Ingredients:
Wheat flour - 3/4 cup
All purpose flour - 1/4 cup
Rava/Semolina - 2 tbsp
Salt - 1/4 tsp
Sugar - 1 tsp
Active dry yeast -
Warm milk - 1/4 cup
Warm water - 1/4 cup
Olive Oil - 2 tbsp
Red chilly flakes - 1 tsp
Oregano - 1/2 tsp
Topping:
Onion - 1 (diced)
Tomato - 1 (deseed and dice)
Corn - 2 tbsp
Olives - 3
Pizza sauce - 2 tbsp
Grated cheese - 1/2 cup
Method:
- In a bowl add yeast, sugar, warm milk and water.
- Set this aside to activate.
- In other bowl add flour, semolina, chilly flakes.
- Add in salt and oregano and mix well.
- Add in oil and mix it.
- Now add the activated yeast.
- Knead this for 8-10 mins and make a soft dough.
- Place this in a greased bowl.
- Cover this and set aside for 1 -1 1/2 hours for first proofing.
- After desired time, punch the dough and knead it.
- Now roll it to a long rectangle.
- Spread pizza sauce all over and top it with veggies.
- Cover with grated cheese.
- Roll it and cut it into small bun sized ball.
- Place this in a greased bowl and set aside for 30 mins for second proofing.
- After desired time, brush the top with oil and top with cheese.
- Bake this in a preheated oven at 180°C for 20-22 mins.
- Yields 6-8 mini cheesy pizza bites.
