After first proofing

For First Proofing

Flour, Buttermilk, Yeast

Ingredients:

Wheat flour - 2 1/2 cup + 1 tbsp or 300 g
Oats - 1/2 cup
Milk powder - 2 tbsp
Salt - 3/4 tsp
Milk - 1 cup + 2 tbsp
Vinegar - 2 tbsp
Dry yeast - 1 tsp
Honey - 2 tbsp + 1 tsp
Warm Water - 1/2 cup
Olive oil - 2 tbsp

Method:
  • Boil milk and set aside.
  • It should be of medium heat.
  • Add vinegar to this and set aside for 10 mins.
  • This is the buttermilk.
  • In other bowl add sugar, honey and yeast.
  • Add warm water to this and set aside to activate.
  • In a bowl add flour, oats, milk powder and salt.
  • Mix this well.
  • Now add the activated yeast and mix well.
  • Add the butter milk and mix well.
  • Add in olive oil and mix well.
  • Knead for 10-12 mins and make a soft dough.
  • Place this in a greased bowl and set aside for 1-1 1/2 hours for proofing.
  • After the desired time, punch the dough and roll out.
  • Now roll this tight and seam the edges.
  • Place this in a greased loaf tin with seam side to the bottom.
  • Top with some oats(optional).
  • Set aside for 30-45 mins for second proofing.
  • Bake this in a preheated oven (OTG) at 190 for 10 mins.
  • Bake at this temperature for 20 mins and then reduce it to 180.
  • Now bake for 10 mins.
  • Remove from oven and rest for 5 mins.
  • Invert it  and set in wire rack to cool.
  • Slice after it is completely cool.
  • I made sandwich using this.

After Proofing

For First Proofing

Ingredients:

Wheat flour - 3/4 cup
All purpose flour - 1/4 cup
Rava/Semolina - 2 tbsp
Salt - 1/4 tsp
Sugar - 1 tsp
Active dry yeast - 1/2 tsp
Warm milk - 1/4 cup
Warm water - 1/4 cup
Olive Oil - 2 tbsp
Red chilly flakes - 1 tsp
Oregano - 1/2 tsp

Topping:
Onion - 1 (diced)
Tomato - 1 (deseed and dice)
Corn - 2 tbsp
Olives - 3
Pizza sauce - 2 tbsp
Grated cheese - 1/2 cup

Method:

  • In a bowl add yeast, sugar, warm milk and water.
  • Set this aside to activate.
  • In other bowl add flour, semolina, chilly flakes.
  • Add in salt and oregano and mix well.
  • Add in oil and mix it.
  • Now add the activated yeast.
  • Knead this for 8-10 mins and make a soft dough.
  • Place this in a greased bowl.
  • Cover this and set aside for 1 -1 1/2 hours for first proofing.
  • After desired time, punch the dough and knead it.
  • Now roll it to a big thick circle and place it in a greased pizza pan.
  • Prick holes all over.
  • Now spread cheese leaving one inch from corner as in pic 3.
  • Fold them tight as in pic 4.
  • Cut the edges as in pic 5 and twist them.
  • Spread pizza sauce and add toppings as in pic 5 ,6.
  • Top it with grated cheese and set aside for 30 mins for second proofing.
  • After desired time brush the edges with oil.
  • Bake this in a preheated oven (OTG) at 180°C for 20-22 mins.

Triple C MiniBites

Ingredients:

Wheat flour - 1 1/2 cups
Curd - 1 cup (thick curd)
Brown Sugar - 1 cup
Cococa powder - 4 tbsp
Instant Coffee powder - 1 tsp
Oil - 1/4 cup
Baking soda - 1/2 tsp
Vanilla Esc - 3/4 tsp
Milk - 1/4 cup
Salt - a pinch
Almond flakes - 2 tbsp
Walnuts - 2 tbsp

Method:

  • In a bowl add flour, cocoa powder, salt, instant coffee powder.
  • Set this aside.
  • In a bowl add oil,sugar and curd and mix well.
  • Add the dry ingredients and mix well.
  • Add in milk according to the thickness of batter.
  • Add chopped walnuts and fold well.
  • Pour the batter in muffin cases.
  • Top it with almond flakes and walnuts.
  • Bake this in a preheated oven (OTG) at 180°C for 32-35 mins.
  • Yields 10-12 mini bites.

Note:




  • To get the rich coffee flavour, you can mix the coffee powder in 1 tbsp of hot water.
  • Add this in wet ingredients and use.

Mini Cheesy Pizza Bites



Ingredients:

Wheat flour - 3/4 cup
All purpose flour - 1/4 cup
Rava/Semolina - 2 tbsp
Salt - 1/4 tsp
Sugar - 1 tsp
Active dry yeast -
Warm milk - 1/4 cup
Warm water - 1/4 cup
Olive Oil - 2 tbsp
Red chilly flakes - 1 tsp
Oregano - 1/2 tsp

Topping:
Onion - 1 (diced)
Tomato - 1 (deseed and dice)
Corn - 2 tbsp
Olives - 3
Pizza sauce - 2 tbsp
Grated cheese - 1/2 cup

  • Roll it and cut it into small bun sized ball.
  • Place this in a greased bowl and set aside for 30 mins for second proofing.
  • After desired time, brush the top with oil and top with cheese.
  • Bake this in a preheated oven at 180°C for 20-22 mins.
  • Yields 6-8 mini cheesy pizza bites.

Restaurant Style Potato Kurma

Ingredients:

Onion - 1 (fine chop)
Tomato - 1 1/2 (fine chop)
Potato - 1 (chop to small dices)
Chilly powder - 1 tsp
Coriander powder - 1/2 tbsp
Turmeric powder - 1/2 tsp
Garam Masala powder - 1/2 tsp
Cumin powder - 1/2 tsp
Coriander Leaves - Little
Salt, Oil, Water - As reqd

To Grind:
Coconut - 1/4 cup
Roasted Gram - 1 tbsp
Fennel seeds - 1/2 tsp
Cashew - 4

Method:
  • Grind items under "to grind" to a fine paste and set aside.
  • Heat oil in pressure pan and add onion and saute.
  • Add in tomatoes and mix well.
  • Add in potatoes and mix well.
  • Add in spice powders and salt and mix well.
  • Add the grounded paste and mix well.
  • Add required water and mix well.
  • Pressure cook for 3-4 whistles.
  • Garnish with coriander leaves.
  • Goes good with Chapathi/Poori.




Triple C Cake





Ingredients:

Wheat flour - 1 1/2 cups
Curd - 1 cup (thick curd)

  • To get the rich coffee flavour, you can mix the coffee powder in 1 tbsp of hot water.

Berry N Jam Swirl Cake

Second Layer and swirl, topped with almond flakes

First Layer and swirl

Ingredients:

All purpose flour - 1 1/4 cup
Sugar - 1/2 cup
Brown sugar - 1/4 cup
Thick Curd or Hung curd - 1 cup
Oil - 1/2 cup
Baking soda - 1/2 tsp
Baking powder - 1 1/4 tsp
Vanilla Esc - 1 tsp
Mixed Berries - 1/2 cup (Dried cranberry and blueberry)
Mixed fruit jam - 2 tbsp
Almond flakes - 2 tbsp

Method:

  • Take dried berries in a bowl and add a tbsp of flour and toss.
  • Set this aside.
  • In a bowl add curd and sugar and beat well.
  • Add in baking soda and baking powder and beat well.
  • Set it aside for 5-6 mins.
  • It will turn frothy.
  • Now add esc and oil and beat well.
  • Add in flour and beat well.
  • Add in berries and mix well.
  • In a pan add jam and little water (1/2 tsp).
  • Cook in verr low flame.
  • Jam should be semi thick and not runny.
  • Grease a pan and dust flour.
  • Dap it and remove excess flour.
  • Pour half of batter and dap it.
  • Add a tbsp of jam and make swirls.
  • Pour the remaining batter and dap it.
  • Now add a tbsp of jam and make swirls.
  • Top it with almond flakes.
  • Bake this in a preheated oven (OTG) at 180°C for 30-32 mins.
  • Slice and enjoy.

Note:
If jam or preserve you use is too runny consistency, then cake will be sogy.



Almond Flakes

Ingredients:

Almonds - 10-15

Method:

  • In a microwave safe plate, place the almonds.
  • Microwave high for 30 seconds.
  • Use a chips cutter and slice it thin.
  • Or use a knife and slice it.
  • Store this in a airtight container and refrigerate.
  • Use it in recipes as needed.
  • You can do microwave + grill and make roasted almond flakes.

Chicken Masala - Restaurant Style




Ingredients:

Chicken - 300 g(with bone)
Small onion -15-20 (fine chop)
Tomato - 1 1/2 (fine chop)
Curry Leaves - 3 sprig
Dry Red Chilly - 4 (Remove seeds)
Turmeric powder - 1 tsp
Pepper powder - 1 - 1 1/2 tbsp
Vinegar - 1 tsp
Salt, Water - As Reqd
Gingely oil - As reqd

For Masala:

Cloves - 3
Cinnamon stick - small piece
Garlic - 6
Small onion - 6
Big onion - 1
Coconut - 1/2 cup
Sambar thool - 1 tbsp
Ginger garlic paste -  2 tsp
Salt - Little

Method:


  • Heat oil in pan and add items under "For Masala" one by one.
  • Like add in cloves and cinnamon stick.
  • Then add small onion and ginger garlic paste and saute.
  • Then add garlic and saute for a while.
  • Add in big onion and saute for a while.
  • Cook in low flame.
  • Add in coconut, sambar thool and half salt and mix well.
  • Cook in low flame for few mins.
  • Let it cool.
  • Add water and blend it to a fine paste.
  • Heat oil in pressure pan.
  • Add in curry leaves and let it splutter.
  • Cook in low flame.
  • Add in onion and saute well.
  • Then crush and add tomatoes and saute for a while.
  • Now add the chicken pieces and mix well.
  • Now add turmeric powder and salt and mix well.
  • Add in grinded paste and mix well.
  • Now add vinegar and red chilly and mix it up.
  • Add little water and pressure cook for 5 whistles.
  • Open the pan and remove the chicken pieces.
  • Now cook the gravy in low flame.
  • Keep stirring.
  • Once it is thick add the chicken pieces and mix well.
  • Add fresh curry leaves and coriander leaves.
  • Sprinkle pepper powder and mix well.
  • Let it boil for few mins.
  • Goes good with rice/dosa/aapam.


Note:

The original recipe uses kuzhambu milagai thool instead of sambar thool.

Ingredients:

For Dough:
Wheat flour - 1 1/2 cups
All purpose flour - 1/2 cup
Dry yeast - 1 1/4 tsp
Luke warm water - 1/2 cup
Sugar - 2 tsp
Salt - 3/4 tsp
Olive Oil - 2 tbsp

For Topping:

Pizza Sauce - 2 tbsp
Grated Cheese - 1 cup
Onion - 1/2 (diced)
Tomato - 1 (remove seeds and dice it)
Capsicum - 1 (diced)
Corn Kernels - 1/4 cup
Olive oil - 2 tbsp
Red chilly flakes - 1 tbsp
Oregano - 1 tbsp or Italian seasoning - 1 tbsp


Method:
  • In a bowl add yeast, sugar and luke warm milk and set aside.
  • In other bowl add flour, salt and mix up.
  • Once yeast is activated add it to flour and add oil.
  • Make a dough.
  • Place this in a greased bowl for an hour to proof.
  • After the deisred time, punch the dough.
  • Take two equal sized balls and roll them equally.
  • Or roll them and use a lid and cut two equal rounds.
  • In a bowl add veggies and add little salt and olive oil.
  • Add in little chilly flakes and italian seasoning and mix and keep aside.
  • Now grease the pan and sprinkle chilly flakes and oregano.
  • Place one rolled out round dough.
  • Now pizza sauce and top it with veggies.
  • And cover it with grated cheese.
  • Place the other rolled out dough over this.
  • Set aside for 20-25 mins for second proof.
  • After the desired time, brush the top with oil.
  • Sprinkle chilly flakes and oregano.
  • Preheat the oven (OTG) at 200°C and bake for 15-18 mins.
  • While serving sprinkle oregano and serve with ketchup.
Note:
  • You can bake the base separately and then add topping and bake.
  • If so bake pizza base for 8 mins and then with toppings 10 mins.

  • Now take the pizza base set in pan and spread pizza sauce.
  • Top it with veggies and cover it with grated cheese.
  • Set aside for 25 mins for second proofing.
  • Preheat the oven (OTG) at 200°C and bake for 15-18 mins.
  • Brush the corners with milk or water for baking
  • While serving sprinkle oregano and serve with ketchup.
Note:
  • You can bake the base separately and then add topping and bake.
  • If so bake pizza base for 8 mins and then with toppings 10 mins.
  • I reserved a small portion of the same dough and made burger pizza.

Egg Kebab



Ingredients:

Egg - 2 
Potato - 2 
Onion - 1 (medium size, fine chop)
Garam masala - 1/2 tsp
Dry Mango powder - 1 tsp
Chat masala - 1/2 tsp
Chilly powder - 2 tsp
Coriander leaves - fine chop
Corn flakes powder - 1/2 cup
Salt, Water, Oil - As reqd

Method:
  • In a blender add plain corn flakes and blend it to a fine powder.
  • Boil eggs and peel shell and set aside.
  • Boil potatoes and mash it.
  • Add in spice powders, onion and salt and mix well.
  • Add in coriander leaves and mix well.
  • Reserve 3 tbsp of corn flakes powder and rest to potato mix.
  • Mix this well and take a big ball.
  • Spread it and place the boiled egg inside and seal it.
  • Roll it in 3 tbsp corn flakes crumb.
  • Heat oil in pan and deep fry.
  • Slice and sprinkle some chat masala.
  • Serve with ketchup.


Creamy Hot Chocolate Milk

Ingredients:

Hot Chocolate Mix - 3 tbsp
Milk -1 cup
Matshmallows - 2-3

Method:

  • In a pan add milk and chocolate mix.
  • Mix this well.
  • Cook in low flame for 2-3 mins.
  • Transfer this to serving glass.
  • Top it with marshmallows.
  • Add in grated chocolate for extra taste.

Hot Chocolate Mix


Ingredients:

Milk powder - 1 1/2 cup
Powdered Sugar - 3/4 cup
Cocoa Powder - 1/2 cup
Corn flour - 2 tsp

Method:

  • In a bowl add all ingredients.
  • I blended it to remove lumps.
  • Store it in a air tight container.
  • The best edible gift.
  • Can make creamy hot chocolate milk using this.
