander Leaves - Little

Method:

  • Soak basmati rice for 10 mins.
  • Heat ghee in pan and sauter the rice for a while.
  • Transfer this to electric cooker.
  • Now grind items under "grind" and set aside.
  • Before grinding just dry roast coriander seeds and dry red chilly.
  • Boil a cup of water and add cauliflower for a while and close it.
  • Then strain and transfer to a bowl.
  • Peel baby potatoes skin and cut into halves and to same bowl.
  • Add items under "marinate" to this and set aside for 10 mins.
  • Heat oil in pan and fry these and set aside.
  • In same oil fry half of onion and set aside.
  • Now heat ghee and oil in a pan and add garam spices.
  • Add onion and sauter for a while.
  • Add ginger garlic paste and saute for a while.
  • Add toamto puree and cook till raw smell goes.
  • Then add grinded paste, garam masala and cook for a while.
  • Add fried aloo and gobi  and reqd salt and mix well.
  • Add this to electric cooker.
  • Now add coconut milk and water.
  • Cook this for 10-15 mins.
  • Once done garnish with fried onions and serve with onion raita.

Note:
You can use water alone instead of coconut milk.


Fried Mini Buns



Ingredients:

Bread Crumbs - 1 cup
Oil - As reqd (for frying)
Milk - 1/4 cup

For Bun:
All Purpose flour - 1 1/4 cup
Dry yeast - 1/2 + 1/4 tsp
Sugar - 1 tbsp
Salt - 1/2 + tsp
Oil - 1 1/2 tbsp
Milk(warm) - 1/2 cup

Stuffing:
Onion - 1 (fine chopped)
Carrot - 1
Beans - 3
Peas - Little
Capsicum - 1
Ginger garlic paste - 1/2 tbsp
Soya sauce - 1 tsp
Tomato sauce - 2-3 tbsp
Red Chilly powder - 1 tsp
Garam Masala powder - 1/4 tsp
Sugar - Little(less than 1/2 tsp)
Salt - As reqd

Method:
  • In a bowl add yeast and sugar.
  • Add warm milk to this and set aside for yeast to be activated.
  • In other bowl take flour and salt, add oil to this.
  • Once yeast is activated add to flour and mix well.
  • Set this dough aside for proofing.
  • Heat oil in pan and add onion and saute.
  • Add ginger garlic paste and all veggies(fine chop).
  • Add salt, sugar, soya sauce, tomato sauce and mix well.
  • Then add chilly powder and garam masala powder.
  • Cook in low flame till all veggies are cooked.
  • Now check the dough, it would have doubled in size.
  • Punch it and make small balls out of it.
  • Take a ball and press with finger.
  • Fill in with stuffing and seal it.
  • Dip these balls in milk and then in bread crumbs.
  • Do the above step twice.
  • Heat oil and fry these.
  • Fried Mini buns are ready.
Note:
  • Add salt acc as soya sauce ha salt.
  • Do not refrigerate these balls as it will grow in size.
  • You can bake the same.
  • Just place these balls in tray and bake in a preheated oven(OTG) at 180°C for 10-13 mins
  • After that increase the temperature to 220°C and bake for 4 mins.

Badam Halwa




Ingredients:
Badam - 1/2 cup
Sugar - 1/2 cup
Water - 1/2 cup
Ghee - 4 tbsp
Condensed milk - 3 tbsp
Milk - 4 tbsp
Elaichi powder - a pinch(optional)
Safrron Strands - few

Method:
  • In a bowl take almonds and add hot water to this and set aside for 10-15mins.
  • After that strain and peel off the skin.
  • Now grind badam with 2 tbsp of milk.
  • In other bowl take 2 tbsp of milk and soak saffron strands in it,
  • Heat a pan and add sugar and water and let it boil.
  • Once sugar dissolves add the grinded paste.
  • Stir continuously and once it is all mixed up, add saffron milk.
  • Then add condensed milk, elaichi powder and mix well.
  • Keep stirring for 5 mins.
  • Then add ghee and mix it up.
  • Once it starts to bubble up, turn off the fire.
  • Badam halwa ready.

Tutti Frutti Cake


Ingredients:
All purpose flour - 2 cup
Sugar - 1 1/4 cups
Tutti frutti - 1/2 cup
Unsalted butter - 2 tbsp
Milk - 3/4 cup
Egg - 2
Baking powder - 2 tsp
Baking soda - 1 tsp
Vanilla Esc - 3 tsp

Method:
  • In a bowl take tutti frutti and add 2 tbsp of flour and mix well.
  • Set this aside.
  • In other bowl take butter and sugar and mix well.
  • It will be like crumbs.
  • Now add one egg at a time and blend nicely.
  • Add in esc and milk and blend nicely.
  • Now add flour, baking soda and baking powder and mix well.
  • Finally add in the tutti fruttis and mix well.
  • Transfer this to a greased pan.
  • Preheat oven(OTG) at 180°C and bake for 35-40 mins.

Illusion Cake





Ingredients:
Any Cake
Choco Stick - 1
Gems Pack - 1

Method:

  • I used Blondie cake.
  • Did chocolate frosting for the same.
  • Dip the choco stick in chocolate frosting.
  • Stick gems one by one.
  • Insert the gems cover at the tip.

Note:
  • When dipping the chocostick let the frosting be bit semisolid.
  •  I used MeijiYan Yan sticks.

Eggless Peanut Butter Cookies

Ingredients:
Wheat flour - 1/2 cup
All Purpose flour - 1/2 cup
Sugar - 1/2 cup
Unsalted butter - 3 tbsp
Peanut butter - 1/3 cup
Baking Soda - 1/4 tsp
Milk - As reqd

Method:
  • In a bowl take flour and baking soda and mix well.
  • In other bowl take melted butter and add sugar to it.
  • Then add peanut butter and mix well.
  • Add the flour mixture to this and mix it up.
  • Add milk to form a soft dough.
  • Place butter paper in a baking tray.
  • Make small balls from dough and roll it in sugar.
  • Now place this tray and make impressions with fork.
  • Preheat oven(OTG) at 180°C and bake for 15-20 mins.

Tawa Paneer - Dhaba Style


Ingredients: 

Masala Paste:
Onion - 2 
Green Capsicum - 1/2 
Tomato - 3
Green Chilly - 1
Garlic - 6-8
Ginger - small piece
Coriander Stem - Little
Cloves - 2
Cinnamon Stick - small piece
Elaichi - 1
Black pepper corns - 2
Bay Leaf - 1
Cumin seeds - 1/2 tsp
Cashews - 3-4
Turmeric powder - 1/8 tsp
Red Chilly powder - 1/2 tsp
Kashmiri Chilly powder - 1/2 tsp
Cumin powder - 1/4 tsp
Coriander powder - 1/2 tbsp
Black salt - 1/4 tsp
Hot water - 200 ml
Salt - As reqd

Gravy:

Paneer - 200 g
Onion - 1 
Green Capsicum - 1/2 
Ginger garlic paste - 1/2 tsp
Turmeric powder - a pinch
Kashmiri Chilly powder - a pinch
Garam Masala - 1/4 tsp
Kasoori Methi - Little
Coriander leaves - Little
Ghee - 1 tsp


Method:

  • First prepare masala paste.
  • Heat oil in pan and add in cumin seeds.
  • Add in garam spices.
  • Add in onion(roughly chopped) and saute in medium flame.
  • Add in garlic and ginger and saute.
  • Once onion color changes, add in spice powders, black salt and salt.
  • Mix well and add little hot water.
  • Add in tomatoes, cashews and capsicum and mix well.
  • Add in coriander stems and remaining water.
  • Cover with lid and cook in medium flame for 6-7 mins.
  • Let this cool.
  • Remove the bay leaf and blend to a fine paste and set aside.
  • Now take 1 onion and dice little and fine chop rest and set aside.
  • Now dice the capsicum and set aside.
  • Heat 2 tbsp of ghee and add in fine chopped onions and saute.
  • Add in ginger garlic paste and cook in medium flame.
  • Add in tumeric and chilly powder.
  • Add in blended masala paste and mix well.
  • Cook in medium flame for 8-10 mins.
  • If gravy is too dry add in hot water to adjust consistency.
  • Heat oil in other pan and add in diced onions.
  • Add in diced capsicum and saute.
  • Add this to gravy.
  • Take a small piece of paneer and grate this and set aside.
  • Add in paneer cubes and mix gently.
  • Add in garam masala and crushed methi leaves.
  • Garnish with fine chopped coriander leaves and add in grated paneer.
  • Mix this well and serve hot.

Things to note:

General:
  • I have tired baking in both convention microwave(samsung) and OTG (morphy richards).
  • If I have tired out a recipe in OTG, I would have mentioned the same in post, otherwise it means I have done in my convention microwave.
  • The timing varies for each OTG and microwave.
  • Microwave - preheating time is automatic(app 10 mins) and gives a beep sound once done,
  • OTG - Preheat for 10 mins for any recipe.

Butterscotch MilkShake


Ingredients:

Milk - 1/4 cup
Butterscotsch icecream - 2 scoops
Chopped Nuts - 1/2 tbsp
Butterscotch chips - 1/2 tsp

Method:

  • In a mixie add milk and ice cream and blend it.
  • Garnish with nuts and butterscotch chips.
  • Yummy drink ready.

Biscuit Condensed Milk Pudding

Ingredients:
Powdered Biscuits - 5 (digestive marie biscuit)
Condensed Milk - 1/4 cup
Cocoa Powder - 1 tbsp
Chopped Nuts - 1/2 cup
Unsalted butter - 1 tbsp

Method:
  • Melt butter and add it to the mould or cup you are goin to use for baking.
  • Crush the biscuits and add it to the bowl and press it firm.
  • Pour the condensed milk on top of it.
  • Next layer it with cocoa powder.
  • Top with chopped nuts.
  • Preheat oven at 180°C and bake for 10-12 mins.
  • You can serve this chill or hot.
Note:
I used my homemade Nuts Powder.

Easy Kesar Paneer Ladoo

Kalakandh N Kesar Paneer Ladoo

Ingredients:
Paneer - 200 g
Condensed milk - 1/2 cup
Pistachios - few (for topping)
Rose Esc - 3 drops
Elaichi powder - 1/8 tsp
Ghee - 1 tsp
Saffron strands - 5-6

Method:
  • Cut the paneer and add it to blender.
  • Add condensed milk and saffron strands to this.
  • Grind this to a fine paste.
  • Add ghee in a nonstick pan and heat it.
  • Add the grinded paste and cook in low flame.
  • Keep stirring, till it thickens.
  • Once it starts to thicken add in esc and elaichi powder.
  • Mix well and transfer to a bowl.
  • When it is warm, make small balls.
  • Top it with grated pistachios.



Easy Kalakand

Kalakand N Kesar Paneer Ladoo


Ingredients:
Paneer - 200 g
Condensed Milk - 1/2 cup
Sugar - 1.5 tbsp
Milk powder - 1.5 tbsp
Elaichi powder - 1/2 tsp
Ghee - 1 tsp
Pistachios - few (chopped)

Method: 

  • Cut the paneer, blend it and transfer to the bowl.
  • Add condensed milk to this and mix well.
  • Add sugar, milk powder and elaichi powder and mix  well.
  • Now heat a nonstick pan and add this mixture.
  • Keep stirring till it thickens.
  • Once it starts to thicken add ghee.
  • Transfer this to a plate or bowl and smooth it.
  • Top it with pistachios.
  • Once it is set,slice it off.

Note:
It is easy as I used the store bought paneer.

Eazy Crossiants



Ingredients:
For Dough:
All purpose flour - 1/2 cup
Wheat flour - 1/2 cup
Warm water - 1/3 cup
Dry yeast - 1.5 tsp
Sugar - 1/2 tbsp
Salt - 1/4 tsp
Oil - 1 tbsp

Stuffing:
Chopped nuts (cashews, badam, pistachios) - 5tbsp
Powdered sugar - 2 tbsp


Method:
  • In a bowl mix nuts and sugar and set aside.
  • In a bowl add yeast,sugar,oil and warm water.
  • Set aside till yeast is activated.
  • Add it to flour, add salt and leave the dough to double up in size.
  • Take your pizza dough and knead it to a thin rectangle.
  • Now cut triangles out of it.
  • At the lengthy base make a small cut in the middle.
  • Sprinkle the nuts mixture and roll it up and press the end.
  • Place a butter paper in baking tray .
  • Place the crossiants and brush with oil.
  • Preheat oven(OTG) at 250°C and bake for 15 mins.
  • Now reduce the temperature to 180°C and bake for 5 mins.
Note:
I used nuts powder for this recipe.

Vazhakaai Podimaas


Ingredients:
Onion - 1 (finely chopped)
Vazhakaai - 2
Mustard seeds - 12/ tsp
Cumin seeds - 1/2 tsp
Urad dal - 1/4 tsp
Sambar thool - 1 1/2 tbsp
Curry Leaves - Little
Hing - Little
Oil,Salt, Water - As reqd

Method:

  • Boil water in pan and add vazhakaai (just cut edges and add).
  • Cover and cook for 5 mins.
  • Strain the water and peel the skin.
  • Grate this and keep aside.
  • Heat oil in pan and add mustard,cumin and urad dal.
  • Once it splutters add curry leaves and onion.
  • Saute for a while and add grated stuff.
  • Add salt and sambar thool and mix well.
  • Cook in low range for few mins.
  • Vazhakaai podimaas ready.

Note:
Should not boil vazhakaai for long time.

Quick Halwa #2 Microwave Corn flour halwa



Ingredients:

Corn flour - 1/4 cup
Sugar - 3/4 cup
Water - 1 cup
Food Color - a pinch
Elachi powder - a pinch
Cashews - 5 (chopped)
Ghee - 2 tbsp

Method:
  • In a microwave safe bowl add flour, sugar and water.
  • Mix it nicely without lumps.
  • Add elaichi powder and color and mix well.
  • Now in microwave high for 3 mins.
  • Roast the cashews in ghee and add to halwa.
  • Also add a tbsp of ghee.
Note:
  • If you want to slice it,then pop it for 1 more min.
  • I topped it with nuts powder.

Biscuit Custard Pudding



Ingredients:
Custard powder - 5 tbsp
Milk - 3 cups
Sugar - 4 tsp
Biscuits - 1 pack(Milk bikis or marie small pack)
Decoction - 2 tbsp
Sprinklers - As reqd

Method:
  • In a bowl add custard powder and little milk and mix it up.
  • In other bowl add milk and boil it.
  • Reduce the range and add sugar and keep stirring.
  • Add the custard powder mix and keep stirring.
  • Once it starts to thicken, turn off the range.
  • Let this aside to cool down.
  • Dip each biscuit in decoction and layer it.
  • Top it with custard mix.
  • Again layer it with biscuit and then with custard mix.
  • Form some 3-4 layers.
  • Top it with sprinklers and refrigerate for 3-4 hrs.
  • Should take it out of fridge 10-15 mins before serving.
  • You can cut this and serve.

Palak Cheese Balls

Ingredients:

Palak - 1/2 cup (fine chop)
Cheese - 50 g
Paneer - 30 g
Maida - 1 tbsp
Corn flour - 2 tbsp
Red chilly powder - 1/4 tsp
Cumin powder - Little
Oil - As reqd

Method:

  • In a bowl add the chopped greens.
  • Add grated cheese, paneer to this.
  • Then add maida, corn flour, chilly and cumin powder.
  • Mix this well and make small balls out of it.
  • Dust this in corn flour and deep fry it.

Note:
As cheese has salt in it no need to add salt separatel.y

VallaraiKeerai Thokku

Ingredients:
Vallarai Keerai - 1 cup
Tamrind water  -  little (soak lemon size tamrind in water)
Cumin powder - 1/2 tsp
Red chilly powder - 1 tsp
Fenugreek powder - 1/2 tsp
Sugar(naatu sakkarai) - 1 tsp
Mustard seeds - 1 tsp
Hing - a pinch
Salt,Oil - As reqd

Method:

  • Remove the bottom part of the stem from greens.
  • Wash it nicely and grind it to a paste.
  • Heat oil in pan and add mustard seeds and hing.
  • Add the greens paste and saute till raw smell goes.
  • Now add tamrind water and masala powders.
  • Add salt and mix well.
  • Cook till it attains thokku consistency.

ManathakaaliKeerai Thuvayal

Ingredients:
Manathakaali Keerai - 1 cup
Capsicum - 1
Urad dal - 2 tsp
Tamrind - small piece
Grated coconut - 2 tbsp
Dry red chilly - 2
Salt, Oil - As reqd

Method:

  • Wash the greens and keep aside.
  • Heat oil in pan and add urad dal.
  • Once it changes in color, add chopped capsicum.
  • Then add greens, tamrind, salt, chilly and saute well.
  • Finally add grated coconut.
  • Let this cool and then grind.

Modakathan Keerai Dosai


Ingredients:
Idly rice - 1 cup
Urad dal - 1/2 cup
Fenugreek Seeds - 1 tsp
Cumin seeds - 1 tsp
Small Onion - 10(optional)
Mudakathan Keerai - 2 cups
Salt,Oil,Water -As reqd

Method:
  • Soak rice, dal and fenugreek seeds for 2hrs.
  • Grind this to dosa batter consistency.
  • Wash the keerai and grind it to paste.
  • Add this paste and salt to the batter.
  • Mix this nicely.
  • Heat oil in pan and add cumin seeds and onion.
  • Saute for a while and add to batter.
  • Now in dosa tawa pour a scoop of batter and make dosas.
  • This goes good with coconut/tomato chutney.

Note:
I did'nt add cumin seeds and onion.

Pizza Pinwheel



Ingredients:
For Dough:
All purpose flour - 1/2 cup
Wheat flour - 1/2 cup
Warm water - 1/3 cup
Dry yeast - 1.5 tsp
Sugar - 1/2 tbsp
Salt - 1/4 tsp
Oil - 1 tbsp

Topping:
Pizza sauce - As reqd
Capsicum - 1 (fine chopped)
Onion - 1 (fine chopped)
Oregano- 1 tbsp
Red Chilly flakes - 1 tbsp
Grated cheese - 5 - 6 tbsp
Olive Oil - As reqd

Method:
  • In a bowl add yeast,sugar,oil and warm water.
  • Set aside till yeast is activated.
  • Add it to flour, add salt and leave the dough to double up in size.
  • Take your pizza dough and knead it to a thin rectangle.
  • Spread the pizza sauce leaving corners.
  • Top it with onion, capsicum.
  • Sprinkle oregano and chilly flakes.
  • Cover it with grated cheese.
  • Now carefully roll it and cling wrap.
  • Refrigerate for 15 mins(optional).
  • Remove the wrap,brush with oil and slice it.
  • Place a butter paper in baking tray .
  • Place the slices and brush with oil.
  • Preheat oven(OTG) at 180°C and bake for 20-25 mins.

ChocoVanilla Popsicle


Ingredients:

Milk - 1/2 cup (boiled and chilled)
Vanilla Esc - 1/2 tsp
Sugar - 5 - 6 tbsp
Chocolate Syrup - 2-3 tsp
Moulds

Method:

  • Take 1/4 cup of milk and add 2 tbsp of sugar and vanilla esc.
  • Mix this well.
  • In other bowl take 1/4 cup of milk, 2 tbsp of sugar.
  • Add chocolate syrup to this and mix well.
  • Now in your icecream mould pour chocolate mix.
  • Refrigerate for 2 hours.
  • Once it is set pour the second layer and insert icecream sticks.
  • Refrigerate for 8 hrs or overnight.

Note:
If you don't have syrup you can use chocolate chips or cocoa powder.

Poha Cerelac


Ingredients:
Red Rice Poha - 1 cup
Panakarkandu powder- 1/3 cup

Method:
  • Dry roast the poha till it changes in color.
  • Transfer this to mixer and add panakarkandu powder.
  • Blend this nicely.
  • Let it cool and store in air tight container.
Note:
  • Take 2 tbsp of this and add hot water.
  • Mix well and feed your baby.




Double Booster Cerelac


Ingredients:
Multigrain Atta- 3/4 cup
Wheat Flour - 1/4 cup
Butter - 1/4 cup
Nuts Powder - 1/4 cup
Raisins - 6
Panakarkandu powder - 1/4 cup

Method:
  • In a bowl take multigrain atta, palm sugar, wheat flour.
  • Add nuts powder, raisins and mix well.
  • Take the chilled butter and melt it.
  • Add this to flour mixture and mix till you get crumb texture.
  • Now add water slowly till you attain a soft dough.
  • Knead the dough thin and prick with fork.
  • Cut it into small squares.
  • Place butter paper in a baking tray and places these squares on it.
  • Preheat the oven(OTG) at 180°C and bake for 15-20 mins.
  • Do check in between and corner squares turn brown take that off.
  • Bake the rest till done.
  • Cool this completely.
  • The baked biscuits should be crisp.
  • Add this to mixer jar and grind coarsely.
  • Let it cool and then store in an air tight container.
  • It will be good for a month.
Note:
Take 2tbsp of this powder and add hot water to this.

Nuts Powder


Ingredients:
Whole Cashews - 1/2 cup
Badam - 1/2 cup
Pistachios -  2 tbsp
Green Elaichi - 3

Method:
  • Dry roast the ingredients and set aside.
  • Peel the elaichi skin and keep.
  • Now grind this coarsely.
  • Let it cool and store in a air tight container.
  • Refrigerate it, stays good for 3 months.
Note:
  • Don't grind for long time as badam leaves oil.
  • And this will not give a coarse powder.
Uses:
  • This can be mixed in cerelac and can be fed to babies above 10 month.
  • Can be used in deserts, milkshakes etc.

Eggless Honey Walnut Cookies



Ingredients:
All purpose flour - 1 cup
Powdered Sugar - 1/4 cup
Honey - 1/4 cup
Vanilla Esc - 1 tsp
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Walnuts - 1/2 cup(chopped)
Oil - 1/4 cup

Method:
  • Take the dry ingredients in a bowl and mix well.
  • In other bowl take oil,honey and esc and mix well.
  • Add this to dry ingredients.
  • Add the walnuts and mix up.
  • Make a soft dough.
  • Place butter paper in a baking tray.
  • Take small balls from the dough and press it.
  • Preheat the oven(OTG) at 180°C and bake for 10-12 mins.

MelonCherry Popsicle



Ingredients:

MuskMelon - 1
Glaze Cherries - 2
Sugar or Honey - As reqd

Method:
  • Cut the muskmelon into slices.
  • Add this to blender.
  • Now add sugar or honey.
  • Blend this nicely.
  • Pour this in popsicle mould.
  • Cut cherries into tiny pieces and add it to mould.
  • Freeze it.
  • While demoulding place it in luke warm water and demould.
  • Enjoy the meloncherry popsicle.

Condensedmilk Cookies


Ingredients:
All purpose flour - 1 1/2 cup
Sugar- 1/4 cup
Unsalted butter - 1/2 cup
Condensed milk - 200 g
Vanilla extract - 1 tsp
Salt - a pinch

Method:

  • In a bowl take butter and sugar to this and cream it using electric mixer.
  • Add condensed milk and vanilla esc and mix well.
  • Add flour, salt and beat until smooth.
  • Line the baking tray with butter paper.
  • Scoop a protion of dough and place in it and press it.
  • Preheat oven(OTG) at 180°C and bake for 12-15 mins.


Eggless Coffee Cupcakes


Ingredients:

Wheat flour - 1 1/2 cup
Powdered Brown Sugar - 3/4 cup
Palm sugar - 1/4 cup
Unsalted butter - 1/4 cup
Baking powder - 1 1/4 tsp
Coffee Decoction - 1/4 cup
Milk - 1/2 cup
Vanilla Esc - 1 tsp
Salt - 1/4 tsp
Chocochips - 3 tbsp

Method:
  • In bowl take the dry ingredients and mix well.
  • In other bowl take decoction and add milk and esc to it and mix well.
  • Take butter in a bowl and blend it using electric hand mixer.
  • Add in the dry ingredients and blend it.
  • Now add the wet ingredients and blend nicely.
  • Line your cupcake pan with liners.
  • Pour this batter to 3/4th in each liner.
  • Top it with chocochips.
  • Preheat oven(OTG) at 180°C and bake for 18-20 mins.
  • Let it cool.
  • Yields 12 cupcakes.
  • Frost with Coffee Buttercream Frosting

Paneer Tikka Gravy #1

Ingredients:
Tomato - 3(puree)
Fresh cream - 1/4 cup
Onion - 2(cut one onion length wise)
Cumin seeds - 1/2 tsp
Ginger garlic paste - 1/2 tsp
Chilly powder - 1 tsp
Garam masala powder - 1 tsp
Corainder powder - 1 tsp
Dried kasthuri methis leaves - 1 tsp
Corainder leaves - Little
Paneer Tikka
Salt, Oil - As reqd

Method:

  • Marinate paneer for an hour, Refer the link and marinate.
  • After an hour, tawa toast paneer and set aside.
  • Heat oil in pan, add cumin seeds and ginger garlic paste and saute.
  • Then add onion and saute till it turns in light brown color.
  • Now add tomato puree, masala powders and required salt.
  • Mix well, add water and let it boil till gravy thickens.
  • Now add fresh cream and mix up.
  • Finally add the toasted paneer and cook for 2 mins.
  • Add the crushed dried kasoori methi leaves and stir it.
  • Paneer tikka gravy is ready.

Note:
Add salt accordingly as we add salt in marination too.

Flour Buttercream Frosting


Ingredients:
All purpose flour - 4 1/2 tbsp
Milk - 1 cup
Sugar - 1 cup
Unsalted butter - 200 g
Vanilla Esc - 1 tsp

Method:
  • In a pan add flour and sugar and mix well.
  • Add milk and mix such that there are no lumps.
  • Now heat this pan and keep stirring till it becomes thick.
  • Once it starts to thicken add vanilla esc and mix well.
  • Now transfer this to another bowl and beat it using electric hand mixer.
  • Beat till it becomes cold.
  • Once it becomes cold add in butter little by little.
  • Blend this nicely, till you get the peak consistency.
  • You can use this on any cake you wish.

Kadapa - Kumbakonam Spl Gravy


Ingredients:
Moong Dal - 1/4 cup
Potato - 2
Big Onion - 1
Mustard seeds - 1 tsp
Cinnamon stick - small piece
Cloves - 2
Bay Leaf - 1/2
Coriander Leaves,Curry Leaves - Little
Salt, water, oil - As reqd

To Grind:
Coconut - 1/3 cup(grated)
Garlic pods - 4
Grenn Chilly - 1
Fennel seeds - 1/4 tsp

Method:

  • Boil potatoes and mash it and set aside.
  • Grind the items under "to grind" and set aside.
  • Pressure cook moong dal and keep it aside.
  • Now in a pan add oil.
  • Add bay leaf, cloves, cinnamon, green chilly and saute.
  • Then add onion, garlic and saute well.
  • Now add the grinded paste,mashed potatoes and dal.
  • Add water and salt and mix well.
  • Let it boil for 5-7 mins.
  • Garnish with coriander leaves and serve with idly or dosa.

Eggless Molten Lava Cake

Ingredients:
All purpose flour - 1 tbsp
Cocoa powder - 1 1/2 tsp
Sugar - 1 tbsp
Baking powder - 1/8 tsp
Baking soda - 1/8 tsp
Salt - a pinch
Milk - 4 tbsp
Oil - 2 tsp
DairyMilk Silk Chocolate bar - 2-3

Method:

  • In a bowl take all the ingredients except chocolate bar.
  • Mix well.
  • Now grease a microwave safe bowl or mug.
  • Pour the batter and place the chocolate bar in between.
  • Pop this in microwave for a min.
  • Let it sit for 3-4 mins.
  • Now invert it to the plate.
  • Dust on icing sugar on top and cut it.
  • You can see the lava flowing out.
  • Enjoy the molten lava cake.

Microwave MysorePak

Ingredients:
Besan flour - 1/2 cup
Powdered Sugar - 1 cup
Corn Starch - 1 tsp
Ghee - 1/2 cup
Milk - 2 tsp

Method:

  • In a microwave safe bowl take a tbspn of ghee and add besan flour.
  • Microwave for a min and mix well and set aside,
  • In other micorwave safe bowl add remaining ghee and opo for 30 sec.
  • Now to this add sugar,corn starch and milk and besan flour stuff.
  • Mix it well and microwave for a min.
  • Remove it and again microwave for a min.
  • If it is foamy, then transfer to a greased ghee plate.
  • Allow it to cool for few mins and then cut it.

Note:
If it is not foamy, then pop for other 30 sec.

Butterscotch Cup Cakes


Ingredients:
All purpose flour -3/4 cup
Sugar - 3/4 cup
Baking powder - 1 tsp
Eggs -2
Unsalted butter - 1/2 cup
Butterscotch Esc- 1 tsp

Method:
  • In a bowl take flour and baking powder.
  • In other bowl take eggs and blend till fluffy.
  • Add sugar little by little and blend it.
  • Now add butter to this and whip it.
  • Add the flour mixture and mix it up.
  • Finally add the esc and mix it up.
  • Place liners in muffing tray.
  • Pour this batter 3/4th in each cup.
  • Preheat oven(OTG) at 180°C and bake for 20-25 mins

Shahi Paneer


Ingredients:

Paneer - 200 g
Onion - 2 (thin slices)
Medium size tomatoes - 2
Badam - 10
Cashew - 5(full)
Garlic pods - 6-8
Ginger - small piece
Melon seeds - 1/2 tsps
Bay Leaf -1/2
Cloves - 2
Green Elaichi - 1
Cinnamon Stick - small piece
Dry Methi Leaves - 1 tbsp
Fresh Cream - 3/4 cup
Red chilly powder - 1/2 tsp
Kashmiri chilly powder - 1 tsp
Salt, Water, Oil - As reqd

Method:

  • Boil water in a pan and when it starts to bubble up, reduce the range.
  • Add onion,cashews,badam,melon seeds, ginger and garlic.
  • Blanch this for 2 mins and strain and keep aside.
  • Once cool, grind this to a paste and set aside.
  • Grind the tomatoes and make the puree.
  • Heat oil in a pan and add bay leaf,cloves, cinnamon and elaichi.
  • Add the tomato puree and cook till raw smell goes.
  • Add chilly powders, garam masala and salt and saute.
  • Once raw smell goes, add the other set of grinded paste(onion, cashew etc)
  • Now cook in medium flame/range.
  • The gravy will be thick, now add fresh cream and water.
  • Mix up and let it boil for few mins.
  • Now add the paneer and crushed methis leaves.
  • Mix it up and let it boil for 2 mins.
  • Shahi paneer gravy is ready and goes good with pulav or rotis.

Note:
I did'nt have melon seeds at home so did'nt use it up.

Mocha Smoothie


Ingredients:

Banana -1
Milk - 1/2 cup
Malted Chocolate Drink Powder(Ovaltine) - 1 1/2 tbsp
Instant Coffee Powder - 1/2 tsp
Honey Or Sugar - As reqd
Ice Cubes - 3

Method:
  • Cut the bananas  and freeze it.
  • Now in a blender add the frozen banana.
  • Then add rest of the ingredients and give a blend.
  • Filling mocha smoothie is ready.

Note:
  • I had boost in home so used it instead of ovaltine.
  • You can also use bournvita or any chocolate drink powder.
  • Frozen bananas is must.


MiniCheckers N Marble Cookies



Ingredients:

All Purpose flour - 1 3/4 cup
Sugar - 3/4 cup
Unsalted Butter - 150 g
Cocoa Powder - 2 tbsp
Vanilla Esc - 1 tsp
Salt - a pinch
Milk - As reqd

Method:
  • In a bowl add butter, sugar and vanilla esc and blend well.
  • Add salt, flour and mix well.
  • Add milk accordingly to attain dough consistency. 
  • Divide dough into two parts and in one portion add cocoa powder.
  • Knead both balls nicely.
  • Now wrap them in separate butter paper and refrigerate till it is firm.
Step 1:
  • Now take the dough out and divide each one into half.
  • Knead each half to rectangle, such that all four of same size.
  • Now take vanilla rectangle and brush it with water.
  • Now place cocoa rectangle on top and brush it.
  • Place all 4 alternatively and wrap it and refrigerate.
Step 2:
  • Take the dough out and trim the sides
  • Cut it vertically into four parts.
  • Take one strip and brush with water and place the other strips accordingly.
  • Place them in such a way that corners don't have same color.
  • When you look the corner it will be like checkerboard.
Step 3:
  • Now cut into equal sizes.
  • Collect the left over pieces and roll it.
  • It will be like marbles.
  • Line butter paper in baking tray and place cookies.
  • Preheat oven(OTG) at 180°C and bake for 15-18 mins.
Note:
In step 2 I cut the dough into horizontal strips and that is why it became minicheckers:))

White Chocolate Cake


Ingredients:

All purpose flour - 5 tbsp
Unsalted Butter - 30 g
Egg - 1
Sugar - 2 tbsp
Baking powder - 1/2 tsp
White Chocolate - 6 squares or 25 g

Method: 
  • Melt the butter and chocolate by double boiler method or microwave it for 30 secs.
  • Let it cool for a while and add ingredients one by one and whisk well.
  • Transfer this to greased pan or microwave safe mug.
  • Bake in microwave for 2 mins.
  • Or Preheat oven(OTG) at 200°C and bake for 5-8 mins.
