Drumstick Brinjal Sambar


Ingredients:

Thoor dal - 1 cup
Onion - 1 (thin slices)
Tomato - 1 (fine chop)
Drumstick - 6-7 pieces
Brinjal - 2
Tamrind - small piece (soak in water)
Turmeric powder - 1 tsp
Sambar thool - 2 tbsp
Hing - a pinch
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Curry Leaves - a sprig
Coriander Leaves - Little
Salt, Water, Oil - As reqd

Method:

  • In a bowl add washed dal, water, turmeric powder and hing.
  • Pressure cook this for 4-5 whistles and set aside.
  • Cut brinjals and soak in water.
  • Heat oil in pan and add mustard seeds, cumin seeds and curry leaves.
  • Add onion and saute well.
  • Add tomato and saute well.
  • Now add drumstick and brinjal and saute.
  • Now add mashed and cooked dal.
  • Strain and add tamrind water, salt, sambar thool.
  • Add little water and cover and cook till veggies are boiled.
  • Garnish with coriander leaves and serve.
  • Goes good with rice/idly/dosa.
