Orange Cupcakes #1


Ingredients:
Wheat flour - 140g
Corn flour - 1 tbsp
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Orange Zest - 1 tbsp
Oil - 60 ml
Orange juice - 240 ml
Sugar - 100g

Method:
  • In a bowl add flour, baking powder and baking soda and mix well.
  • Take orange and zest them.
  • Make fresh orange juice and set aside.
  • In other bowl add oil and sugar and mix well.
  • Add orange zest and juice and mix well.
  • Once the sugar is melted add in flour and mix well.
  • Pour this batter in lined muffin tray.
  • Bake this in a preheated oven(OTG) at 180°C for 20-25 mins.


Eggless Mawa Cake #1


Ingredients:
All purpose flour - 1 cup
Wheat flour - 1 cup
Mawa - 140 g (crumbled 1 cup)
Milk - 1 cup
Fresh cream - 4 tbsp
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Unsalted butter - 150 g
Sugar - 1 cup
Cardamon powder - 1 tsp

Method:

  • In a bowl add butter and sugar and cream well.
  • Add crumbled mawa and mix well.
  • Add flour,baking soda, baking powder and mix well.
  • Use electric beater and beat this.
  • Add in milk and cream.
  • Add in cardamon powder.
  • Grease a pan and add in the batter.
  • Top with sliced almonds.
  • Bake this in preheated oven(OTG) at 180 °C for 30-35 mins.

Note:

  • you can make cupcakes with same batter.
  • But bake only for 18-20 mins.





Choco Vanilla IceCream Cake



Ingredients:

Chocolate ice-cream- 1 cup
Vanilla ice cream - 1 cup
All purpose flour -1 cup
Sugar - 1/4 cups + 1/4 cup
Baking powder - 2 tsp
Salt - a pinch
Chocolate Sauce - 2 tbsp
Sprinklers - 1 tbsp

Method:

  • In a bowl take ice-cream and set aside for few minutes to melt a bit.
  • Add in flour, salt and baking powder.
  • Mix this nicely.
  • The batter will be thick.
  • If its too thick add little milk.
  • Grease a pan and place butter paper.
  • Transfer the batter to this and level it.
  • Add chocolate sauce and add sprinklers.
  • Bake this in a preheated oven(OTG) at 180°C for 20-25 mins.


Stufffed Aloo Kulcha

Ingredients:

Wheat Flour - 2 cup
Ghee - 2 tbsp
Salt - As reqd
Sugar - 1 tbsp
Coriander Leaves - Little
Water - As reqd
Curd - 3 tbsp
Baking soda - 1/4 tsp
Baking powder - 1/2 tsp
Kalonji Seeds - 1 tbsp
Milk - 1/2 cup

Stuffing:
Potato - 2 (boiled and mashed)
Red chilly powder - 1/2 tsp
Garam masala - 1/2 tsp
Amchur powder- 1/4 tsp
Salt - As reqd

Method:




  • Take flour in a bowl and add salt  and sugar.
  • Then add baking soda, baking powder and mix well.
  • Add curd, milk and ghee and mix well.
  • Add water little by little and make a dough.
  • Set this aside for an hour.
  • In a bowl add items under stuffing and mix well.
  • Take a small ball and roll it.
  • Place a spoon of stuffing and seal it.
  • Sprinkle kalonji seeds and little coriander leaves.
  • Keep this downwards and roll it.
  • Apply water and place this side in tawa and cook for a min.
  • Once it bubbles up flip the pan and show in flame.
  • Once done apply butter and serve.
  • Refer video for the same.

Kulcha


Ingredients:

Wheat Flour - 1 1/2 cup
Maida - 1/2 cup
Ghee - 2 tbsp
Salt - As reqd
Sugar - 1 tbsp
Coriander Leaves - Little
Water - As reqd
Curd - 3 tbsp
Baking soda - 1/4 tsp
Baking powder - 1/2 tsp
Kalonji Seeds - 1 tbsp
Milk - 1/2 cup

Method:

  • Take flour in a bowl and add salt  and sugar.
  • Then add baking soda, baking powder and mix well.
  • Add curd, milk and ghee and mix well.
  • Add water little by little and make a dough.
  • Set this aside for an hour.
  • Take a small ball and sprinkle kalonji seeds and little coriander leaves.
  • Keep this downwards and roll it.
  • Apply water and place this side in tawa and cook for a min.
  • Once it bubbles up flip the pan and show in flame.
  • Once done apply butter and serve.
  • Refer video for the same.


Coffee Walnuts Cake

Ingredients:

All purpose​ flour -  2 1/2 cups
Sugar - 2 cup
Instant coffee - 2 - 2 1/2 tbsp (dissolved in 4 tbsp water)
Chocolate chips  -  1 tbsp
Cocoa powder - 1 tbsp
Baking soda -  1 + 1/2 tsp
Baking powder -  1/2 tsp
Warm milk  - 1 1/2 cup
Oil - 1/2 cup
Melted butter -  2 tbsp
Apple cider vinegar  2 tsp 
Vanilla esc -  1  tsp
Chopped walnuts -  3/4 cup(app)

Method:
  • Grease your  cake tin and dust with flour and keep it aside. 
  • Sift all purpose flour, cocoa powder, baking soda, baking powder 4 - 5 times. 
  • In a mixing bowl, add sugar and hot milk and beat with hand mixer till sugar is dissolved.
  • Add oil and melted butter and beat until evenly mixed.
  • Now add coffee decoction,vanilla essence, apple cider vinegar and just mix it evenly. 
  • Add the flour mix and fold in evenly.
  • Now mix chocolate chips and mix.
  •  Pour the mixture into the prepared cake tin. Sprinkle chopped walnuts all over it.
  •  Place the cake tin in preheated oven (OTG) at 180°C and bake for 40-45 mins.
  •  Leave the cake to cool down completely and then slice and enjoy.

Chocoate Muffin - Eggless

Ingredients:

All purpose flour - 3/4 cup
Sugar - 1/2 cup
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Cocoa powder - 3 tbsp
Chill Water - 1/2 cup
Oil - 1/4 cup
Vanilla Esc - 1 tsp
Vinegar - 1 tsp
White Chocolate Chips - 1 tbsp

Method:

  • In a bowl add sugar and chill water.
  • Then add oil, esc and vinegar and mix till sugar is melted.
  • Now add flour, baking soda, salt and cocoa powder.
  • Mix well.
  • Pour the batter in lined muffin tray.
  • Top with white chocolate chips.
  • Bake this in a preheated oven(OTG) at 190°C for 18-20 mins.

Baugette Bread

B4 Baking
Ingredients:

Wheat flour - 1 1/4 cup
Maida/Rava - 1/3 cup
Salt - As reqd
Sugar - 1 tsp
Dry Yeast - 3/4 tsp
Milk powder - 1 tbsp
Luke warm water + milk - 1/2 cup + 2tbsp
Olive oil - 1 tbsp

Method:

  • In a bowl add yeast, sugar and warm milk and set aside.
  • In other bowl add flour, maida, salt, milk powder and mix well.
  • Add in oil.
  • Once yeast is activated add to the flour mixture and knead it.
  • Make a soft dough and set aside for an hour to proof.
  • After an hour punch the dough and roll it to a rectangle.
  • Then fold and roll it rightly and make a log.
  • Slightly pull at the ends and make a loaf shape as in pic.
  • Use a knife and make sharp incisions.
  • Line a baking tray with butter paper and dust with rava.
  • Place the loaf ad give a milk wash and set aside for 30 mins.
  • Once it doubles in size, brush the top again with milk.
  • Bake this in a preheated oven(OTG) at 180°C for 20-22 mins.
  • Now take the tray out and give a milk wash.
  • Now increase the temperature to 200°C and bake for 3-4 mins.
  • Once done, apply butter and allow it to cool.
  • Then slice and enjoy.

Banana Nuts Muffin

Ingredients:
All purpose flour - 3/4 cup
Sugar - 1/2 cup
Baking soda - 1/2 tsp
Baking powder - 1/2 tsp
Banana - 4-5(ripen, mash)
Oil - 1/4 cup
Vanilla Esc - 1 tsp
Walnuts - 2 tbsp(chopped)
Almonds - 2 tbsp(chopped)

Method:

  • In a bowl peel skin and add bananas.
  • Use fork and mash it.
  • Add oil, sugar and esc and mix well.
  • Add in flour, baking soda, baking powder and mix well.
  • Add in chopped nuts and mix well.
  • Line the muffin with liners and add batter.
  • Bake this in a preheated oven at 190°C for 20-25 mins.


Dates Nuts Cake



Ingredients:
Wheat flour - 1 cup
Vanilla Custard Powder - 1 1⁄4 tbsp
Baking powder -  1⁄2 tsp
Baking soda -1⁄4 tsp
Salt - pinch
Sugar - 1/3 cup
Oil - 1/4 cup
Soya Milk(Cchocolate flavour) - 1⁄2 cup
Orange juice - 1⁄2 Cup
Instant Coffee = 1 1⁄4 tsp ( Mix it with 1 1⁄2 tbsp in warm water and make decoction)
Vanilla Esc - 3⁄4 tsp
Seedless Dates - 1⁄2 cup(chopped)
Walnuts - 1⁄4 cup(chopped)

Method:

  • In a bowl add flour, custard powder, baking soda and powder and salt and mix well.
  • In other bowl take soya milk and add sugar and mix well.
  • Now add orange juice, oil and decoction and mix gently.
  • Add vanilla esc and mix well.
  • Add chopped dates to flour mix and then add wet ingredients.
  • Grease a pan with oil and dust with flour.
  • Pour the batter in.
  • Top with chopped dates and walnut.
  • Bake this in a preheated oven(OTG) at 180°C for 20-25mins.


Note:
  • I used regular milk and add chocolate syrup to it.
  • You can use homemade orange juice or store bought too.

Millagai Chutney

Ingredients:

Onion - 2
Dry red chilly - 4
Garlic - 3-4
Tamrind - small piece
Mustard seeds - 1 tsp
Salt, Oil, Water - As reqd

Method:


  • Soak red chillies in warm water for a while.
  • Then drain the water and add garlic and blend this.
  • Then add onion, tamrind and salt and blend it.
  • If needed add little water and blend.
  • Heat oil in pan and add mustard seeds.
  • Add this to chutney and serve.


Oats Rava Dosai

Ingredients:

Oats - 1 cup
Rice flour - 1/4 cup
Rava - 1/4 cup
Cumin seeds - 1 tsp
Onion - 1 (fine chop)
Green Chilly - 1
Pepper Corns - 3-4(crushed)
Oil,Salt, Water - As reqd

Method:

  • Dry roast oats for few mins and let it cool.
  • Blend it and set aside.
  • Add rice flour, rava and salt and mix well.
  • Heat oil in pan and add cumin seeds, pepper corns and saute.
  • Then add curry leaves, chilly and onion and saute well.
  • Add this flour mix and mix well.
  • Add water and batter should be thin.
  • Heat a tawa and pour a laddle of batter same as we for rava dosa.
  • Serve with spicy chutney.

Quick Godhumai Rava Idly


Ingredients:

Wheat Rava - 1 cup
Curd - 1/2 cup
Carrot - 1 (grated)
Green Chilly - 1(fine chopped, remove seeds)
Hing - Little
Coriander Leaves - Little (chopped)
Curry Leaves - Little
Mustard seeds - 1 tsp
Urad dal - 1 tsp or Cashews - 5-6(chopped)
Eno Salt - 3/4 tsp
Salt, Ghee, Water - As reqd

Method:


  • Heat ghee in pan and add wheat godhumai and dry roast it for 5-6 mins
  • Transfer this to bowl,wash in water and drain and set aside.
  • Add ghee/oil in pan and add mustard, urad or cashew, carrot.
  • Saute this for a while and add it to wheat rava and set aside.
  • Add sour curd, salt and mix well.
  • It will be thick, add little water(idly batter consistency) and mix well.
  • Set this aside for 15-20 mins.
  • Add eno salt/baking soda and mix well.
  • Grease idly plates and scoop this batter.
  • Steam for 12-15 mins and serve with chutney of your choice.


Tomato Chutney - Restaurant Style


Ingredients:

Tomato - 2
Onion - 1
Garlic flakes - 4-5
Red Chilly powder - 1 tsp
Coriander Leaves - Handful(fine chop)
Mustard seeds - 1 tsp
Salt, Oil, Water - As reqd

Method:

  • Heat oil in pan and add diced onion, tomato and garlic.
  • Saute this for a while.
  • Let it cool and blend and set aside.
  • In a pan heat oil and add mustard seeds.
  • Once it splutters, add the grinded paste.
  • Cook in low flame.
  • Add chilly powder,salt and coriander leaves.
  • Add water if needed.
  • Cook in low flame for 3-4 mins.
  • Restaurant style chutney ready.

Madurai Urulai Pottalam (Potato Podimas)


Ingredients:

Potato - 4 (boiled)
Onion - 1 (fine chopped)
Garlic flakes - 3-4(fine chopped)
Red chilly powder - 1 tbsp
Garam Masala powder -1 tsp
Fennel powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Besan Flour - 1 tbsp
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Dry red chilly - 2
Curry Leaves - Little
Salt, Oil, Water - As reqd

Method:


  • In a bowl add salt, turmeric and potatoes and boil it.
  • Strain water and mash the potatoes roughly and set aside.
  • Heat oil in pan and add mustard seeds and urad dal.
  • Add curry leaves, dry red chilly, onion and saute for a while.
  • Add garlic and saute for a while.
  • Now add potatoes and mix well and cook in low flame for few mins.
  • Then add all spice powders and mix well.
  • Add little oil and cook for few mins.
  • Add the besan flour and mix nicely.
  • Cook this in low flame for 4 mins.
  • Spicy urulai potalam is ready.

Quick Rasmalai



Ingredients:

Condensed Milk - 1/4 cup
Milk - 1/2 cup
Chopped Nuts - 2 tbsp(pista and badam)
MTR rasagullas - 5-6
Saffron strands - 4

Method:
  • In a bowl add condensed milk and milk and mix well.
  • Add saffron strands in a tbsp of milk and set aside.
  • Heat a pan and add condensed milk and milk mixture.
  • Cook in low flame for few mins.
  • Add saffron milk and once it thickens add the nuts.
  • Transfer this to a bowl.
  • You rabadi is ready.
  • Take the rasagullas and squeeze a bit(use 2 spoons/ lemon squeezer).
  • Add these to serving bowls.
  • Top with rabadi.
  • Quick and yummy rasamalai is ready.

Bread Podimas


Ingredients:

Bread - 5-6 slices
Onion - 1(chopped)
Tomato - 1/2 (deseed)
Egg - 1
Turmeric powder - a pinch
Red Chilly powder - 1 tsp
Garam Masala powder - 1/2 tsp
Coriander powder - 1 tsp
Curry Leaves - Little
Oil,Salt - As reqd

Method:
  • Roughly cut the bread pieces and set aside.
  • Heat oil in pan and add curry leaves.
  • Add onion and saute for a while.
  • Then add tomato and cook till it turns mushy.
  • Add all masala powders and reqd salt and mix well till raw smell goes.
  • Now break and egg and to this and keep stirring till is blends nicely.
  • Cook in low flame.
  • Make a well in center and add oil and then crushed bread pieces.
  • Keep stirring until u get the crumbs texture.
  • Mix everything and cook for few mins.

Note:
I used my homemade bread for this.

Channa Masala #3 - Restaurant Style


Ingredients:

Channa - 1 cup
Onion - 3
Tomato - 2
Ginger Garlic Paste -1 tbsp 
Cumin seeds - 1 tbsp
Coriander powder - 1 tbsp
Turmeric powder - 1/2 + 1/2 tsp
Chilly Powder - 2 tsp 
Kasoori Methi - 1/2 tsp 
Ghee - 2 tbsp
Hing - 1/2 tsp 
Oil - 2 tbsp
Salt - As reqd

Method:
  • Soak channa overnight and then add turmeric, hing and pressure cook for 4-5 whistles.
  • In a pressure cooker add tomatoes and onion with 1 cup water and pressure cook for 3 whistles.
  • Once done add them(onion and tomaotes) to a mixer jar and blend to a smooth puree.
  • Heat a pan on medium flame add ghee and oil once the oil is hot add cumin allow to splutter a bit.
  • Add ginger and garlic paste and fry.
  • Add the dry ingredients chilly powder, coriander powder, garam masala and turmeric powder.
  • Fry a bit once the spices foam up add the prepared tomato puree and mix.
  • Cover and allow the oil to surface.
  • Add the cooked channa and add water if needed.
  • Add reqd salt and cover and cook for few mins.

White Bread #2

First Proofing

Dough

Ingredients:

All purpose flour - 4 cups
Salt - 1 3/4 tsp
Sugar - 2 tbsp
Warm Milk - 1 1/2 cup
Dry yeast - 2 1/2 tsp
Butter or oil - 2 tbsp(use melted butter)
Milk powder - 1/3 cup

Method:

  • In a bowl add sugar, yeast and little warm milk and set aside.
  • In other bowl add flour, salt and milk powder and mix well.
  • Once the yeast is activated, add it to flour mixture and mix it.
  • Add rest of the milk and mix it with spatula.
  • Finally add the butter and mix to form a non-sticky dough(app 10 mins kneading).
  • Grease a bowl and place this dough and do grease the dough too.
  • It will take an hour to proof.
  • Once it is doubled in size, remove the dough and punch it.
  • Roll up tightly like a log and place in greased loaf pan.
  • Set it aside for second proofing(app 30-45 mins).
  • Once it has doubled, brush the top with milk/oil/butter.
  • Bake this in a preheated oven (OTG) at 200°C for 25-30 mins.
  • Once baked brush the top with butter.
  • Slice and enjoy your homemade bread.


Note:
  • This recipe needs preheating for 15 mins.
  • You can use honey instead of sugar.
  • Also you can try the same with wheat flour.

French Apple Cake

Ingredients:
All purpose flour - 3/4 cup
Baking powder - 3/4 tsp
Salt - a pinch
Apples - 4 (if you can, choose 4 different kinds)
Eggs - 2
Sugar - 3/4 cup
Dark rum - 3 tbsp
Vanilla esc - 1/2 tsp
Unsalted butter - 8 tbsp(melted and cooled)


Method:
  • Generously butter an 8-inch springform pan and put it on a baking sheet lined with a silicone baking mat or parchment paper and put the springform on it.
  • Whisk the flour, baking powder, and salt together in small bowl.
  • Peel the apples, cut them in half and remove the cores. Cut the apples into 1- to 2-inch chunks.
  • In a medium bowl, beat the eggs with a whisk until they're foamy. 
  • Pour in the sugar and whisk for a minute or so to blend. Whisk in the rum and vanilla.
  • Whisk in half the flour and when it is incorporated, add half the melted butter, then flour.
  • Add remaining butter, mixing gently after each addition so that you have a smooth, rather thick batter. Switch to a rubber spatula and fold in the apples, turning the fruit so that it's coated with batter. Scrape the mix into the pan and poke it around a little with the spatula so that it's even.
  • Bake in a preheated oven(OTG) at 180°C for 50-60 mins.
  • Transfer to a cooling rack and let rest for 5 minutes.
  • Lovely french apple cake is ready.
Note:
You can skip using rum, instead can add little cinnamon powder.

Black Channa Masala/Gravy


Ingredients:

Konda Kadalai - 1 cup
Tomato - 3 (small)
Red Chilly powder -1 tsp
Cumin seeds powder - 1 tsp
Garam masala powder - 1 tsp
Dry mango powder - 1/2 tsp
Fresh Cream - 1 tbsp
Salt, Oil, Water - As reqd

Method:


  • Soak channa overnight, add salt and pressure cook for 6 whistles and set aside.
  • Blend the tomatoes and make puree.
  • Blend 3 tbsp of boiled channa and set aside.
  • Heat oil in pan and add tomato puree.
  • Cook till raw smell goes.
  • Add in the spice powders and cook for few mins.
  • Add boiled channa(with water) and blended channa too.
  • Mix nicely and let it boil for few mins.
  • Add fresh cream and garnish with coriander leaves.
  • Goes good with chapati or poori.

Maanga(Achari) Meen Varuval



Ingredients:

Vanjram fish - 4-5 pieces

For Masala:
Onion - 1 (fine chop)
Tomato - 1 (fine chop)
Ginger garlic paste - 1 tsp
Turmeric powder -1/4 tsp
Red chilly powder - 1 tsp
Coriander powder - 1 tsp
Pepper powder - 1 1/2 tsp
Salt,Oil - Little
Curry Leaves - Little
Coriander Leaves - Little

For Marinate:
Mango Pickle - 1 1/2 tbsp
Red chilly powder - 1 tsp
Coriander powder - 1 tsp
Pepper powder - 1 tsp
Ginger garlic paste - 1 tsp
Lime juice - 1 tsp
Oil - 2 tsp
Salt - As reqd

Method:


  • Clean the fish and marinate it with item under "to marinate" for 30 mins.
  • Heat oil in pan and grill(toast two sides) fishes and set aside.
  • Heat little oil in pan and add curry leavescuonion and saute for a while.
  • Then add ginger garlic paste and saute till raw smell goes.
  • Now add tomatoes and cook till it turns mushy.
  • Add in spice powders(except pepper) and mix well and add salt.
  • Add little water and then grilled fishes and mix well.
  • Finally add pepper powder and mix well.
  • Garnish and serve hot starter.

Bread Halwa #2





Ingredients:

Bread - 4
Sugar - 1/4 cup
Water - 1/2 cup
Ghee - 3-4 tbsp
Cashewnut - 5-6

Method:
Heat little ghee in pan and roast nuts and set aside.
Cut the corners of bread.
In the same pan toast the bread pieces nicely and set aside.
Now add sugar and water in pan and let it boil in medium flame.
Once it starts to bubble up, crush and the toasted bread pieces.
Mash it up and mix it up with sugar.
Add ghee and keep stirring till you get halwa consistency.
Add in nuts and mix up.
Serve the yummy halwa.
