Ingredients:
Carrot - 2 (grated)
Unsweetened Khoya - 1/4 cup
Milk - 1 1/4 cup
Browm Sugar - 1/2 cup
Elaichi powder - a pinch
Cashew - 6 (fine chop)
Pistachios - 5 (fine chop)
Ghee - As reqd
Method:
Carrot - 2 (grated)
Unsweetened Khoya - 1/4 cup
Milk - 1 1/4 cup
Browm Sugar - 1/2 cup
Elaichi powder - a pinch
Cashew - 6 (fine chop)
Pistachios - 5 (fine chop)
Ghee - As reqd
Method:
- Heat little ghee in pan and add cashews and pistachions.
- Roast this and set aside.
- To the same pan add the grated carrots.
- Cook in low flame till raw smell goes off and carrot shrinks a bit.
- It will take about 5-6 mins.
- Now add milk and cook in low flame.
- Once it reduces add in khoya and mix well.
- Once it completely dries up add in sugar.
- Keep stirring till it is completely dried up.
- Add in ghee accordingly.
- Once halwa leaves the edges of pan, add in elaichi powder.
- Add in toasted nuts and mix up.
- Drizzle ghee and serve gajar ka halwa.
