Carrot Chutney


Ingredients:

Carrots - 2 (diced)
Onion - 1 (diced)
Dry Red chilly - 3
Channa dal - 1 tbsp
Ginger - small piece
Tamrind - small piece
Mustard seeds - 1 tsp
Cumin seeds - 1/2 tsp
Salt, oil, water - As reqd

Method:

  • Heat little oil in pan and add channa dal.
  • Once color changes transfer this to a plate.
  • To the same pan add in dry red chillies and saute.
  • Add the tamrind piece and saute for few seconds.
  • Transfer this to plate.
  • Now add little oil and add diced onions and saute.
  • Add in diced carrots and saute well.
  • Add the ginger piece and saute.
  • Cook in low flame for 2-3 mins.
  • Now transfer this to plate.
  • Allow it to cool.
  • Add salt and blend this to a fine paste.
  • Add little water while grinding.
  • Heat oil in pan and add mustard seeds and cumin seeds.
  • Add the grinded paste and cook in low flame for 2-3 mins.
  • Goes good with idly/dosa.
