Gongura Thokku #1 - My Version



Ingredients:
Gongura leaf - 1 bunch
Garlic Pods - 10 finely chopped
Chilly powder - 2 tsp or As reqd
Mustard seeds - 1 tsp
Feugreek powder - little
Oil, Salt - As reqd
Method:
  • Clean gongura.
  • Heat oil add mustard seeds.
  • Then add finely chopped garlic.
  • Let the color change, then add keerai.
  • You can chop and add.
  • Or just roughly tear and add the leaves.
  • This will be cooked immediately
  • Then add chilly powder and required salt.
  • Add in fenugreek powder.
  • Mix well and cook in low flame.
  • Cook till oil oozes out.
  • Now transfer to clean bowl and store it.
  • Goes good with idly/dosa/rice.
Note:
  • It is always best to rinse the gongura in clean water.
  • Then spread it in a cloth and let it dry overnight and then use in recipe.
  • This helps the thokku to stay fresh for long time.
  • Always add in spice powder after the greens are cooked.
