Candied Orange Peel Cake

Ingredients:

All purpose flour - 2 cup
Baking powder - 3/4 tsp
Salt - 1/4 tsp
Unsalted butter - 170 g
Sugar - 1 1/4 cup
Orange Zest - 1 tsp
Thick Curd - 1/3 cup
Milk - 1/2 cup
Egg - 3
Vanilla esc - 1 tbsp
Candied Orange peel - 1/2 cup (fine Chop)

Method:
  • In a bowl add sugar and butter and cream well.
  • To this add esc and mix well.
  • Now add flour, salt and baking powder.
  • Add orange zest and egg (one at a time) and whisk well.
  • Add in thick curd, milk and fold well.
  • Finally add the chopped candied orange peel.
  • Pour this in a greased loaf pan or cake pan.
  • Bake this in a preheated oven at 180°C for 40-45 mins.


Note:

  • Once the cake is cooled you can pour the Orange flvoured glazing to add extra flavour.
  • To make this, in a bowl add 1 cup of icing sugar.
  • To this add 3 tbsp of fresh orange juice.
  • Mix this well till you desired consistency(Not too thin nor too thick).
