KothamirVaenkayaKoora


Ingredients:

Brinjal - 6
Onion - 1(finely chopped)
Tomato - 1(finely chopped)
Green chilly - 1(increase or decrease as to your taste)
Cashews - 5
Ginger garlic paste - 1 tbsp
Turmeric powder - 1 tsp
Coriander powder - 1 tbsp
Red chilly powder - 1 1/2 tbsp
Mustard seeds - 1tbsp
Coriander leaves - little(handful)
Salt,Water, oil - As reqd

Method:

  • Slit the brinjals and soak it in water and leave it
  • Heat required oil to fry the brinjals.
  • Drain the water and nicely wipe it with tissue.
  • Now fry these and keep aside.
  • In other pan add oil and then add mustard seeds.
  • Once it splutters add the onion and saute.
  • Meanwhile grind corriander leaves, chilly and cashew to a paste and keep aside.
  • Once onion is nicely saute add ginger garlic paste and saute till raw smell goes.
  • Now add tomato and saute till it leaves oil.
  • Then add turmeric, corriander and chilly powder and mix well.
  • Saute till raw smell goes. Add salt.
  • Now add the grinded paste and required water and let it boil.
  • Finally add the fried brinjals and sprinkle coriander leaves.
Note:
If there is water in brinjal it will splutter so remove water before frying.
