Masala Paste:
Onion - 2
Green Capsicum - 1/2
Tomato - 3
Green Chilly - 1
Garlic - 6-8
Ginger - small piece
Coriander Stem - Little
Cloves - 2
Cinnamon Stick - small piece
Elaichi - 1
Black pepper corns - 2
Bay Leaf - 1
Cumin seeds - 1/2 tsp
Cashews - 3-4
Turmeric powder - 1/8 tsp
Red Chilly powder - 1/2 tsp
Kashmiri Chilly powder - 1/2 tsp
Cumin powder - 1/4 tsp
Coriander powder - 1/2 tbsp
Black salt - 1/4 tsp
Hot water - 200 ml
Salt - As reqd
Gravy:
Paneer - 200 g
Onion - 1
Green Capsicum - 1/2
Ginger garlic paste - 1/2 tsp
Turmeric powder - a pinch
Kashmiri Chilly powder - a pinch
Garam Masala - 1/4 tsp
Kasoori Methi - Little
Coriander leaves - Little
Ghee - 1 tsp
Method:
- First prepare masala paste.
- Heat oil in pan and add in cumin seeds.
- Add in garam spices.
- Add in onion(roughly chopped) and saute in medium flame.
- Add in garlic and ginger and saute.
- Once onion color changes, add in spice powders, black salt and salt.
- Mix well and add little hot water.
- Add in tomatoes, cashews and capsicum and mix well.
- Add in coriander stems and remaining water.
- Cover with lid and cook in medium flame for 6-7 mins.
- Let this cool.
- Remove the bay leaf and blend to a fine paste and set aside.
- Now take 1 onion and dice little and fine chop rest and set aside.
- Now dice the capsicum and set aside.
- Heat 2 tbsp of ghee and add in fine chopped onions and saute.
- Add in ginger garlic paste and cook in medium flame.
- Add in tumeric and chilly powder.
- Add in blended masala paste and mix well.
- Cook in medium flame for 8-10 mins.
- If gravy is too dry add in hot water to adjust consistency.
- Heat oil in other pan and add in diced onions.
- Add in diced capsicum and saute.
- Add this to gravy.
- Take a small piece of paneer and grate this and set aside.
- Add in paneer cubes and mix gently.
- Add in garam masala and crushed methi leaves.
- Garnish with fine chopped coriander leaves and add in grated paneer.
- Mix this well and serve hot.
