Ingredients:Wheat flour - 1/2 cup
Oats - 1/2 cup
Desiccated coconut - 1/2 cup
Baking soda - 1/2 tsp
Brown sugar - 1/2 cup
Golden syrup - 2 tbsp
Water - 1 tbsp
Unsalated butter - 30 g (25g + small cube)
Method:
- In a bowl add flour, oats and desiccated coconut and salt.
- Mix well.
- In a pan add butter, golden syrup and water.
- Cook in low flame till butter melts.
- Take off from fire and mix it well.
- Add in baking soda to this and mix well.
- It will turn frothy.
- Now add this to flour and then add brown sugar.
- Mix well and make a dough.
- Scoop a tbsp of dough and place them in a lined baking tray.
- Leave space between cookies as it will spread.
- Bake this in a preheated oven at 180 for 22-25 mins.
- Let this cool and store.
- It will be crunchy outiside and bit chewy inside.
- Yields 12-15 cookies as in picture 1.
Note:
- I used APF and little extra butter and made another batch.
- That yielded big size cookies as in picture 2.
