Wheat flour - 1 cup

Method:
- In a bowl add flour, salt and add water little by little.
- Make a soft dough (like chapathi).
- Add 4 cups of water to this and cover.
- Let is sit overnight.
- Next day dillute the dough in the water and throw the final left out dough(sakka).
- This is wheat milk, refer picture.
- Set this aside for an hour.
- Water and milk part will separate and water will be on top.
- Pour the water carefully and take the milk(white part) alone.
- I got 1 cup milk.
- Rest of the measurements or based on this milk quantity. i.e., for 1 cup of milk.
- To this add 4 cups of water and mix and set aside.
- Now take 2 pans, In one pan lets caramalize sugar.
- For that add 1/2 cup sugar (I used a mix of white and brown sugar) and 2 tbsp of water.
- Mix this and cook in low flame till you the mild brown color (app 6-8 mins).
- In other pan add 2 1/2 cups of sugar and 1 cup of water and mix well.
- Cook in low flame for few mins.
- Add the caramalized sugar mix and then the 1 cup of wheat milk we got.
- Keep cooking in medium-low flame.
- From this step we have to keep stirring.
- After 10 mins add 1 tbsp of ghee and mix well.
- After 25 mins add ghee.
- After 45 mins mix will be semi-thick.
- After and hour and 15 mins we will get the desired consistency.
- If you want you can add roasted cashews at this point and mix well.
- Iruttu Kadai Halwa is ready to be served.
Note:
I also read in other article, it is enough to rest the dough for 10 mins.
