Anzac Cookies

Ingredients:

Wheat flour - 1/2 cup
Oats - 1/2 cup
Desiccated coconut - 1/2 cup
Baking soda - 1/2 tsp
Brown sugar - 1/2 cup
Golden syrup - 2 tbsp
Water - 1 tbsp
Unsalated butter - 30 g (25g + small cube)

Method:

  • In a bowl add flour, oats and desiccated  coconut and salt.
  • Mix well.
  • In a pan add butter, golden syrup and water.
  • Cook in low flame till butter melts.
  • Take off from fire and mix it well.
  • Add in baking soda to this and mix well.
  • It will turn frothy.
  • Now add this to flour and then add brown sugar.
  • Mix well and make a dough.
  • Scoop a tbsp of dough and place them in a lined baking tray.
  • Leave space between cookies as it will spread.
  • Bake this in a preheated oven at 180 for 22-25 mins.
  • Let this cool and store.
  • It will be crunchy outiside and bit chewy inside.
  • Yields 12-15 cookies as in picture 1.

Note:

  • I used APF and little extra butter and made another batch.
  • That yielded big size cookies as in picture 2.
