First Layer and swirl |
Ingredients:
All purpose flour - 1 1/4 cup
Sugar - 1/2 cup
Brown sugar - 1/4 cup
Thick Curd or Hung curd - 1 cup
Oil - 1/2 cup
Baking soda - 1/2 tsp
Baking powder - 1 1/4 tsp
Vanilla Esc - 1 tsp
Mixed Berries - 1/2 cup (Dried cranberry and blueberry)
Mixed fruit jam - 2 tbsp
Almond flakes - 2 tbsp
Method:
- Take dried berries in a bowl and add a tbsp of flour and toss.
- Set this aside.
- In a bowl add curd and sugar and beat well.
- Add in baking soda and baking powder and beat well.
- Set it aside for 5-6 mins.
- It will turn frothy.
- Now add esc and oil and beat well.
- Add in flour and beat well.
- Add in berries and mix well.
- In a pan add jam and little water (1/2 tsp).
- Cook in verr low flame.
- Jam should be semi thick and not runny.
- Grease a pan and dust flour.
- Dap it and remove excess flour.
- Pour half of batter and dap it.
- Add a tbsp of jam and make swirls.
- Pour the remaining batter and dap it.
- Now add a tbsp of jam and make swirls.
- Top it with almond flakes.
- Bake this in a preheated oven (OTG) at 180°C for 30-32 mins.
- Slice and enjoy.
Note:
If jam or preserve you use is too runny consistency, then cake will be sogy.
