Ingredients:
For Dough:
Maida - 1 cup
Salt, Water - As reqd.
For Stuffing:
Potato - 4-5
Paneer - 1/2 cup (grated)
Chilly powder - 1 tbsp
Jeera Powder - 1 tsp
Hing- little
Cheese - As reqd
Salt, oil - As reqd
Method:
Make a chapathi dough and keep aside.
Then in a bowl , add boiled potatoes followed by items under "For stuffing".
Mix and mash well.
Mix maida in water and make a batter.
Take the chapathi (maida) made and place a cheese slice in center.
Then the mashed mix on top of it.
Cut the other edges.
Apply batter in all corners and roll like spring roll.
Deep fry in oil and serve.
Ingredients:

Green Chilly - 3 (finely chopped)
Ginger - 1 tsp (finely chopped)
Cashew, Badam and Raisins - 2 tbsp (Finely Chopped)
Coriander leaves - Little
Basin Flour - 2 tbsp (make a powder of pottukadalai)
Oil, salt - As reqd.
Method:
In a bowl mix all the ingredients.
Mash well and make desired shapes.
Heat oil and shallow fry the tikkis and serve hot.
Ingredients:
Brocoli - Few
Potato - 4-5
Garlic - 2tsp
Corn flakes - 1 cup (coarsly grinded)
Mint Leaves - Little
Sugar - a Pinch
Jeera Powder - 1/2 tsp
Red Chilly flakes - 1 tbsp
Chat Masala - 1 tsp
Amchur powder - 1 tsp
Pepper Powder - 1 tbsp
Corn flour - 2 tbsp
Water - Little
Salt, Oil - As reqd
Method:
Cut broccoli into florets and balnch (put it in boiling water for 5 mins and little sugar to it).
Roast garlic pieces and mint leaves.
In a bowl add boiled potato, broccoli, roasted garlic and mint leaves.
Then add jeera powder, red chilly flakes, chat masala, amchur and pepper powder.
Add salt to it and mix and mash well.
Then take little quantity and make oval shape and keep aside.
Dilute corn flour in little water ad keep batter aside.
Dip the oval shape stuff in batter and coat it with cornflakes,
Then deep fry and serve the kurkure.
Ingredients:
For Batura:
Maida - 1 1/2 cup
Wheat flour - 1/2 cup(optional)
Rava - 1/4 cup
Curd - 6 tbsp
Salt, Oil, Water - As reqd
For Chole:
Cinamon stick - small piece
Cloves and elachi - 2 each
Bay leaf -1
Onion - 1 (sliced)
Tomato - Blanch and grind
Green chilly - 1(slit)
Turmeric powder - 1/2 tsp
Chilly powder - 1.5 tbsp
Coriander powder - 2 tbsp
Chole Masala - 1 1/2 tbsp
Garam Masala - 1 tsp
Channa - 1 cup(soak overnight and boil)
Ginger - julliene
Salt, Oil - As reqd
Method:
In a bowl add items under "For Batura" and make a dough.
Make poori shaped stuff and fry it.
Heat oil in pan and add items under "For Chole".
Serve hot.
Note:
While boiling channa tie a tea bag in muslin cloth and put inside the vessel you boil.
Once boiled remove this bag out of it. This gives color to the gravy.
If using chole masala you need not use garam masala.
Also the chole poori is made purely using maida, but I tried using maida and wheat flour.
In chole masala I used readymade powder.
Ingredients:
Minced Chicken - 1 cup
Onion - 1
Green Chilly - 2 (finely chopped)
Ginger - 1 tbsp (finely chopped)
Garlic - 1 tbsp (finely chopped)
Egg - 1
White pepper - 1 tsp
China salt - 1 tsp
Corriander leaves - little
White Sesame Seeds - 1 cup
Sugar - 1 tsp
Bread - 5-6(cut into round shape like coin and keep aside).
Salt, Oil - As reqd
For Sauce:
Onion - 1
Garlic - 1 tbsp
Chilly paste - 1 tbsp (boil chilly in hote water, drain it & add ginger garlic paste and saute & then grind)
White pepper - 1 tsp
Tomato sauce - 2 tbsp
China salt - Little
Salt, Sugar - Little
Method:
In a bowl mix all ingredients other than bread and egg
Beat egg and keep.
Now take a coin size bread and apply egg mix.
On top of it keep a spoon of the mix and dap it in sesame seeds.
Do the same way and keep the coins ready.
Heat oil in the pan and fry these coins and keep aside.
Now for sauce, heat oil and add items under "For Sauce", one by one.
Serve the coins with sauce.

Paneer - 125 gms
Chilly powder - 1tbsp
Turmeric powder - 1/2 tsp
Chat masala - 1 tsp
Coriander powder - 1 tbsp
Garam Masala - 1/2 tbsp
Lime Juice - Little
Kasuri Methi - Crush and add Little
Cumin Seeds & Omam - to temper
Onion - 1 (finely chopped)
Green chilly- 2(finely chopped)
Garlic Paste - 1/2 tbsp
Tomato Puree - 2 tbsp
Fresh cream - 2 tbsp
Salt, Oil - As reqd
Method:
Marinate paneer with lime juice and kasuri methi leaves.
Add chilly powder, chat masala and turmeric powder and leave it for 10 mins.
Shallow fry in oil and keep aside.
Heat a pan, add oil, cumin seeds,omam and saute.
Add onions, green chilly,garlic paste and salt and saute.
Add coriander powder,garam masala and little water.
Then add tomato puree and saute and then add fressh cream.
Finally add fried paneer and toss.
