Ingredients:
Wheat flour - 1 3/4 cups
Brown sugar - 1 cup
Baking Soda - 1 tsp
Cinnamon powder - 1 tsp
Nutmeg powder - 1/4 tsp
Elaichi powder - a pinch
Salt - pinch
Tutti Frutti - 1 cup
Dried Blueberry - 1/4 cup (fine chop)
Dates - 5 (fine chop)
Cashews - 5 (fine chop)
Badam - 5 (fine chop)
Walnuts - 3 (fine chop)
Candied orange peel - 2 tbsp(fine chop)
Orange juice - 1/2 cup
Oil or Melted butter - 1/2 cup
Vanilla Esc - 2 tsp
Water - 1 1/4 cup
Milk - 2 tbsp
Method:
- In a pan add in tutti frutti, dates, nuts and blue berries.
- Add in water and let it boil.
- When it starts to bubble up, cook in low flame.
- Simmer and cook for 10 mins.
- After 10 mins remove from flame.
- Now add in orange peel, vanilla esc.
- Add in orange juice and oil and mix well.
- Set aside to completely cool.
- In other bowl mix flour, baking soda and sugar.
- Add in spice powders and salt and mix well.
- When the liquid ingredients are completely cool, add the dry ingredients.
- Fold well.
- Add in milk if batter is too thick.
- Grease a pan and dust flour, invert and dap it.
- Now pour the batter in.
- Bake this in a preheated oven (OTG) at 160°C for 40-45 mins.
- Yields 10-12 slices.
