One bowl Chocolate Cake


Ingredients:

Wheat flour - 1 cup + 1/8 tbsp
Brown Sugar - 3/4 cup
Cocoa Powder - 1/4 cup + 1 tbsp or 30 g
Baking soda - 1/2 tsp
Baking powder - 1/4 tsp
Salt - a pinch
Milk - 1/2 cup / 120 ml
Water - 1/2 cup / 120 ml
Oil - 1/4 cup
Vanilla esc - 1/2 tsp
Vinegar - 1 tbsp

Method:

  • Grease the cake pan and dust with flour.
  • Invert and dap it to remove excess flour.
  • In a bowl add the ingredients one by one, other than vinegar.
  • Mix them.
  • Add vinegar finally and mix it.
  • Pour the batter to the cake pan.
  • Dab it to remove air bubbles.
  • Bake this in preheated oven (OTG) at 180°C for 25-28 mins.
  • Gives 9 medium size cake slices.

Note:
Once you add vinegar you should bake it immediately.

Upside down Banana Brownie #4



Ingredients:

Wheat flour - 1/2 cup
Cocoa powder - 2 tbsp
Brown sugar -  1/3 cup
Baking powder - 1/4 tsp
Coconut Oil - 1/2 tbsp
Unsalted butter - 50 ml (melted)
Vanilla Esc - 1 tsp
Milk - 2/3 cup

For Caramel:

Banana - 2
Unsalted butter - 2 tbsp
Brown sugar - 2 tbsp
Water - 1 tbsp

Method:

  • Peel banana and slice it into half and set aside.
  • In a pan add items under "for caramel" other than banana.
  • Cook in low flame till all blends together.
  • Now pour this to the loaf pan/baking pan which you use.
  • Place the banana slits with cut side facing bottom.
  • In a bowl add oil, melted butter, sugar, milk and vanilla esc and mix well.
  • In other bowl add flour, cocoa powder and baking powder and mix well.
  • Add this to wet ingredients and fold well.
  • Pour this batter over the bananas and smooth out the top.
  • Bake this in a preheated oven (OTG) at 180°C for 18-20 mins.


Mini Jelly Cupcakes / Jelly Lamington


Ingredients:

Vanilla Mini Bites - 12-15
Jelly pack - 100 g
Desiccated coconut - 1 1/2 cup

Method:

  • Bake the mini bites and set aside to cool.
  • Prepare jelly as per package instructions.
  • Transfer this jelly to a bowl and place a spatula in it.
  • Now refrigerate, it should not set, jelly should be of flowing consistency.
  • Spread the desiccated coconut in a plate.
  • Now take mini bites (one by one) dip in jelly.
  • Then roll in desiccated coconut.
  • Repeat the same for the remaining mini bites too.



Vanilla Mini Bites

Ingredients:

Wheat flour - 1 1/4 cup
Condensed milk - 1/2 cup
Milk - 1/2 cup
Unsalted butter - 1/4 cup
Sugar - 1/4 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Vinegar - 1 tsp
Vanilla Esc - 1 tsp

Method:
  • In a bowl add flour, baking soda, baking powder and mix well.
  • In other bowl add butter and condensed milk and mix well.
  • Now add sugar, vinegar, vanilla esc and mix nicely till sugar dissolves.
  • Add sugar and mix well.
  • Now add the dry ingredients and mix well.
  • Fill each muffin case(just add a tbsp in each case).
  • Bake this in a preheated oven(OTG) at 180°C for 12-13 mins.
  • Yields 18-20 mini cups.

Banana Oats Bite Size Cups



Ingredients:

Wheat flour - 1/3 cup
Oats - 1/3 cup
Milk - 1/3 cup
Banana - 1 1/2 (medium size)
Ghee - 2 tbsp (melted)
Brown Sugar - 2 tbsp
Baking powder - 1/4 + 1/8 tsp
Baking soda - 1/8 tsp
ChocoChips - 2 tbsp
Vanilla esc - a drop (optional)

Method:
  • In a bowl, measure and take oats.
  • You can use as such, but I blended it.
  • Take this in a bowl, add wheat flour to this,
  • Add in baking powder and salt and mix well.
  • Set this aside.
  • In other bowl, add in bananas and mash well using fork.
  • Now add ghee and sugar and whisk well using hand mixer.
  • Now add in milk and mix well.
  • Add in dry ingredients and fold.
  • Pour this batter in the lined mini muffin cases.
  • Sprinkle chocochips in each case.
  • Bake this in a preheated oven (OTG) at 180 for 28-32 mins.
  • Yields 12-15 mini cupcakes.

Egg/Muttai Kurma

Ingredients:

Eggs - 4
Onion - 1 (fine chop)
Tomato - 1/2
Garlic - 3-4
Green Chilly - 3
Ginger Garlic paste - 1/2 tbsp
Fennel seeds - 1/4 tsp
Coconut - 1/4 cup
Cloves - 2
Cinnamon stick - small piece
Poppy seeds - 1 tsp
Coriander powder - 2 tbsp
Curry Leaves - a sprig
Coriander Leaves - Little
Salt, Water, Oil - As reqd

Method:

  • In a bowl add water and eggs.
  • Boil eggs and then peel shell and set aside.
  • Soak poppy seeds in hot water.
  • Heat oil in pan and add clove, cinnamon and fennel seeds.
  • Now add green chilly and ginger garlic paste and saute for a while.
  • Add in tomatoes and cook till it is mushy.
  • Add in coconut and saute for a while.
  • Cook in low flame.
  • Add in coriander powder and mix well.
  • Let this cool.
  • Add soaked poppy seeds to this and grind to a fine paste.
  • Add little water while grinding.
  • Now heat oil pan and add curry leaves.
  • Once it splutters add in onion and saute for a while.
  • Add the grinded paste and water and cook in low flame.
  • Cook for about 4-5 mins.
  • In a bowl add the boiled eggs.
  • Prick holes in egg using fork.
  • Now pour the gravy over the eggs.
  • Garnish with coriander leaves.
  • Serve hot with rice/chapathi/poori.




Paneer Kofta Gravy

Ingredients:

Paneer Kofta - 6-8
Onion - 1 (Roughly chop)
Tomato - 2 (Roughly chop)
Garlic - 3
Ginger Garlic paste - 1/2 tbsp
Clove - 1
Cinnamon stick - small piece
Green Elaichi - 1
Coriander Leaves - 1/4 cup
Mint Leaves - 1/4 cup
Dried Kasoori Methi Leaves - 1 tsp
Kashmiri Chilly powder - 1 tsp
Garam Masala - 1/4 tsp
Turmeric Powder - 1/8 tsp
Salt, Oil, Water - As Reqd

Method:


  • Heat oil in pan and add clove, elachi and cinnamon stick.
  • Add in onions and saute.
  • Add in garlic, ginger garlic paste and saute for a while.
  • Now add in tomatoes and cook till it turns mushy.
  • Add in chilly powder, turmeric powder, salt and mix well.
  • Add in mint and coriander leaves and mix well.
  • Let this cool and grind to a fine paste.
  • Now heat oil in pan and add grinded paste and required water.
  • Let it boil till you get the desired consistency, app 4-5 mins.
  • Now add garam masala powder and mix well.
  • Add in fried koftas and cover and cook for 2 mins.
  • Finally crush and add the methi leaves.
  • Serve hot with chapathi or poori.


Note:
When you add salt to gravy, add carefully as kofta balls also has salt.

Paneer Balls

Ingredients:

Paneer - 150 g
Corn flour - 2 tbsp
Bread crumbs - 2 tbsp
Red Chilly powder - 1 tsp
Fennel powder - 1/4 tsp
Garama Masala - 1/4 tsp
Salt - 1 tsp
Oil - As reqd

Method:


  • In a bowl, crumble paneer.
  • Add in salt, spice powder and mix well.
  • Add in corn flour and bread crumbs and make a dough.
  • Make small smooth balls out of it.
  • Heat oil in a pan and fry these balls.
  • Serve with ketchup or green chutney.
  • I used these and made paneer kofta gravy.


Pheni Paratha




Ingredients:

Wheat flour - 2 1/2 cups
Ghee - 2 tbsp + 1/4 cup
Salt, Water - As reqd

Method:

  • In a bowl add flour, salt and mix well.
  • Now add 2 tbsp ghee and water little by little.
  • Knead and form a soft dough.
  • Make small balls out of it.
  • Roll out the dough thin.
  • Now brush ghee as in picture.
  • Use a pizza cutter and make thin slits as in picture.
  • Just gather and roll it and tuck the edges.
  • Repeat the same with other dough.
  • Heat a tawa, drizzle oil in pan.
  • Now take the rolled dough and press with hands and spread.
  • Transfer this to tawa and flip sides and cook.
  • Once done, just crush with hands and serve hot.

Banana Oats Cake



Ingredients:

Wheat flour - 1/3 cup
Oats - 1/3 cup
Milk - 1/3 cup
Banana - 1 1/2 (medium size)

Baking powder - 1/4 + 1/8 tsp
Baking soda - 1/8 tsp
ChocoChips - 2 tbsp
Vanilla esc - a drop (optional)

Method:

  • In a bowl, measure and take oats.
  • You can use as such, but I blended it.
  • Take this in a bowl, add wheat flour to this,
  • Add in baking powder and salt and mix well.
  • Set this aside.
  • In other bowl, add in bananas and mash well using fork.
  • Now add ghee and sugar and whisk well using hand mixer.
  • Now add in milk and mix well.
  • Add in dry ingredients and fold.
  • Pour this batter in the moulds and dab it.
  • Sprinkle chocochips.
  • Bake this in a preheated oven (OTG) at 180 for 28-32 mins.
  • I made two mini loaves, got some 14-15 pieces.

Note:

  • You can bake in a loaf tin too, in that case grease the pan.
  • Then dust with flour and invert and dab it to remove excess flour.
  • Then pour the batter and bake.

Plain Salna / Empty Salna #1

Ingredients:

Onion - 1 1/2 (thin slices)
Tomato - 2
Green chilly - 1
Ginger garlic paste - 1 tbsp
Turmeric power - 1/4 tsp
Chilly powder - 3/4 tsp
Coriander powder - 2 tbsp
Garam Masala - 1/2 tsp
Cumin powder - 1/4 tsp
Fennel powder - 1/4 tsp
Coconut - 1/2 cup
Cashews - 5 - 6
Coriander Leaves - for garnish
Water, Oil, Salt - As reqd

Method:


  • Blend coconut and cashews by adding little water.
  • Set this aside.
  • Now heat oil in pan and add curry leaves.
  • Add in onion and saute for a while.
  • Now add ginger garlic paste and saute for a while.
  • Add in fine chopped tomatoes and cook till it turns mushy.
  • Now add the spice powders, salt and blended paste.
  • Mix well and add water (app 1 1/2 cups).
  • Pressure cook this for 3 whisltes.
  • Garnish with coriander leaves.
  • Server hot with dosa/idly/parotta.

Omlette Uthapam #2

Ingredients:

Egg - 3
Dosa Batter - 1/2 cup
Leftover Gravy - 1 cup
Pepper powder - 1 tsp
Salt - 1/4 tsp
Curry Leaves - a sprig (fine chop)
Oil - 1 tbsp

Method:


  • I used leftover dhariwala gravy.
  • In a bowl crack eggs and add pepper powder and salt.
  • Whisk well and set aside.
  • To this add gray, curry leaves and whisk well.
  • Now add dosa batter and mix well.
  • Heat a tawa and drizzle oil.
  • Pour a laddle of batter and spread.
  • Drizzle oil on top and then flip and cook.
  • Serve hot.
  • Adjust spice according to the gravy you use.
  • Also with the same batter you can make paniyaaram too.

Dhariwala

Ingredients:

Potato - 3
Green peas - 1/2 cup
Tomato - 2
Ghee - 2 tbsp

To Grind:

Onion - 1
Coriander Leaves - 3/4 cup
Turmeric powder - 1/8 tsp
Chilly powder - 3/4 tsp
Kashmiri Chilly powder - 1/4 tsp
Garam Masala - 1/2 tsp
Sugar - 1/2 tsp
Salt - As reqd

Method:

  • Boil potatoes and peas and set aside.
  • In a bowl add water and make slits in tomatoes and add to this.
  • Let it boil for 5-8 mins.
  • After which peel the tomato skin and blend this to a puree.
  • Set this aside.
  • Now blend items under "To grind" and set aside.
  • Do add water while blending.
  • Now heat ghee in a pan and add blended puree and cook in low flame.
  • Add in tomato puree and cook till ghee oozes out.
  • Now add the boiled peas and boiled and mashed potatoes.
  • Cool in low flame for 8-9 mins.
  • Garnish with coriander leaves and serve.
  • Goes good with poori/chapathi.




Orange Tutti Frutti Muffins



Ingredients:

Wheat flour - 1 cup / 100 g
Brown sugar -1/2 cup
Water - 1/4 cup
Orange juice - 3/4 cup
Vanilla Esc - 1 tsp
Oil - 1/4 cup
Baking soda - 1/2 tsp
Milk - 1/2 tbsp
Tutti Frutti - 1/2 cup

Method:

  • In a bowl add water and brown sugar and whisk well.
  • Add in orange juice,oil and esc and mix well.
  • Now add flour, baking soda and mix well.
  • Add in tutti frutti, milk and fold.
  • Line the muffin case and fill it up with batter.
  • Bake this in a preheated oven (OTG) at 180 for 25-28 mins.
  • Yields 9 muffins.


Note:
You can replace water too with orange juice.

Dates Pudding Cake





Ingredients:

Dates - 65 g (deseed)
Boiling water - 80 ml
Baking soda - 1/4 tsp

For Caramel:

Jaggery powder - 1 tbsp
Butter - 10 g
Ginger powder - 1/8 tsp
Water - 1/8 tsp

Pudding:
Wheat flour - 50 g / 1/2 cup
Jaggery powder - 25 g
Unsalted butter - 32.5 g
Curd - 25 ml
Baking soda - 1/4 tsp

Method:

  • First deseed the dates and chop it and transfer it to a bowl.
  • To this add baking soda and hot boiling water and mix well.
  • Set this aside for 18-20 mins.
  • Now in a pan add items under "For caramel" and mix it.
  • Now put this on low flame and whisk till it bubbles and becomes frothy.
  • Now take the pudding pan and grease it with oil.
  • Now dust the same with flour and dab to remove excess flour.
  • Pour the caramel syrup to the base and add some soaked dates.
  • Now place few cashews too.
  • In other bowl add melted butter and jaggery and whisk till creamy
  • Now add the soaked dates with water and whisk well.
  • Add in curd and mix well.
  • Add the flour, baking soda and whisk well.
  • Pour this batter to the pudding pan.
  • Bake this in a preheated oven (OTG) at 180 for 30-33 mins.
  • Let it cool and then invert it.
  • Scrape the caramel and top it over pudding.
  • Yields 5-6 pieces.
Note:
The syrup will stick to the pan you can scrape and top it over pudding.

Cauliflower Chops Gravy

Ingredients:

Onion - 1 (fine chop)
Tomato - 1 1/2 (fine chop)
Cauliflower - 1 (small)
Chilly powder - 1 tsp
Coriander powder - 1/2 tbsp
Turmeric powder - 1/2 tsp
Garam Masala powder - 1/2 tsp
Cumin powder - 1/2 tsp
Coriander Leaves - Little
Salt, Oil, Water - As reqd

To Grind:
Coconut - 1/4 cup
Roasted Gram - 1 tbsp
Fennel seeds - 1/2 tsp
Cashew - 4

Method:
  • Grind items under "to grind" to a fine paste and set aside.
  • Cut the florets and wash and set aside.
  • Now boil water and add turmeric powder.
  • Once it bubbles, turn off fire and add florets and cover it.
  • Let it sit for 5-6 mins.
  • Now strain the florets and chop it.
  • Heat oil in pressure pan and add onion and saute.
  • Add in tomatoes and mix well.
  • Add in cauliflower  chops and mix well.
  • Add in spice powders and salt and mix well.
  • Add the grounded paste and mix well.
  • Add required water and mix well.
  • Pressure cook for2-3 whistles.
  • Garnish with coriander leaves.
  • Goes good with Chapathi/Poori.



Omlette Uthapam # 1

Ingredients:

Egg - 3
Dosa Battter - 1/2 cup
Onion - 1 (fine chop)
Curry Leaves - fine chop
Salt - a pinch
Pepper powder - 1 1/2 tsp
Turmeric powder - 1/4 tsp
Garam Masala - 3/4 tsp
Oil - As reqd

Method:

  • In a bowl break eggs and whisk well.
  • Add in salt, pepper powder, turmeric powder and whisk it.
  • Now add garam spice and whisk well.
  • Now add the dosa batter and mix up.
  • Finally add the fine chopped onions and curry leaves and whisk well.
  • Heat a non-stick pan and drizzle oil.
  • Now pour a laddle of batter and spread.
  • Drizzle oil all over and cook in low flame.
  • Flip and cook.
  • Serve hot.


Note:

  • You can add grated carrots too.
  • Also you can make mini uthapam also.

Apple Cherry Pie


Sliced Apple Cherry Pie

Baked pie

Ingredients:

Apple - 2 (peeled and chopped)
Glazed Cherry - 8-10 (chopped)
Brown Sugar - 1/2 cup
Unsalted butter - 2 tbsp
Cinnamon powder - 1 tsp
Nutmeg powder - 1/8 tsp
Pie Crust Dough
Milk - 1/2 tbsp
Brown sugar - 1 tbsp (to sprinkle)

Method:
  • Add apple to pan and saute for few minutes.
  • Now add the butter, sugar and cherries.
  • Keep mixing till all in binded together.
  • Now add the spice powders and mix well.
  • Cook in low flame for 8-10 mins.
  • Set this aside.
  • Now take the pie dough and divide it into 2 parts. 
  • Take one portion and roll it.
  • Fix it in greased pan and trim the edges.
  • Add the filling to this.
  • Spread it.
  • Now take the other portion.
  • I felt I had less dough to cover the pie.
  • So I cut heart shapes of the rolled dough.
  • Arranged them over the filling.
  • Apply milk wash and sprinkle brown sugar on top.
  • Bake this in a preheated oven (OTG) at 180°C for 35-38 mins.
  • Once done, place the pan on top of a inverted glass.
  • Doing this way we can remove the outer ring of pan.
  • Now transfer the pie to serving plate and slice and enjoy.
  • Can serve this with a scoop of ice-cream.
Note:
Sprinkling sugar on top of pie is optional.

Ingredients:

All purpose flour - 1 cup / 100 g
Wheat flour - 1 cup / 100 g
Unsalted butter - 115 g
Sugar - 50 g / 1/2 cup + 1 tbsp

Method:
  • In a bowl add flour and cubed chill butter.
  • Rub them with hands, till you get crumbs texture.
  • Now add the sugar and keep mixing the dough.
  • Now you will get a dough.
  • Wrap in a butter paper and refrigerate for an hour.
  • After desired time dust the butter paper with flour.
  • Place the dough and cover with one other butter paper.
  • Roll it out and peel the top butter paper.
  • Grease the pie pan with butter.
  • Now flip the dough from butter paper to pan.
  • Press gently and then trim the edges.
  • Prick with fork all over the base.
  • Bake this in preheated oven (OTG) at 180°C for 20-22 mins.
  • Or after fixing the dough to pan, you can add filling and bake together.
  • This is enough to fill a 9 inch pie pan.


Note:
  • To have excess dough for top covering, you can add 50 g of extra flour.
  • After pricking holes you can place a foil filled with rice and do baking.
  • This is called blind baking.
  • I used this and made apple cherry pie.
