All purpose flour - 1 cup
Wheat flour - 1/4 cup
Baking powder - 1 tsp
Sugar - 3/4 cup
Salt - 1/4 tsp
Vanilla esc - 2 tsp
Almond esc - 1/2 tsp
Oil - 1/4 cup
Egg - 2
Dried Cranberries - 1/2 cup (chop)
Pista - 1 cup
Method:
- In a bowl add in flour, baking powder and salt and set aside.
- In other bowl add oil and sugar and mix well.
- Add in vanilla esc and almond esc and mix well.
- Add one egg at a time and mix well.
- Now add the dry ingredients and mix well.
- Add the chopped cranberry and pista and mix well.
- The dough will be sticky.
- Dip your fingers in chill water and divide the dough.
- Place the dough in greased and lined baking tray and shape it to a log.
- Bake this in a preheated oven at 180°C and bake for 20-22 mins.
- Remove from oven and let it completely cool.
- Once cool slice it off and place on wire rack.
- Bake this in a preheated oven at 180°C for 10-12 mins.
- Healthy Cranberry Pista biscotti is ready.
Note:
- I shaped it in rectangle, it is advisable to shape it like a log.
- Don't slice immediately, let it cool and slice off.
- Do the second baking till biscotti's are crisp.
