Cranberry Pista Biscotti

Sliced for 2nd baking

For first baking
Ingredients:
All purpose flour - 1 cup
Wheat flour - 1/4 cup
Baking powder - 1 tsp
Sugar - 3/4 cup
Salt - 1/4 tsp
Vanilla esc - 2 tsp
Almond esc - 1/2 tsp
Oil - 1/4 cup
Egg - 2
Dried Cranberries - 1/2 cup (chop)
Pista - 1 cup

Method:
  • In a bowl add in flour, baking powder and salt and set aside.
  • In other bowl add oil and sugar and mix well.
  • Add in vanilla esc and almond esc and mix well.
  • Add one egg at a time and mix well.
  • Now add the dry ingredients and mix well.
  • Add the chopped cranberry and pista and mix well.
  • The dough will be sticky.
  • Dip your fingers in chill water and divide the dough.
  • Place the dough in greased and lined baking tray and shape it to a log.
  • Bake this in a preheated oven at 180°C and bake for 20-22 mins.
  • Remove from oven and let it completely cool.
  • Once cool slice it off and place on wire rack.
  • Bake this in a preheated oven at 180°C for 10-12 mins.
  • Healthy Cranberry Pista biscotti is ready.


Note:
  • I shaped it in rectangle, it is advisable to shape it like a log.
  • Don't slice immediately, let it cool and slice off.
  • Do the second baking till biscotti's are crisp.
