Dalgona Coffee






Ingredients:

Instant coffee powder - 2 tbsp
Sugar -  2 tbsp
Water - 2 tbsp
Milk - 3/4 cup

Method:

  • In a bowl add coffee powder, sugar and wate.
  • Whisk this vigorously till it is light and fluffy.
  • Now take the serving glass.
  • Pour in boiled and chilled milk.
  • Top it with the cream we prepared.
  • Your Dalgona coffee is ready.

Note:

  • You can use chilled milk or use ice cubes while serving.
  • You can make lots of variations with his.
  • Like Hot Dalgona Coffee.



Rava/Sooji Vadai


Ingredients:

Rava/Sooji - 150 g
Curd - 120 ml
Cumin powder - 1/2 tsp
Pepper powder - 1/4 tsp
Green Chilly - 2
Onion - 1 (fine chop)
Coriander Leaves - Little (fine chop)
Curry Leaves - Little (fine chop)
Hing - a pinch
Baking soda - a pinch
Salt, Oil - As reqd

Method:

  • In a bowl add rava, cumin powder and pepper powder.
  • Add in deseeded and chopped chilly, ginger garlic paste.
  • Add in curry leaves, coriander leaves, onion and hing.
  • Add in baking soda, salt and mix well.
  • Now add curd and mix well.
  • Set aside for 30 mins.
  • Heat oil in pan.
  • Make vada shape out of batter and fry it.
  • Fry them in medium hot flame.
  • Yields 12-15 vadai.
  • Serve with chutney of your choice.

Bourbon Biscuit



Ingredients:

Wheat flour - 100 g
Unsalted butter - 50 g
Cocoa powder - 25 g
Powdered Brown sugar - 40 g
Vanilla Esc - 1/4 tsp
Sugar - 2 tbsp
Milk - 1 - 2 tbsp

Cream:
Unsalted butter - 25 g
Cocoa powder - 15 g
Powdered brown sugar - 50 g
Milk powder - 5 g
Dark Chocolate - 5 g

Method:

  • In a bowl add in butter and sugar and cream well.
  • Now add flour, cocoa powder and esc and mix well.
  • Add milk and gather the dough.
  • Don't knead the dough.
  • Now set this aside for 20 mins.
  • Now dust the mat with little cocoa powder.
  • Now place the dough, sprinkle cocoa and roll the dough out.
  • Set this in freezer for 5-8 mins.
  • After the desired time,use cookie cutter and cut out the cookies.
  • Freeze this for 8 mins.
  • Now line a baking tray and arrange the cookies.
  • Prick holes in biscuit and sprinkle cookies.
  • Bake this in a preheated oven (OTG) at 180°C for 12-15 mins.
  • Let it cool.
  • Prepare the cream to sandwich the biscuits.
  • In a bowl cream butter and sugar.
  • Add cocoa powder and milk.
  • Add in melted and cooled chocolate.
  • Whisk well.
  • Sandwich biscuits with this cream.
  • Yields 9-10 bourbon biscuits.


Note:
As I have used brown sugar, it was bit chewy.

Javvarisi/ Sago Payasam

Ingredients:

Javvarisi / Sago - 1 cup
Milk - 1/2 cup
Jaggery - 3/4 cup
Water - 2 cups
Cashews - 6-8
Elaichi powder - a pinch
Ghee - 1 tsp
Condensed Milk - 1 tbsp (optional)

Method:

  • Soak javvarisi for 2-3 hours in water.
  • Drain the water and add 2 cups of water.
  • Pressure cook or cook in pan still javvarisi is cooked.
  • Like it will be soft once cooked.
  • Now strain this and add was in chill water.
  • Heat ghee in pan and fry cashews and set aside.
  • Add jaggery to the pan and little water to this pan.
  • That is jaggery should be immersed in water.
  • Mix it well.
  • Add the javvarisi and mix well.
  • Cook in low flame for 3-4 mins.
  • Add in elaichi powder and mix well.
  • Set aside for 15-20 mins to cool.
  • After it is cooled, now add milk.
  • Milk should be boiled and should be at room temperature while adding.
  • Now add fried cashews and mix well.
  • I added a tbsp of condensed milk and mix well.
  • Serve the yummy payasam.

Apple Donuts/Fritters



Ingredients:

Wheat flour - 1/4 cup
All purpose flour - 3/4 cup
Milk - 1 cup
Salt - 1/8 tsp
Sugar - 2 tbsp
Baking powder - 1/2 tbsp
Vanilla Esc - 1/2 tsp
Oil - 1 tbsp + for frying
Apple - 2
Powdered sugar - 1/4 cup
Cinnamon powder - 1 tsp

Method:
  • In a bowl add flour, salt, sugar and baking powder and mix well.
  • Add in oil, milk and vanilla esc and mix well.
  • Mix and set aside for 5 mins.
  • In a plate add powdered sugar and cinnamon powder.
  • Mix and set aside.
  • Peel apple and slice it to roundels.
  • Remove the center part.
  • I sliced few roundels and few regular slices.
  • Heat oil in pan.
  • Dip apple in batter and fry them in oil.
  • Cook in low flame.
  • Dust them in powdered sugar.
  • Serve hot.

Maggi Bhel Chaat

Ingredients:

Maggi pack - 2
Onion - 1 (fine chop)
Tomato - 1 (deseed, fine chop)
Coriander Leaves - Little (fine chop)
Salt - 1 tsp
Oil - 1 tbsp
Water - 5 tbsp
Lemon juice - 1 tsp

Method:

  • Heat a pan and add oil.
  • Crush and add maggi noodles.
  • Reserve the masala.
  • Fry the noodles for 3-4 mins.
  • Once it changes in light brown color, add water.
  • Cover and turn off the range.
  • Uncooked maggi will be cooked and rest will be crispy.
  • It will take around 2 mins.
  • Now transfer this to a bowl.
  • Add in oinons, tomato and coriander leaves.
  • Add in spice powders, chaat masala and salt and toss well.
  • Squeeze in lime juice and mix gently.
  • Serve immediately.





Veggie Tater Tots


Ingredients:

Potato - 2
Carrot - 1
Maida - 3 tbsp
Corn flour - 1/2 tbsp
Pepper powder - 1/4 tsp
Kashmiri Chilly powder - 1/2 tsp
Garam Masala - a pinch
Coriander leaves - Little (fine chop)
Salt, Oil - As reqd

Method:

  • Grate the potato and carrot and boil them.
  • Strain the water and set aside.
  • Squeeze out excess water.
  • Now add flour, spice powders and salt.
  • Add in coriander leaves and mix well.
  • Make small cylinder shapes and set aside.
  • Heat oil in pan and deep fry these.
  • Serve hot with sauce.

Note:

  • You can make this with only potato too.
  • In that case boil potato and grate the boiled potato.
  • I refrigerated the veggie tater tots before frying.


Butterscotch Frosting #2

Ingredients:

Unsalted butter - 300 g
Icing sugar - 600 g
Butterscotch sauce - 150 g

Method:
  • For icing sugar I used half white and brown sugar.
  • In a bowl add butter and sugar and whisk well.
  • Add in sauce and whisk till you get stiff peak consistency.
  • Use this to frost your cake or cupcakes of your choice.

Coffee Buttercream Frosting

Ingredients:

Unsalted butter - 125 g
Icing sugar - 250 g
Vanilla Esc - 1/8 tsp
Instant coffee powder - 1 1/2 tbsp
Hot water - 3/4 tbsp

Method:

  • In a bowl add coffee powder and hot water.
  • Mix well and set aside to cool.
  • I used brown sugar and make icing sugar.
  • Cream butter and then add sugar and whisk well.
  • Add in coffee mix and esc.
  • Whisk well till you get stiff peak consistency.
  • Use this frosting in cupcakes or cakes of your choice.


Orange Jelly




Ingredients:

Orange juice - 250 ml
Agar agar - 5 g
Vanilla Esc - 1/4 tsp
Water - 1/2 cup
Sugar - 1/4 cup

Method:

  • Cut the oranges and take juices out of it.
  • Now carefully remove the pith out of orange.
  • Scoop the extra skin inside it and place in each muffin case.
  • Refer picture for the same.
  • To the juice add sugar and mix well.
  • Add in esc too.
  • In a pan add washed agar agar and add water to this.
  • Boil it until you see a clear liquid.
  • You can strain this and to this add orange juice.
  • Mix well.
  • And pour immediately to orange cups.
  • Set aside for 30-40 mins.
  • Jelly will set at room temperature.
  • Slice and enjoy.
  • Or refrigerate till you serve.



ChocoMocha Cake #1




Ingredients:

Wheat flour - 86 g
Cocoa powder - 15 g
Brown sugar - 66 g
White sugar - 22 g
Unsalted butter -76 g
Egg - 1
Baking powder -
Baking soda -
Salt - a pinch
Buttermilk - 20 ml
Vanilla Esc - 1/2 tsp
Coffee brewed - 20 ml
Walnuts - 5 (chop)
Chocohips - 2 tbsp

Method:

  • Take 20 ml milk and add 1/2 tsp vinegar or lime juice.
  • Set this aside for 5 mins.
  • It will curdle, this is buttermilk.
  • For coffee decoction, take 20 ml hot water.
  • To this add 1 tsp of instant coffee powder.
  • Mix well and set aside.
  • Cream butter and sugar till light and fluffy.
  • Add the egg and whisk well.
  • Add in esc and mix well.
  • Add in the dry ingredients and fold well.
  • Now add buttermilk and coffee decoction and mix well.
  • Pour this in a grease baking pan.
  • I used the readyto bakeware loaf case.
  • And also two square cupcases.
  • Pour the batter and top it with walnuts and chocochips.
  • Bake this in a preheated oven (OTG) at 170°C for 35-40 mins.
  • Loaf weighed 241 g and square cupcakes weighed 48 g each.




Peerkangaai (Ridgegourd) Thokku #2

Ingredients:

Ridgegourd - 1
Coriander leaves - handful
Urad dal - 3 tsp
Dry red chilly - 3
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Tamrind - small piece
Salt, Oil, Water - Aa reqd

Method:
  • Peel the nerve and skin of ridgegourd.
  • Cut it into small cubes and set aside.
  • Heat oil in pan and add urad dal.
  • Saute this, transfer this to bowl when color changes.
  • Now to the same pan add chilly and saute.
  • Transfer this to same bowl.
  • Again to the same pan add tamrind piece and coriander leaves.
  • Now transfer this to same bowl.
  • Now add oil to pan and add diced ridgegaourd.
  • Saute till it shrinks in size.
  • Cook in low flame and transfer to bowl.
  • Add salt and blend everything to a fine paste.
  • Heat oil in pan and add mustard seeds and cumin seeds.
  • Cook in low flame.
  • Add the grinded paste and mix well.
  • Cook in low flame for 6-8 mins.
  • Serve thokku with idly or dosa.

Masala Pav


Ingredients:

Homemade pav buns - 4-5
Onion - 1 (fine chop)
Green Capsicum - 1 (fine chop)
Kashmiri Chilly powder - 2 tsp
Ginger garlic paste - 1 tbsp
Pav Bhaji Masala - 1 tbsp
Lemon juice - 1 tbsp
Cumin powder - 1/2 tsp
Unsalted butter - 2 tbsp
Salt - As reqd
Coriander Leaves - Little (fine chop)

Method:

  • Cut the pav buns to small cubes.
  • Heat butter in pan and add onion (reserve a tbsp) and saute for a while.
  • Cook in low flame.
  • Add in ginger garlic paste and saute for a while.
  • Add in capsicum, cumin powder and mix well.
  • Add in red chilly powder and salt and mix well..
  • Finally add pav bhaji masala and mix well.
  • Add the diced pav buns and toss well.
  • Add in lemon juice and mix well.
  • Garnish with coriander leaves and chopped onions.
  • Serve hot.


Rice Flour Chiffon Cake







Ingredients:

Rice flour - 65 g
Sugar - 50 g
Milk - 60 g
Oil - 25 ml
Baking powder - 1/4 tsp
Egg - 3
Vanilla Esc - 1 tsp

Method:

  • Separate egg whites and yellow part in two bowls.
  • Whip the egg whites till stiff peak consistency.
  • If we invert the bowl, it should not fall off.
  • Now in other bowl take yellow part of egg.
  • Add sugar and whisk well.
  • Add in oil and whisk well.
  • Add in flour, baking powder and esc and whisk well.
  • Now add egg whites in parts and fold gently.
  • Pour this in a greased 6 inch pan.
  • Bake this in a preheated oven (OTG) at 170 for 20-25 mins.
  • Yields 6-8 pieces.
  • Weighed around 285 g.


Thandai Nut Cookies

Ingredients:

Wheat flour - 100 g
Oats - 25 g (powdered)
Thandai Masala - 3-4 tbsp
Salt - a pinch
Milk powder - 2 tbsp
Unsalted butter - 56 g
Brown sugar - 50 g
Milk - 1-2 tbsp
Almonds - 4 tbsp (chopped)
Cashews - 4 tbsp (chopped)
Baking powder - a pinch

Method:

  • In a bowl add butter and sugar and cream it.
  • It should be pale in color.
  • Now add the dry ingredients and fold it.
  • Add in milk accordingly and gather the dough.
  • Make desired cookie shapes and arrange them in a lined baking tray.
  • Top them with chopped almonds and cashews.
  • Bake them in a preheated oven (OTG) at 170°C for 16-18 mins.
  • Yields around 18 cookies.

Thandai Cake




Ingredients:

Wheat flour - 1 1/4 cups or 120 g
Milk powder - 1 tbsp + 1 3/4 tsp
Thandai Masala - 1 tbsp + 1 tsp
Baking powder - 1 1/4 tsp
Baking soda - Little less than 1/2 tsp
Salt - a pinch
Curd - 1/4 cup
Melted Butter - Little less than 1/2 cup
Brown sugar - 3/4 cup or 82 g
Vanilla esc - 1/2 tsp
Gulkhand - 1/2 tbsp
Milk - 1/2 cup

Method:

  • In a bowl add curd and sugar and whisk well.
  • Add melted and cooled butter, gulkhand, esc and mix well.
  • Now add flour, baking powder, baking soda, thandai masala and salt.
  • Add in milk and mix well.
  • Pour the batter in greased pan and dap it.
  • Top it with sliced pistachios and press gently with butter paper.
  • Bake this in a preheated oven (OTG) at 160°C for 45-50 mins.


Thandai


Ingredients:

Milk - 1/2 L
Sugar - 1 1/2 tbsp
Saffron strands - Little
Rose Esc - 2 drops
Thandai Masala - 1/4 cup

Method:

  • Boil milk and set aside.
  • Take a tbsp of warm milk and soak saffron strands.
  • Add sugar and mix well to the boiled milk.
  • Set this aside to cool.
  • Now add thandai masala to the milk and mix well.
  • Set aside for 15-20 mins.
  • After the desired time strain the milk.
  • Now add saffron milk and rose esc and mix well.
  • Refrigerate it.
  • While serving garnish with pistas and few saffron strands.

Thandai Masala


Ingredients:

Almonds - 12
Cashew- 12
Pista - 15
Melon seeds -  2 tsp
Pepper corns - 14
Green Elaichi - 9
Fennel seeds - 2 tsp
Sugar - 1-2 tbsp
Poppy seeds - 2 tsp

Method:

  • Add all ingredients to a blender.
  • Blend them at short intervals (pulse mode).
  • As nuts will leave oil, be careful while blending.
  • Store it in an airtight container.
  • In case if the mixture is too lumpy, add 1-2 tbsp of milk powder.


Podi Omlette Uthapam

Ingredients:

Egg - 3
Onion - 1 (fine chop)
Curry leaves - Little (fine chop)
Turmeric powder - 1/2 tsp
Pepper powder - 1/4 tsp
Graram masala - 1/4 tsp
Idly podi - 4 tbsp
Dosa batter - 1 cup
Salt - Little
Oil - As reqd

Method:

  • In a bowl break the eggs.
  • Whisk it well.
  • Add in turmeric powder, pepper powder.
  • Add in little salt and garam masala and whisk well.
  • Now add dosa batter,chopped onion and curry leaves.
  • Mix this gradually such the everything is blended.
  • Now heat a tawa and drizzle oil.'
  • Pour a laddle of batter and spread like uthapam.
  • Cook in low flame.
  • Sprinkle idly podi and cover and cook.
  • Serve hot.

Watermelon Juice



Ingredients:

WaterMelon - 2 cups
Sugar - 2 tbsp
Water - As reqd

Method:

  • Cut the watermelon and remove seeds and set aside.
  • Now add these pieces to blender.
  • Add sugar and blend it.
  • Transfer this to a bowl.
  • Add required water and mix well.
  • Chill out with this juice.


Note:

  • Sugar is optional, if melon is sweet you can skip this.
  • You can also skip water and add extra melon pieces to make it more healthier.

Crispy Baby Corn Manchurian - Restaurant Style

Ingredients:

Baby corn - 200 g
Maida - 3 tbsp
Rice flour - 3 tbsp
Corn flour - 3 tbsp
White pepper powder - 1/2 tsp
Ginger garlic paste  - 1/2 tsp
Turmeric powder - 1/4 tsp
Oil, Salt - As reqd

For Manchurian:

Spring onion white - 2 tbsp (fine chop)
Spring onion green - 2 tbsp (fine chop)
Garlic - 3 tbsp (fine chop)
Black pepper - 1/2 tsp
Green chilly sauce - 1 tsp
Red Chilly sauce - 2 tsp
Soya sauce  - 1/2 tsp
Sugar - a pinch
Vinegar - 1/2 tsp
Corn flour - 1/2 tsp
White sesame seeds - 1 tsp
Water, Oil, Salt - As reqd

Method:

  • Boil water in a pan and add cut corns to it.
  • Let it boil for 2-3 mins.
  • Strain this and set aside.
  • In a bowl add in maida, corn flour and rice flour.
  • Add in white pepper powder, turmeric powder and ginger garlic paste.
  • Now add salt and mix up.
  • Add the boiled corns to this and mix well.
  • The corns should we coated well.
  • Now just sprinkle water little by little.
  • At this point the corn should have a thick coating.
  • Heat oil in a pan and fry these corns.
  • You can serve this as such.
  • But we are making manchurian with this.
  • Now heat oil in pan and add spring onion whites and little spring onion greens.
  • Add in garlic and saute for a while.
  • Now add in green chilly sauce, red chilly sauce, black pepper powder and salt.
  • Now add soya sauce and sugar and mix well.
  • Cook in low flame.
  • Mix corn flour with little water and add it.
  • Mix well and cook for a min.
  • Add the corn pieces and toss well.
  • Add in spring onion greens and mix well.
  • Transfer to serving plate and sprinkle sesame seeds.
  • Serve hot.

Poori Masala #2

Ingredients:

Onion - 1 (fine chop)
Tomato - 1 (fine chop)
Potato - 1 (Small dices)\
Green peas - 1/4 cup
Ginger garlic paste - 1 tsp
Turmeric powder - 1/4 tsp
Pav bhaji masala - 1 1/2 tsp
Cumin powder - 1/2 tsp
Mustard seeds - 1 tsp
Curry Leaves - a sprig
Coriander leaves - Little (fine chop)
Water, Oil, Salt - As reqd

Method:


  • Boil potato and peas and set aside.
  • Heat oil in pan and add mustard seeds.
  • Add in curry leaves and then onion.
  • Saute for a while.
  • Add in ginger garlic paste and saute.
  • Add in tomato and cook till it turns mushy.
  • Now add in spice powders, salt and water.
  • Mix well.
  • Add in peas and mashed potatoes.
  • Mix well.
  • Add in rice flour mix after 3 mins.
  • Gravy will thicken.
  • Garnish with coriander leaves.
  • Serve with poori.

Cheesy Garlic Sandwich




Ingredients:

Bread Slices - As Reqd

Oregano seasoning:

Garlic powder - 4 tbsp
Basil - 1 tbsp
Black pepper powder - 1 tsp
Kashmiri Red chilly powder - 2 tbsp
Rosemary - 1 tsp
Salt - As reqd

Garlic Cheese Filling:

Cheese - 100 g (grated)
Capsicum - 1 (fine chop)
Garlic - 3 tbsp (grate or fine chop)
Green chilly - 2 tbsp (fine chop) or Green Chilly sauce - 1 tbsp
Oreagano seasoning - 1 tbsp

Garlic butter :
Butter - 1/2 cup (melted)
Garlic - 4 tbsp (fine chop)
Fresh coriander leaves - 1 tbsp (fine chop)

Method:

  • In a bowl add items under "oregano seasoning". 
  • Toss this well such that everything is combined.
  • Set the seasoning aside.
  • In other bowl add items under "garlic cheese filling".
  • Mix this and set aside.
  • In other bowl add items under "garlic butter".
  • Mix well and set aside.
  • Now take a bread and spread the filling and cover with other bread.
  • Repeat the same with other breads too.
  • Now heat a pan and cook in low flame.
  • Add a tbsp of garlic butter and sprinkle oregano seasoning.
  • Place the bread pieces.
  • Brush the top with garlic butter and sprinkle seasoning.
  • Flip and cook both sides.
  • Serve hot.




Wheat Paneer Makhani Pizza








Ingredients:

Makhani Sauce - 1/2 cup or as reqd

For Topping:

Onion - 1 (small dices)
Green Capsicum - 1 (small dices)
Yellow Capsicum - 1 (small dices)
Red Capsicum - 1 (small dices)
Grated Cheese -  a big block

Method:
  • Take the pizza dough and divide it.
  • I made one regular pizza shape and a big square shape.
  • Roll out the dough and place it in greased pan.
  • Prick holes all over (Refer picture).
  • Now spread a layer of  makhani sauce.
  • Now top with little grated cheese.
  • Top with veggies and paneer tikka.
  • Top this with grated cheese.
  • Bake this in a preheated oven (OTG) at 200°C for 10-15 mins.
  • Or until the cheese melts.
