Gajar / Carrot Ka Halwa

Ingredients:

Carrot - 2 (grated)
Unsweetened Khoya - 1/4 cup
Milk - 1 1/4 cup
Browm Sugar -  1/2 cup
Elaichi powder - a pinch
Cashew - 6 (fine chop)
Pistachios - 5 (fine chop)
Ghee - As reqd

Method:


  • Heat little ghee in pan and add cashews and pistachions.
  • Roast this and set aside.
  • To the same pan add the grated carrots.
  • Cook in low flame till raw smell goes off and carrot shrinks a bit.
  • It will take about 5-6 mins.
  • Now add milk and cook in low flame.
  • Once it reduces add in khoya and mix well.
  • Once it completely dries up add in sugar.
  • Keep stirring till it is completely dried up.
  • Add in ghee accordingly.
  • Once halwa leaves the edges of pan, add in elaichi powder.
  • Add in toasted nuts and mix up.
  • Drizzle ghee and serve gajar ka halwa.
