Dhaba Style Crispy Paneer



Ingredients:

Paneer - 200 g
Rice flour - 6 tbsp
Black pepper powder - 2 tsp
Onion - 1
Dry Red chilly - 2 (deseed & break)
Kashmiri chilly powder - 1/2 tsp
Chaat Masala - 1 tsp
Salt - 1/2 tsp
Oil - As reqd

For Batter:
Maida - 2 tbsp
Corn flour - 2 tbsp
Red Chilly powder - 1 tsp
Salt - 1/2 tsp
Water - As reqd

Method:

  • Cut onion to small size and set aside.
  • Deseed and break the chillies and set aside.
  • In a bowl add items under "For Batter".
  • Add little water and make a batter that is not too thin nor too thick.
  • Cut paneer to desired shape.
  • In a plate add rice flour and pepper.
  • Mix this and set aside.
  • Dip paneer in batter and roll in rice flour mix.
  • Again dip in batter and coat with flour and set aside.
  • Heat oil in pan and fry these paneer and set aside.
  • Heat little oil in pan and add diced onion and chillies.
  • Saute this for a while.
  • Cook in low flame and then add kashmiri chilly powder and chaat masala,
  • Add in salt and mix well.
  • Add in fried paneer and toss well.
  • Add in chopped coriander leaves and toss well.
  • Serve hot with sauce.

MilkChocolate Frosting


Ingredients:

Unsalted butter - 112 g
Icing sugar - 200 g
Milk Chocolate - 250 g
Fresh cream - 200 ml
Vanilla Esc - 1 tsp

Method:

  • In a double boiler, heat the milk chocolate and cream together.
  • Heat till chocolate is melted and blended well with cream.
  • Set this aside to cool.
  • In a bowl add butter and beat till light and smooth.
  • Now add icing sugar in parts and blend well.
  • Add in esc and melted chocolate and cream mix.
  • Beat till you get the desired consistency.
  • Can use this to frost cakes of your choice.



Chocolate Fudge Cake


Ingredients:

Wheat flour - 110 g
Cocoa powder - 30 g
Brown sugar - 110 g
Baking powder - 1/2 tsp
Baking soda - 1/2 tsp
Salt - a pinch
Oil - 60 ml
Curd - 120 ml
Hot water - 125 ml
Vanilla Esc - 1 tsp

Method:

  • In a bowl add flour, cocoa powder, salt, baking powder and baking soda.
  • In other bowl add sugar, curd, oil and mix well.
  • To this add esc and dry ingredients and mix well.
  • Now the batter will be thick.
  • Add the hot water and whisk well, to have a smooth batter.
  • Grease a 5 inch pan and line the bottom with butter paper.
  • Dust the pan with cocoa powder and invert and dap to remove excess.
  • Now pour the batter to the pan.
  • Bake this in a preheated oven (OTG) at 180 °C for 32-26 mins.
  • Yields 6-8 pieces.

Note:
  • I poured equal amount of batter in two 5 inch pans.
  • You can bake the same in a single pan.

NaatuKozhi Rasam

Ingredients:

Naatu Kozhi - 250 g
Small onion - 6-8
Tomato - 1
Red chilly powder - 1 tsp
Tumeric powder - 1 tsp
Pepper corns - 1 tsp
Cumin seeds - 1 tsp
Fennel seeds - 1 tsp
Coriander seeds - 2 tsp
Dry red Chilly - 3
Garlice - 6
Pepper powder - 1/2 tsp
Curry Leaves - a sprig
Coriander Leaves - Little
Salt, Oil, Water - As reqd

Method:

  • In a bowl add chicken pieces, turmeric powder and salt.
  • Mix this well.
  • Add 4 cups of water and pressure cook for 3-4 whistles.
  • In a blender add pepper corns, cumin seeds, fennel seeds, coriander seeds.
  • Add tomato, garlic, onion and 2 red chilly.
  • Blend this to a fine paste.
  • Now heat oil in pan and add mustard seeds, cumin seeds and one red chilly.
  • Add in curry leaves.
  • Now add the boiled chicken pieces with water.
  • Now add the blended paste and mix well.
  • Let it boil.
  • Once you get desired consistency, add in pepper powder.
  • Let it boil for 2 more mins.
  • Garnish with coriander leaves and serve hot.



Devil's Food Cake

Ingredients:

Wheat flour - 125 g
Cocoa powder - 45 g
Brown sugar - 150 g + 2 tbsp
Baking soda - 3/4 tsp
Baking powder - 1 tsp
Salt - a pinch
Egg - 1
Curd - 1/2 cup
Oil - 60 ml
Boiling water - 120 ml
Vanilla Esc - 1 tsp

Method:

  • In bowl take the hot water(boiling water).
  • To this add cocoa and mix well and set aside to cool.
  • In other bowl add flour, sugar, salt, baking powder and baking soda.
  • Add in cooled cocoa mix and mix well.
  • Add in egg and mix well.
  • Add curd, esc and oil and whisk well.
  • The batter should be smooth.
  • Grease and dust the 7 inch pan.
  • Line the bottom of pan with butter paper.
  • Pour the batter in and dap it.
  • Bake this in a preheated oven (OTG) at 180°C for 40-42 mins.
  • Will yield 8-10 pieces.

Cheesy Garlic Bun

Ingredients:

Sweet buns - 4
Onion - 1
Italian Seasoning - 3 tbsp
Garlic - 4-5
Unsalted butter - 2 tbsp
Coriander Leaves - Little
Grated Cheese - 1/2 cup

Method:

  • Crush the garlic and set aside.
  • In a pan add butter and crushed garlic and cook in low flame.
  • Once butter is melted, turn off the range and set aside.
  • Cut the buns and apply(brush) butter on both sides.
  • Now to the inner part add the grated cheese, little onion.
  • Sprinkle little seasoning, chopped coriander leaves.
  • Cover with the grated cheese.
  • Arrange them in a greased baking tray.
  • Bake this in a preheated oven(OTG) at 200°C for 6-8 mins.
  • If you want more crsipier bread bake for 2 more mins.

Pakoda


Ingredients:

Channa dal - 2 cup
Dry red chilly - 5
Fennel seeds - 1 tsp
Curry Leaves - Little(fine chop)
Small Onion - 10-12 (fine chop)
Salt - Little

Method:
  • Soak dal,chilly and fennel seeds for 2 hours.
  • Drain water and add salt and blend coarsely.
  • Add onions and curry leaves and mix well.
  • Add a tsp of ghee and mix well.
  • Heat oil in pan to fry these.
  • Add in pakodas and fry them in low flame.
  • You can also shape them like vadai and fry them

Kurma for Idly/Dosa


Ingredients:

Onion - 1 (fine chop)
Tomato - 1 (fine chop)
Bay Leaf - 1
Cloves - 2
Green Elaichi - 2
Cinnamon stick - small piece
Curry Leaves - a sprig
Coriander Leaves - Little
Water, Oil - As reqd

To Grind:
Onion - 1 (roughly chop)
Tomato - 1 (roughly chop)
Coconut - 3/4 cup
Cashews - 6-8
Poppy seeds - 1/2 tsp (soak in 2 tbsp of hot water)
Garlic pods - 2
Ginger - small piece
Green Chilly - 2
Fennel seeds - 1/2 tsp
Tumeric powder - 1/8 tsp
Corainder powder - 1 tbsp
Red Chilly powder - 1/4 tsp
Garam Masala - 1/8 tsp
Salt - As reqd

Method:

  • In a blender add items under "to grind" and blend this to a fine paste.
  • Set this aside.
  • Heat a cooker and add in oil.
  • Add in bay leaf, cloves, cinnamon stick and elaichi.
  • Add in curry leaves.
  • Once it splutters add in onion and tomato and cook in low flame.
  • Once it turns mushy add in grinded paste.
  • Add  water and mix well.
  • Pressure cook this for 2 whistles.
  • Garnish with coriander leaves.
  • Goes good with idly/dosa.
Note:
  • Use medium size onion and tomato.
  • As we use both green chilly and red chilly powder, add spice according to your taste.


Banana Walnut Cake / Mini Loaf



Ingredients:

Wheat flour  - 1 cup
Brown Sugar - 1/2 cup + 1 tbsp
Baking soda - 1/2 tsp
Baking powder - 1/2 tsp
Banana - 4 (ripen, mash)
Oil - 1/4 cup
Vanilla Esc - 1 tsp
Walnuts - 2 tbsp(chopped)
Chocochips- 2 tbsp

Method:
  • In a bowl peel skin and add bananas.
  • Use fork and mash it.
  • If needed you can use a beater too.
  • Add oil, sugar and esc and mix well.
  • Add in flour, baking soda, baking powder and mix well.
  • Add in chopped nuts and mix well.
  • Add the batter to the baking cups and dap it.
  • Top it with walnut and chocochips.
  • Bake this in a preheated oven at 190°C for 25-28 mins.
  • I made 2 mini loaves (weighed 130 g) and a round cake (weighed 100 g), with this batter.

For Proofing



Ingredients :

Wheat flour - 150 g
All purpose flour - 150 g
Luke warm water - 1 1/8 cups
Honey - 2 tbsp
Sugar - 1 tsp
Olive oil - 2 tbsp
Salt - 1 tsp
Active Dry yeast - 2 tsp

For Topping:
Pizza sauce - 1/2 cup
Onion - 1 (big)
Capsicum - 1 
Olives - 6-8
Boiled Corn kernels - 1 cup
Grated Cheese - 2 cups
Italian seasoning - 1/4 cup

Method:
  • In a bowl add sugar, yeast and luke warm water.
  • Set this aside for the yeast to be activated.
  • In a bowl add flour, salt and mix well.
  • Add in olive oil, honey and activated yeast.
  • Mix this well, and knead for 8-10 mins.
  • Make a soft dough.
  • Grease a bowl and place the dough and cling wrap.
  • Set this aside for 1 1/2 hrs - 2 hrs for proofing.
  • After desired time, knock the dough.
  • Make small balls and roll it.
  • Use a lid and cut desired shape and thickness you want.
  • Place this in a lined and greased baking tray.
  • Prick holes all over the rolled out dough.
  • Apply pizza sauce, top with cheese.
  • Add in your favorite topping and cover with cheese.
  • Bake this in a preheated oven at 180°C for 18-20 mins.
  • Yields 5 mini Pizzas.

Note:
  • I almost tripled the recipe (like wheat flour 450 g, APF 450 g) and made the mini pizza for party.
  • It yielded around 25 Mini pizzas.
  • After first proofing, I knocked and set the dough aside for 30 mins.
  • After the second proofing I stored it in an air tight container and refrigerated.
  • The next day I made pizzas.
  • You can also pre-bake the pizza base alone.

Wheat Mango Cake


Ingredients:

Wheat flour - 150 g
Brown sugar - 50 g
Baking soda - 1/2 tsp
Baking powder - 1/4 tsp
Salt - a pinch
Oil - 1/4 cup + 1/2 tbsp
Fresh Mango juice - 1/4 cup
Warm Milk - 1/4 cup
Apple Cidar Vinegar - 1/2 tbsp
Curd - 1/4 cup
Vanilla Esc - 1/2 tsp


Method:
  • In a bowl add oil and sugar and mix well.
  • To this add orange juice and warm milk and mix well.
  • Add in vinegar, curd and whisk well and set aside.
  • In other bowl add flour, baking powder, baking soda and salt.
  • Mix well.
  • Add this to wet ingredients and fold well.
  • Grease a pan and dust with flour.
  • Invert and dap it to remove excess flour.
  • Pour the batter in and dap it.
  • Bake this in a preheated oven (OTG) at 180°C for 28-30 mins.
  • Yields 6-7  slices.
Note:
As this is not mango season, I used store bought juice.

ChocoMango Cake

Ingredients:

Wheat flour - 125 g
Brown sugar - 50 g
Cocoa powder - 25 g
Baking soda - 1/2 tsp
Baking powder - 1/4 tsp
Salt - a pinch
Oil - 1/4 cup + 1/2 tbsp
Fresh Mango juice - 1/4 cup
Warm Milk - 1/4 cup
Apple Cidar Vinegar - 1/2 tbsp
Curd - 1/4 cup
Vanilla Esc - 1/2 tsp

  • In a bowl add oil and sugar and mix well.

Stuffed Mirchi #1


Ingredients:

Big Bajji Chilly - 3-4
Potato - 2
Kashmiri Chilly powder - 1 1/4 tsp
Coriander powder - 1 tsp
Turmeric powder - a pinch
Amchur powder - 1/2 tsp
Ginger paste - 1/4 tsp
Salt, Oil  - As reqd

Bajji Batter:

Besan flour - 1 cup
Rice flour - 2 tbsp
Chilly powder - 3/4 tsp
Baking soda - a pinch
Salt, Water - As reqd

Method:

  • Make a small slit on big green chillies holding the stem.
  • Deseed them and set aside.
  • Boil the potates and mash them.
  • To this add spice powders and salt and mix well.
  • Set this aside.
  • In other bowl add the items under "Bajji Batter".
  • Add water, such that the batter is not too thin.
  • Now make a small ball of the potato masala.
  • Stuff it in slit chillies and set aside.
  • Dip these in batter and fry them in hot oil.
  • Serve them hot.
Note:

We add salt in both batter and masala, so add accordingly.




Cake flour




Ingredients:

Wheat flour - 1 cup
Corn flour - 2 tbsp

Method:
  • In a bowl add in one cup of flour.
  • Remove 2 tbsp of flour from it.
  • Now add 2 tbsp of corn flour.
  • Mix them well.
  • If needed you can sieve and store.
  • Use in recipes of your choice.

Yogurt Muffins


Ingredients:

Cake flour - 120 g
Brown sugar - 75 g
Thick curd - 180 ml
Baking powder - 2 tsp
Baking soda - 1 tsp
Oil - 1 tbsp
Vanilla Esc -  1 tsp

Method:

  • In a bowl add curd, sugar, oil, baking powder, baking soda and esc.
  • Mix this well.
  • Add in cake flour and mix it.
  • Batter will be thick(bit frothy).
  • Line muffin cases.
  • Add in the batter in each muffin case.
  • Bake this in a preheated oven (OTG) at 180°for 25-28 mins.
  • Yeilds 12 small muffins.



Pizza Crackers





Ingredients:

Nutrichoice Crackers (Sugar free) - 6-8
Pizza sauce - 1/4 cup
Onion - 1
Capsicum
Red Chilly flakes - 1 tsp
Oregano - 1 tsp
Grated Cheese - 1/2 cup

Method:

  • Dice onion into small cubes and set aside.
  • Deseed and dice capsicum and tomato to small pieces.
  • Add this to a bowl.
  • Add in a pinch of salt, chilly flakes and oregano and mix well.
  • Line a baking tray and place the crackers.
  • Apply pizza sauce on each crackers.
  • Add in the toppings.
  • Cover with cheese.
  • Bake this in a preheated oven (OTG) at 180°C for 5-7 mins or till cheese melts.


Chocolate Barks



Ingredients:

Dark Chocolate Compound - 250 g

Method:

  • Using double boiler method, melt the chocolate.
  • Set this aside for couple of mins.
  • Now pour the melted chocolate on a butter paper.
  • Use a spatula and spread them thin.
  • Roll them tight and place them on a butter paper.
  • Refrigerate or freeze them until firm.
  • Unroll to get the chocolate bark.
  • I used this in black forest cake.


Chocolate Cake #2


Ingredients:

Wheat flour - 140 g
Brown sugar - 150 g
Cocoa powder - 30 g
Baking soda - 1/2 tsp
Baking powder - 1/4 tsp
Salt - 1/8 tsp
Milk - 120 ml
Water - 120 ml
Oil - 60 ml
Vinegar - 1 tbsp
Vanilla Esc - 1/2 tsp

Method:

  • Grease two 5 inch pans and dust with flour.
  • Invert and dap it to remove excess flour.
  • In a bowl add in flour, sugar, baking soda, baking powder.
  • Add in cocoa powder and salt.
  • Mix this.
  • To this add oil, milk,water and esc.
  • Mix well.
  • Now add vinegar and mix well.
  • Bake this in a preheated oven (OTG) at 180°C for 25-30 mins.
  • The baked cake weighed around 235 g.
