Ingredients:
All purpose flour - 1 cup
Khoya - 1/4 cup
Fennel seeds powder - 1/4 tsp
Elaichi powder - 1/4 tsp
Salt - pinch
Ghee - 2 tbsp
Sugar Syrup:
Sugar - 1/4 cup
Water - 1/8 cup
Rabadi:
Milk - 2 cup
Elaichi powder - 1/2 tsp
Saffron strands - 4-5
Pista - 2 tbsp(chopped)
Method:
- In a bowl boil milk.
- Once it starts to boil, low the flame and add sugar and mix well.
- Keep stirring and do scrape the sides and mix well.
- Add in saffron strands and boil till it is of creamy consistency.
- Once done add elaichi powder and pistas and mix well.
- Transfer this to a bowl.
- In a pan add sugar and water and boil.
- Keep boiling till you get a sticky.
- Once done place this bowl in warm water.
- Now take a bowl add flour, khoya, fennel seeds and elaichi powder.
- Add salt and ghee and mix well.
- Add water little by little and form a thick batter(like idly batter).
- Heat oil in pan.
- Take a laddle of battle and pour in this oil.
- Flip and cook till golden brown.
- Add this fried malpuas to sugar syrup and transfer to a plate.
- Top it with rabadi and serve.
Note:
You can chill rabadi or serve hot too.
