Bun Pizza


Ingredients:

Wheat bun - 2
Pizza sauce- 1 tbsp
Onion - 1 (small dices)
Tomato - 1 (deseed and dice)
Red Chilly flakes - 1 tsp
Oregano -  1 tsp
Salt - 1/8 tsp
Cheese - 1/2 cup (grated)

Method:

  • Cut the buns into halves and set aside.
  • In a bowl add onion, tomato.
  • Add in chilly flakes, oregano, salt and mix well.
  • Apply pizza sauce in each bun and top with little grated cheese.
  • Now add onion topping and cover it with grated cheese.
  • Bake this in a preheated oven (OTG) at 200°C for 8-9 mins.

Chocolate Cake / ChocoBiscuit Cake #2


Ingredients:

Bourbon biscuits - 120 g
Milk - 1/2 cup + 1 tbsp
Eno (regular) - 1/2 tsp
Cashew - 6 (fine chop)
Almonds - 6 (fine chop)

Method:

  • Add biscuits to the blender and make a fine powder.
  • Transfer this to a bowl.
  • Add in milk and mix well.
  • Add eno and mix well.
  • Transfer this batter to a greased pan.
  • Top it with nuts of your choice.
  • Bake this in a preheated oven (OTG) at 180°C for 20-22 mins.
  • Let it cool and then slice and enjoy.

MacOmlette


Ingredients:

Egg - 3
Onion - 1 (dice)
Tomato - 1 (deseed & dice)
Capsicum - 1 (dice)
Red chilly flakes - 2 tsp
Oregano - 1 tsp
Pepper powder - 1/2 tsp
Pasta - 2 tbsp (boiled)
Salt, Oil - As reqd

Method:

  • In a bowl crack eggs and whisk well.
  • Now add the diced onion, tomato and capsicum.
  • Add in chilly flakes and crushed oregano.
  • Now add salt, pepper powder and mix well.
  • Add the boiled pasta and mix well.
  • Grease the tawa and pour the mixture.
  • Cook in low flame and flip it carefully.
  • Slice and serve with ketchup.

Note:
I used fusilli pasta so chopped and added.

Corn Kebab

Ingredients:

Potato - 1 (boiled)
Corn Kernels - 1/2 cup (boiled)
Onion - 1 (medium size, fine chop)
Kashmiri chilly powder - 1/2 tsp
Chilly powder - 1/2 tsp
Garam Masala - 1/2 tsp
Chat Masala - 1/4 tsp
Cumin powder - 1/2 tsp
Rice flour - 2 tbsp
Bread crumbs - 1/2 cup
Salt, Oil - As reqd

Method:

  • Boil potato and corn.
  • Blend the corn corasely and transfer to bowl.
  • To the same bowl add mashed potato.
  • Add in onion and spice powders.
  • Add in salt and mix well.
  • Add in rice flour and bread crumbs and mix well.
  • Shape it as you wish and fry and serve.
  • Enjoy the kebab with sauce/green chutney.


Moong Dal Halwa

Ingredients:

Moong dal (split) - 1/2 cup
Brown sugar - 1/2 cup (+ 1 tbsp)
Ghee - 1/4 cup
Milk- 3/4 cup
Saffron strands - Little
Cashews - 6-7(chopped)

Method:

  • Soak dal in water for 2-3 hours.
  • Strain water and blend this to a paste (not too coarse, not too fine).
  • In a pan add sugar and milk and bring it to a boil.
  • Just boil till sugar dissolves.
  • Now add saffron strands and set aside to cool.
  • Heat little ghee in pan and roast cashews and set aside.
  • To the same pan add the remaining ghee.
  • Add the grinded dal paste and cook in low flame.
  • Keep stirring, till the raw smell goes and you get roasted aroma.
  • It will be like crumbs. It will take app 22-25 mins.
  • Now add the milk sugar mixture and mix well.
  • Keep Stirring till you get the right consistency.
  • Add roasted cashews and mix well and serve hot.

Kozhi Malli Kurma

Ingredients:

Chicken - 400 g
Small Onion - 15-20
Big Onion - 1 (fine chop)
Tomato - 1(small)
Green Chilly - 5
Garlic - 10
Coriander powder - 1 1/2 tbsp
Turmeric powder - 1 tsp
Garam masala - 1 tbsp
Pepper powder - 1 tsp
Coconut - 1/4 cup
Ginger garlic paste - 1 tbsp
Curry Leaves - A sprig
Coriander Leaves - 1/2 (from a)bunch
Salt, Oil, Water - As reqd

Method:

  • Heat oil in pan and add small onions and saute.
  • Then add garlic, green chilly and 1/2 of garam masala and saute.
  • Add in coconut, curry leaves, coriander leaves and saute for a while.
  • Let this cool and blend to a fine paste.
  • Heat oil in pan and add fine chopped big onion and saute.
  • Now add the tomato and saute.
  • Add in chicken pieces and mix well.
  • Add the spice powders other than pepper powder.
  • Add in salt and then grinded paste.
  • Add little water to this and mix well.
  • Pressure cook this for 3 whistles.
  • Once done add in pepper powder and mix well.
  • Let this boil for few mins.
  • Garnish with coriander leaves and serve hot with rice/idly/dosa.

Red Velvette(Beetroot) Cookie Cake


Ingredients:

Wheat flour - 1 cup
Beetroot Puree - 1/2 cup
Brown sugar - 2 tbsp
Ghee- 1 1/2 tbsp
White Chocolate chips - 2 tbsp

Method:

  • Grate and make beetroot puree and set aside.
  • Take 1/2 cup of puree in a bowl.
  • Add ghee, sugar and mix well.
  • Add in flour and chocolate chips.
  • Gather the dough, don't knead.
  • Cling wrap and refrigerate for 20 mins.
  • Then make cookies and arrange them in a lined baking tray.
  • Bake this in a preheated oven (OTG) at 180 for 16-18 mins.
  • This will look like cookie and texture like cake.


Note:

Sugar level varies based on sweetness of beetroot.

Vanilla Cake #1


Ingredients:

All purpose flour - 1 cup
Powdered Sugar - 1/4 cup
Baking powder - 1 tsp
Baking soda - 1/4 tsp
Salt - a pinch
Unsalted Butter - 70 g
Caster sugar - 1 cup
Egg - 1
Vanilla esc - 1 tsp
Milk - 1/2 cup

Method:
  • In a bowl mix flour and baking powder,baking soda,salt and keep aside.
  • In other bowl cream softened butter and sugar.
  • Then add egg and esc and mix well.
  • Now add a portion of flour mix to this and some milk and fold well.
  • Add the remaining flour and milk and fold well
  • Grease a pan with butter and dust with flour.
  • Invert and dap to remove excess flour.
  • Pour in the batter.
  • Bake this in a preheated oven (OTG) at 180 °C and for 20-25 mins.
  • Slice and enjoy.

Karachi Biscuit #2



Ingredients:

Wheat flour - 1/2 cup
All purpose flour - 1/2 cup
Powdered sugar - 1/2 cup
Baking powder - 1/2 tsp
Custard powder - 2 tbsp (vanilla flavour)
Milk - 2 tbsp
Unsalted butter - 50 g
Rose esc - 1/2 tsp
Tutti Frutti - 1/2 cup

Method:

  • In a bowl add custard powder, flour and baking powder and mix well.
  • In other bowl cream butter and sugar.
  • Add in esc and mix well.
  • Add the dry ingredients and tutti frutti.
  • Gently bring the dough together.
  • If it is too dry add milk, if not skip adding milk.
  • Shape this dough to a log and cling wrap.
  • Refrigerate for 4 hours or overnight.(I refrigerated overnight).
  • Now unwrap and cut the cookies.
  • Arrange them in a lined baking tray.
  • Bake this in a preheated oven (OTG) at 180°C for 13-15 mins.
  • Let it cool and then store in airtight container.
  • This yields 20 cookies.

Cherry Pound Cake



Ingredients:

Wheat flour - 2 cups
Baking powder - 2 tsp
Salt - a pinch
Unsalted butter - 170 g
Brown sugar - 1 cup
Egg - 3
Vanilla esc - 1/2 tsp
Cherry - 3/4 cup(glazed and chopped cherries)

Method:
  • In a bowl add flour, baking powder and salt and mix well.
  • In other bowl cream butter and sugar.
  • Add in eggs one at a time and mix well.
  • Add in esc and mix well.
  • Add the dry ingredients and fold.
  • Finally add the chopped cherries and mix well.
  • If batter is too thick, can add 1-2 tbsp of milk and fold again.
  • Pour this batter in lined loaf tin.
  • Bake this is a preheated oven (OTG) at 180°C for 30-35 mins.
Note:

I had only 2 eggs at home so added 1/4 cup of curd as substitute.

Venpongal


Ingredients:

Raw Rice - 1 cup
Moong dal - 1/4 cup
Water - 3 cups
Cashews - 6-7(broken)
Pepper corns - 2 tsp
Cumin seeds - 2 tsp
Salt - 1 tbsp
Milk - 1 tbsp
Curry Leaves - a sprig
Ghee - 3 tbsp

Method:

  • Dry roast moong dal (yellow paasi payir) and set aside.
  • Now in bowl add washed rice and dal.
  • Add in water and salt and mix.
  • Pressure cook this for 5 whistles.
  • Heat tbsp of ghee and roast cashews and set aside.
  • Add little ghee again and add pepper corns and curry leaves.
  • Finally add cumin seeds and add in boiled rice and dal.
  • Add a tbsp of milk and mix well.
  • This helps to retain the consistency.
  • Add the roasted cashews and mix well.
  • Serve with chutney and sambar.

Kaara Dosa

Kaara Chutney

Ingredients:

Kaara chutney - 3 tbsp
Dosa Batter - 1 cup
Oil - As reqd

Method:


  • I made Kaara chutney, but here for this recipe I blended it coarsely.
  • Also tempered it with mustard seeds.
  • Heat dosa tawa, pour a laddle of batter.
  • Spread it and drizzle oil.
  • Now add a tbsp of kaara chutney and spread all over dosa.
  • Serve hot.


Cherry Cupcakes

Ingredients:

Wheat flour - 2 cups
Baking powder - 2 tsp
Salt - a pinch
Unsalted butter - 170 g

Vanilla esc - 1/2 tsp

  • In a bowl add flour, baking powder and salt and mix well.

  • Add the dry ingredients and fold.
  • Finally add the chopped cherries and mix well.
  • If batter is too thick, can add 1-2 tbsp of milk and fold again.
  • Fill 3/4 of muffin cases.
  • Bake this is a preheated oven (OTG) at 180°C for 15-18 mins.
  • Yields around 14-15 cupcakes

Wheat Fruit N Nut Muffin


Ingredients:

Wheat flour - 3/4 cup
Milk powder - 2 tbsp
Baking soda - 1/2 tsp
Salt - a pinch
Tutti Frutti - 2 tbsp
Cashew - 6-7 (chop)
Almonds - 6-7 (chop)
Powdered Brown sugar - 1/2 cup
Oil - 1/4 cup
Milk - 1/2 cup
Vinegar - 1 tsp
Vanilla Esc - 1 tsp

Method:

  • In a cup add fruit and nuts and add 1 tbsp of flour and toss well.
  • Set this aside.
  • In a bowl add flour, milk powder, baking soda and salt and mix well.
  • Add sugar and mix well.
  • In other bowl add milk and vinegar.
  • Now add oil, esc and whisk well.
  • Add the wet ingredients to the dry ingredients and fold well.
  • Add the fruit and nuts and fold well.
  • Fill the batter in muffin cases.
  • Bake this in a preheated oven (OTG) at 180 for 15-17 mins.
Note:
  • Toss the fruit and nuts in flour before adding to batter.
  • This will prevent them from sinking to bottom.

Wheat ChocoChip Cupcakes

Ingredients:

Wheat flour - 1 cup
Baking soda - 1/2 tsp
Chocochips - 2 tbsp
Warm water - 1/2 cup
Sugar - 1/2 cup
Vinegar - 1/2 tbsp
Vanilla esc - 1tsp
Oil - 3 tbsp
Salt - a pinch

Method:




  • In a bowl add warm water and sugar and mix well.
  • Add in esc and oil and mix well.
  • Add vinegar to this and whisk well.
  • Now add the dry ingredients and fold well.
  • Add the chocochips and fold.
  • Pour this in a lined muffin cases.
  • Bake this in a preheated oven (OTG) at 180°C for 20-22 mins.

Fusion Cupcakes




Ingredients:

All purpose flour - 1 1/4 cup
Condensed milk - 1/2 cup
Milk - 1/2 cup
Unsalted butter - 1/4 cup
Sugar - 1/4 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Vinegar - 1 tsp
Rasamalai Esc - 3/4 tsp

Gulab Jamun - 6 pieces

Method:

  • In a bowl add flour, baking soda, baking powder and mix well.
  • In other bowl add butter and condensed milk and mix well.
  • Now add sugar, vinegar, esc and mix nicely till sugar dissolves.
  • Now add the dry ingredients and fold well.
  • Pour a tbsp of batter in each muffin case.
  • Place a jamun in each case and cover with remaining batter.
  • Bake this in a preheated oven (OTG) at 180°C for 25-30 mins.
  • Yields 9 cupcakes.
  • These cupcake will have rasmalai flavour with gulab jamun in it.
Note:

You can freeze the jamun and then cut and fill or can put one full jamun in each cupcase.

Egg Kothu/ Egg Puttu

Ingredients:

Onion - 1 (fine chop)
Tomato - 1 (fine chop)
Egg - 4
Sambar thool  - 2 tbsp
Pepper powder - 1 tbsp
Coriander powder - 1 tsp
Tandoori masala - 1 tsp
Turmeric powder - a pinch
Ginger garlic paste - 1/2 tbsp
Curry Leaves - a sprig
Salt, Oil - As reqd

Method:

  • In a bowl break open eggs and whisk it.
  • Add little salt and pepper powder and whisk it.
  • Set this aside.
  • Heat oil in pan and add curry leaves.
  • Add in onion and ginger garlic paste and saute well.
  • Add in tomato and saute till it turns mushy.
  • Cook in low flame.
  • Add in spice powders and salt and mix well.
  • Now add the egg mix and keep stirring.
  • Enjoy the hot egg kothu/puttu.


Rasmalai Cupcakes #1


Ingredients:

All purpose flour - 1 1/4 cup
Condensed milk - 1/2 cup
Milk - 1/2 cup
Unsalted butter - 1/4 cup
Sugar - 1/4 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Vinegar - 1 tsp
Rasamalai Esc - 3/4 tsp


Method:

  • In a bowl add flour, baking soda, baking powder and mix well.
  • In other bowl add butter and condensed milk and mix well.
  • Now add sugar, vinegar, esc and mix nicely till sugar dissolves.
  • Now add the dry ingredients and fold well.
  • Fill 3/4th of batter in each case of lined muffin tray.
  • Bake this in a preheated oven (OTG) at 180°C for 25-30 mins.
  • Yields 12 cupcakes.

Method:

  • In a bowl add warm water and sugar and mix well.
  • Add in esc and oil and mix well.
  • Add vinegar to this and whisk well.
  • Now add the dry ingredients and fold well.
  • Pour this in a lined muffin cases.
  • Bake this in a preheated oven (OTG) at 180°C for 20-22 mins.

Pizza Papad



Ingredients:

Papad - 3
Onion - 1
Tomato - 1
Capsicum - 1
Pizza sauce - 1 tbsp
Maida - 2 tbsp
Water - 1/4 cup
Salt, Oil - As reqd

Method:


  • In a bowl add maida, little salt and littler water and make a paste(not too thick nor too thin)
  • Deseed and make thin slices of tomato and capsicum.
  • Add this to a bowl.
  • Add sliced onion to this.
  • Add pizza sauce and salt and mix well and set aside.
  • Now take a plate and add water.
  • Dip a papad in water for 2 seconds.
  • Place it in a cloth to remove excess water.
  • Spoon filling to this and roll.
  • First fold the corners and then use maida paste.
  • Seal the edges.
  • Heat oil in pan and fry these.
  • Serve the pizza papad with sauce.

Note:
You can bake the same.

Bread Canapes




Ingredients:

Bread - 6 slices
Butter - 2 tbsp
Grated cheese - 1/4 cup

For Filling:
Onion - 1 (fine chop)
Tomato - 1 (small, fine chop)
Capsicum - 1 (small, fine chop)
Pizza sauce - 1 tbsp
Salt - 1/2 tsp or As reqd
Oil - 1 tsp

Method:

  • Heat oil in pan and add onion and saute.
  • Add in tomato and saute, cook till it is mushy.
  • Add in capsicum and pizza sauce and toss well.
  • Add in required salt and cook in low flame for 2-3 mins.
  • Transfer this to a bowl and set aside.
  • Now take a round cookie cutter and cut the breads using it.
  • Place 3 roundels as it is.
  • Take the other 3 roundel, use a small cookie cutter than the previous one.
  • Cut it and place the outer part.
  • Place the full roundel and apply butter on it.
  • Top it with outer layer roundel(cut using small cutter).
  • Add the filling in and top it with grated cheese.
  • Repeat the same with other breads.
  • Line them in a greased baking tray.
  • Bake this in a preheated oven at 250°C for 4-6 mins.
